Time 45m

Yield 48

Number Of Ingredients 12

2 ¼ cups cake flour
1 ½ cups all-purpose flour
1 ¼ teaspoons baking powder
1 teaspoon salt
1 cup unsalted butter, softened
1 cup white sugar
½ cup vegetable shortening
4 ounces almond paste
2 large eggs
2 teaspoons vanilla extract
1 teaspoon lemon juice
¼ teaspoon almond extract

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine cake flour, all-purpose flour, baking powder, and salt in a medium bowl.
  • Combine butter, sugar, and shortening in a large bowl; cream with an electric mixer on medium speed until light and fluffy. Mix in almond paste until thoroughly combined. Add eggs, vanilla extract, lemon juice, and almond extract. Reduce the mixing speed to low and slowly add dry ingredients. Scrape down the bowl once all dry ingredients are added, then mix on medium speed until evenly combined, about 30 seconds.
  • Fit a large pastry bag with an 864 or 4S tip and fill bag with batter. Pipe evenly sized cookies onto an ungreased cookie sheet 1 1/2 to 2 inches apart, giving cookies space to puff slightly during baking.
  • Bake in the preheated oven, in batches if necessary, until bottom edges are slightly browned, 8 to 10 minutes. Cool on the baking sheet for 5 minutes before removing to a wire rack to cool completely.

ITALIAN MERINGUE BUTTER CREAM

Italian meringue butter cream image

A great butter cream recipe that is not too sweet and worth the fiddling around to make

Provided by rajarmey

Time 25m

Yield Makes Enough to fill Wiltons Tasty fill cake tin

Number Of Ingredients 5

5 large egg whites at room temp
1 1/4 c (250 g) ganulated or castor sugar, divided
2 sticks (226 g) butter at room temp and chopped into tablespoon-sized slices before continuing
1 tsp vanilla extract
1/2 c water

Steps:

  • Boil 1 cup sugar and 1/4 cup water over medium heat until it reaches 245o F or the firm ball stage. Never leave the kitchen when you are cooking sugar, and be stingy with your time spent away from the stovetop. It is very important that you watch it or it may burn. Another thing to do is to swirl the syrup. Don't stir it or whisk it, just gently swirl the pan by the handle to ensure that the sugar crystals are evenly distributed and dissolved
  • While the sugar is cooking, pour the egg whites into the bowl you plan to whip the icing in, then wait for the syrup to come to about 230F-235F. Whip egg whites with a wire whisk in a stand up mixer on high until soft peaks form. About 1-2 minutes. Sprinkle in 1/4 cup sugar. Beat
  • Slowly pour the hot syrup into the meringue steadily with the mixer still on high.
  • Beat the frosting for 7-10 minutes until the outside of the bowl is room temperature
  • During this time fill the pot the syrup cooked in with water and bring it to a boil to remove the hardened sugar from the sides. Toss in the candy thermometer too, while you're at it
  • Beat in butter by the tablespoon using a medium speed. The butter will deflate the frosting a bit. After all of the butter is added, turn the speed up to high. The whole process will take about 10-15 minutes, but you will begin to see the buttercream go through stages after all of the butter is added. First it will deflate and become soupy, then thicken, then curdle, then thicken to the final stage. If, for some reason your buttercream does not progress from the "soupy" stage (typically due to adding the butter too quickly or the butter/meringue being too warm), simply place your work bowl in the fridge for 7-10 minutes before whipping again
  • Add in desired flavourings Flavourings • Chocolate: 1/2 cup melted and cooled chocolate and 1 teaspoon vanilla extract. • Coconut: 1 teaspoon coconut extract and 1 teaspoon vanilla extract. • Coffee: 1 teaspoon espresso powder or 3-5 tablespoons strong coffee. • Also use jams to flavour buttercream, but be sure that they are quite thick as too much liquid will cause the buttercream to break down so be careful when adding jams and drop in about a tablespoon at a time
  • Leftover buttercream may be kept in the refrigerator for a week or two or frozen, well wrapped, until needed. Just be sure to bring it to room temperature and whip well with a beater before using

