BEEF NOODLE SKILLET

- Heat the butter in a large skillet over medium heat. Add the onion and garlic and cook for 1 minute. Add the ground chuck and sprinkle with salt and pepper. Cook the meat, crumbling as you go, until cooked through, about 5 minutes. Add the tomato paste and cook for about 30 seconds.
- Add the noodles, broth, 1 cup hot water, the mustard, paprika and Worcestershire sauce. Give a big stir and bring to a simmer. Cover and allow everything to simmer, stirring occasionally and adding up to 1/2 cup more water if necessary, until the pasta is al dente and the sauce has thickened, about 12 minutes. Stir in the sour cream and heavy cream and cook for 1 additional minute or until the pasta is tender.
- Remove from the heat. Sprinkle over the chives and serve directly from the pan.
BEEFY ITALIAN RAMEN SKILLET

- Heat a large skillet over medium-high heat. Cook and stir beef and pepperoni slices in the hot skillet until beef is completely browned, 5 to 7 minutes. Stir tomatoes, water, and the seasoning packet contents from the ramen noodles into the beef mixture.
- Break ramen noodle blocks into halves and add to beef mixture with the green bell pepper; cook until the noodles soften, about 5 minutes.
- Remove skillet from heat, sprinkle mozzarella cheese over the beef mixture, and place a cover on the skillet; let mixture sit until cheese melts, 2 to 3 minutes.

REAME'S BAKED ITALIAN BEEF & NOODLES
I got this recipe from the back of a package of frozen Reame's noodles. I was pleasantly surprised at the rave reviews I got from my kids! I thought it sounded good to me, but the fact that the kids ate it all gone made it a keeper for me!

- Cook noodles in boiling water 20 minutes and drain.
- While noodles are cooking, brown ground chuck and sautee onions. Add spices, mushrooms and 1 cup shredded cheddar cheese.
- Poor cooked noodles and meat mixture into a 2 quart casserole.
- Top with tomato sauce.
- Bake in a preheated 350 degree oven for 25 minutes.
- Top with remaining cheddar cheese, sprinkle the top with grated parmesan cheese, and bake in oven for 5 more minutes, until cheese melts.

- In a large skillet, cook beef over medium heat until no longer pink; drain. Meanwhile, cook noodles according to package directions; drain. In a large bowl, combine the beef, noodles, oil, 1-1/2 cups Colby cheese, tomato sauce, beans, tomatoes, soup and seasonings., Transfer to a greased 13x9-in. baking dish. - Mix the beef broth, the first measure of olive oil, vinegar, worcestershire sauce, cornstarch, sugar, red pepper, basil, marjoram and garlic in a container. A plastic container with a lid or a zip lock bag will be fine. Add steak, cover and refrigerate to marinate at least 3 hours. Stir occasionally. Place the 3 tablespoons olive oil in a skillet on lower heat and sautè sliced onions and bell pepper until tender about 3 - 4 minutes. Remove meat from marinade with tongs (reserve the marinade) and place into skillet with onions and peppers. Increase heat to medium and sautè beef until brown (about 3 minutes or just until tender), stirring constantly. Stir in reserved marinade and cook until the sauce thickens (1-2 minutes), stirring frequently. Serve over hot, buttered noodles.