ITALIAN BREAD AND CABBAGE SOUP WITH SAGE BUTTER

Italian Bread and Cabbage Soup with Sage Butter image

This scrumptious, thick bread soup is about playing up the cabbage family - the king of winter veggies. It's layered like lasagna, with grilled bread and cabbage in stock, and as it cooks it plumps up a bit like bread-and-butter pudding. Fontina cheese is available in good supermarkets or cheese shops, but you can substitute good-quality cheddar or Gruyere.

Provided by Jamie Oliver

Categories     main-dish

Time 1h10m

Yield 8 servings

Number Of Ingredients 14

3 quarts good-quality chicken or vegetable stock
1 Savoy cabbage, stalks removed, outer leaves separated, washed and roughly chopped
2 big handfuls cavolo nero and/or kale, stalks removed, leaves washed and roughly chopped
About 16 slices stale country-style or sourdough bread
1 clove garlic, unpeeled, cut in 1/2
Olive oil
12 to 14 slices pancetta or bacon
1 (4-ounce) can anchovy fillets, in oil
3 sprigs fresh rosemary, leaves picked
7 ounces fontina cheese, grated
5 ounces freshly grated Parmesan, plus a little for serving
Sea salt and freshly ground black pepper
Couple large knobs butter
Small bunch fresh sage, leaves picked

Steps:

  • Preheat your oven to 350 degrees F.
  • Bring the stock to the boil in a large saucepan and add the cabbage, cavolo nero and/or kale. Cook for a few minutes until softened (you may have to do this in 2 batches). Remove the cabbage to a large bowl, leaving the stock in the pan.
  • Toast all but 5 of the bread slices on a hot griddle pan or in a toaster, then rub them on 1 side with the garlic halves, and set aside.
  • Next, heat a large 4-inch-deep ovenproof casserole-type pan on the stove top, pour in a couple of glugs of olive oil and add your pancetta and anchovies. When the pancetta is golden brown and sizzling, add the rosemary and cooked cabbage and toss to coat the greens in all the lovely flavors. Put the mixture and all the juices back into the large bowl.
  • Place 4 of the toasted slices in the casserole-type pan, in 1 layer. Spread over 1/3 of the cabbage leaves, sprinkle over a 1/4 of the grated fontina and Parmesan and add a drizzle of olive oil. Repeat this twice, but don't stress if your pan's only big enough to take layers - that's fine. Just pour in all the juices remaining in the bowl and end with a layer of untoasted bread on top. Push down on the layers with your hands.
  • Pour the stock gently over the top until it just comes up to the top layer. Push down again and sprinkle over the remaining fontina and Parmesan. Add a good pinch of salt and pepper and drizzle over some good-quality olive oil. Bake in the preheated oven for around 30 minutes, or until crispy and golden on top.
  • When the soup is ready, divide it between your bowls. Melt the butter in a frying pan and quickly fry the sage leaves until they're just crisp and the butter is lightly golden (not burned!). Spoon a bit of the flavored butter and sage leaves over the soup and add another grating of Parmesan. Such a great combo!

Categories     dessert

Time 4h15m

Yield 15 to 20 servings

Number Of Ingredients 18

4 cups all-purpose flour
2 cups cocoa powder
2 teaspoons baking powder
1 teaspoon baking soda
2 teaspoons kosher sea salt
5 1/2 cups sugar
6 sticks (3 cups) unsalted butter, cubed
2 1/2 cups buttermilk
4 teaspoons vanilla extract
10 large eggs
600 grams sugar
300 milliliters water
300 milliliters egg whites
150 grams granulated sugar
8 sticks (4 cups) unsalted butter, cubed
1/2 cup peanut butter
2 teaspoons vanilla extract
1 to 2 teaspoons coconut extract

Steps:

  • For the cake: Preheat the oven to 325 degrees F.
  • Combine the flour, cocoa, baking powder, baking soda and salt in the bowl of a stand mixer fitted with the paddle attachment. Mix to combine. Mix in the sugar.
  • With the mixer on low speed, add the butter, a couple cubes at a time, and mix until completely combined. Slowly add the buttermilk and vanilla extract; mix until well combined.
  • Add the eggs and mix until smooth, 2 to 3 minutes, scraping down the sides bowl as needed.
  • Divide the batter among three 8-inch cake pans. Bake for 35 minutes, or until a toothpick comes out clean. Cool the cakes at room temperature for 1 hour, then freeze for at least another hour.
  • For the buttercream: Combine the sugar and water in a saucepan fitted with a candy thermometer. Heat over medium-high heat until the mixture reaches 240 degrees F (see Cook's Note).
  • Meanwhile, place the egg whites in a clean mixer bowl and beat until bubbles form. Add the sugar and beat on high speed until fluffy. Turn off the mixer.
  • When the sugar syrup reaches the target temperature, slowly pour it into the egg whites. Mix on high speed until thick and fluffy.
  • Gradually mix in the butter cubes until the mixture comes together and is fluffy and smooth.
  • Add peanut butter, vanilla and coconut extract and mix until well combined. (Makes 4 cups.)
  • To assemble: Trim the cake layers to level them; this will help you frost the cakes and ensure the layers are even. Spread the first cake layer with buttercream. Stack the second layer on top and spread with buttercream. Stack the third cake layer. Add the buttercream to a piping bag and pipe onto the top and sides of the cake. Smooth the frosting, using an offset or flat spatula. At this point, you can leave the frosting smooth or add some texture with the spatula.
  • Refrigerate the frosted cake for 30 minutes before slicing.

GARLIC BUTTER EGG NOODLES WITH ITALIAN STYLE BREAD CRUMBS

Garlic Butter Egg Noodles With Italian Style Bread Crumbs image

I just made this recipe up years ago. The bread crumbs and garlic powder bring alot of flavor to the egg noodles. It is one of my sons favorites.

Provided by luci in Florida

Categories     Weeknight

Time 10m

Yield 4-6 serving(s)

Number Of Ingredients 5

1 (8 ounce) package egg noodles
1/2 cup butter (1 stick of butter)
1 -2 tablespoon garlic powder (I like garlic)
salt and pepper
1/2 cup progresso Italian style breadcrumbs

Steps:

  • Make the Egg Noodles and drain. Put them back in the pot and add the stick of butter and stir to melt.
  • Add the garlic powder and salt and pepper.
  • You can stop right there and have garlic buttered noodles -- but you can kick up the flavor like I do and add the Italian Style bread crumbs. Don't add to much or it can get dry because the bread crumbs soak up the butter.

AMAZING ITALIAN LEMON BUTTER CHICKEN

Amazing Italian Lemon Butter Chicken image

I got this recipe from the Allrecipes.com site. It is absolutely wonderful, but only should be eaten on occasion because of the amount of butter. I hope you enjoy it as much as my family does. It does take a little time to make, but it is well worth it.

Time 1h

Yield 5 serving(s)

Number Of Ingredients 16

1/4 cup white wine
5 tablespoons fresh lemon juice
5 tablespoons heavy cream

salt and pepper
1/2 lb angel hair pasta
4 thin boneless skinless chicken breasts
2 tablespoons olive oil
2 tablespoons butter
1/4 cup all-purpose flour
salt and pepper
4 ounces bacon
6 ounces mushrooms, sliced
6 ounces artichoke hearts, drained and halved
2 teaspoons capers, drained
chopped fresh parsley (to garnish)

Steps:

  • 1. To make the sauce, pour the wine and lemon juice into a saucepan over medium heat. Cook at a low boil until the liquid is reduced by 1/3. Stir in cream, and simmer until it thickens. Gradually add the butter 1 tablespoon at a time to the sauce, stirring until completely incorporated. Season with salt and pepper. Remove from heat, and keep warm.
  • 2. Bring a large pot of lightly salted water to boil. Add pasta, and cook until al dente, about 8 to 10 minutes. Drain, and set aside.

Without crowding, carefully place chicken in hot oil. (If necessary, cook in batches.) Fry until cooked through and golden brown on both sides. Remove the chicken to paper towels. Stir the bacon, mushrooms, artichokes, and capers into the oil; cook until the mushrooms are soft.
  • 4. Cut the chicken breasts into bite-size strips, and return them to the skillet. Stir half of the lemon butter sauce into the chicken mixture.
  • 5. To serve, place pasta in a large bowl. Stir the chicken mixture into the pasta. Taste, and adjust seasonings. Stir in additional lemon butter sauce as desired. Toss well, and garnish with parsley.

  • Allow the butter to come to room temperature before serving, so that it will spread easier.

ITALIAN BUTTER CREAM FROSTING

Italian Butter Cream Frosting image

This is the best butter cream recipe that I have ever found a bit more work but so very worth it. It is actually a Wilton recipe. It is less sweet and much fluffier than other butter cream recipes that I have tried. I have done all kinds of variations of this recipe. For instance I omitted one stick of butter and put in 8oz of cream cheese. I have used lemon or orange extract instead of vanilla and I use it so much and it keeps so well in the fridge I always make a double batch.

BUTTERNUT RAVIOLI WITH SAGE BUTTER AND ITALIAN SAUSAGE

BUTTERNUT RAVIOLI WITH SAGE BUTTER AND ITALIAN SAUSAGE image

Categories     Pasta

Number Of Ingredients 10

1 1/4 cups of cooked, mashed winter squash
3 cloves garlic, minced
1/8 t. freshly grated nutmeg
About a dozen sage leaves
1/4 cup Parmesan cheese, shredded, plus extra for serving
1 egg plus water
Wonton wrappers or pasta sheets
4 T. butter
1/4 cup pine nuts
1 link Italian sausage, sliced into rounds (you could, of course, leave this out for a vegetarian meal)

Steps:

  • In a heavy-bottomed skillet, melt a tablespoon of butter. Saute the garlic over medium-low heat until translucent and very soft. Chop a few of the sage leaves and add them to the skillet. Sprinkle with Kosher salt and saute for another minute or so, until the leaves crisp up a little bit. In a large bowl, scrape the contents of the skillet in with the mashed squash. Add the Parmesan and nutmeg, and combine well. Set aside. Now, I am funny about the wonton wrappers: I don't think they hold up very well unless they're doubled up. So, I use 4 wrappers per ravioli, brushing one side of a wonton wrapper with egg wash and then laying another wrapper on top of it, pressing to seal. I repeat this process with another pair of wrappers. Then, spoon filling on top of one double sheet, then top with the other double sheet and seal the edges with egg wash. It's a little extra trouble to do it this way, but I once had a whole batch fall apart in the boiling water with only single sheets, so I prefer to play it safe. (Of course, homemade pasta would be best). Once the ravioli are assembled, set them aside. Bring a pot of water to boil. Add the ravioli and cook until they float, about 3 or 4 minutes. (You may have to do this in batches). Drain and arrange on plates. While the ravioli are cooking, brown the sausage in the skillet (the one you cooked the garlic in) until cooked through. Remove with a slotted spoon. Add the butter and cook over medium until it's just beginning to turn golden. Add the pine nuts and remaining whole sage leaves. Stir and cook until the sage leaves are crispy. Watch carefully so that the butter doesn't burn. Divide the sauce evenly between the plates of ravioli. Top with the sausage and sprinkle with Parmesan cheese. Serves 2 hungry people for dinner, with a couple of extra ravioli left over. -Inspired by Megan's recipe for Sweet Potato Ravioli
