This Italian apple cake recipe is from my mom and reminds me of my childhood. It tastes delicious, and I bake it for my family now.

2 tablespoons unseasoned bread crumbs, or as needed
½ cup unsalted butter, melted
½ cup white sugar
1 vanilla bean, split and scraped
2 eggs
1 ⅛ cups all-purpose flour
1 teaspoon baking powder
1 pinch salt
1 tablespoon milk, or as needed
2 pounds Granny Smith apples, peeled, cored and sliced thin
¼ cup unsalted butter, cubed
¼ cup white sugar

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a pie plate and dust with bread crumbs
  • Combine melted butter, 1/2 cup sugar, and vanilla bean seeds in a bowl. Add eggs and stir to combine. Mix flour, baking powder, and salt in a bowl and add to butter mixture. Add milk if batter is too thick
  • Pour batter into the prepared pie plate. Distribute apple slices in a thick layer on top of the batter. Dot with cubed butter and sprinkle with 1/4 cup sugar.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 30 to 45 minutes. Cool on a wire rack for 5 minutes. Run a table knife around the edges to loosen. Invert carefully onto a serving plate or cooling rack. Let cool completely.

This is my first post! Every time I make this cake people beg me for the recipe. Its adapted from an authentic Italian recipe and it's incredibly quick and easy to make. It uses everyday ingredients (omit the Amaretto if you don't have any) and the result is a moist, almost pudding-like cake which is full of flavour. Perfect for a decadent afternoon tea or to serve as a dessert. Hope you like it!

2 cooking apples
1/2 lemon, juice of
1/2 cup raisins
1 cup walnuts
1 tablespoon sugar
1/2 cup shredded coconut (not dessicated)
1 1/2 cups plain flour (all purpose)
1 teaspoon baking powder
1 teaspoon cinnamon
1 teaspoon nutmeg
2 large eggs
3/4 cup sugar
150 g butter, melted
2 tablespoons amaretto liqueur (substitute a couple of drops of almond essence or omit this step if neither is available)
icing sugar, for dusting (confectioner's)

Steps:

  • Set oven to 180C (350F).
  • Grease and lightly flour a 23cm (9 inch) round cake tin.
  • You'll also need three mixing bowls- small, medium and large- for this recipe.
  • DO NOT PEEL the apples.
  • Cut into chunks about 1/2" square- discarding the core.
  • Place apple chunks into the first (medium) mixing bowl.
  • Toss apple in lemon juice to avoid discoloration, then drain off and discard excess juice.
  • Add raisins and coconut to the apples.
  • Tip walnuts onto cutting board and sprinkle over 1 tablespoon sugar.
  • Chop nuts roughly with the sugar, then add nuts and'nut flavoured' sugar to the apple mixture.
  • Mix well.
  • In the second (large) mixing bowl, sift flour, baking powder, cinnamon and nutmeg.
  • In the third (small) bowl, combine eggs and sugar and beat until light and lemon colored.
  • Still beating, add the melted butter and the liqueur (or essence).
  • Make a well in the centre of the flour mixture and add the egg mixture.
  • Stir until well combined.
  • Tip in the apple mixture and mix well.
  • At this stage it may seem you have too much apple and not enough batter- don't worry!
  • Turn the mixture into the prepared cake tin.
  • Bake on the centre shelf of the oven at 180C (350F) for about 45-50 minutes or until the top of the cake has turned a nice golden brown.
  • (Test with a skewer if unsure.) Remove cake from oven, turn onto a rack to cool.
  • Sprinkle with icing (confectioner's) sugar to serve.
  • Serve with thick cream.

4 large eggs, room temperature
1/2 cup Brown Sugar
1 teaspoon Pure Almond Extract
¼ cup sour cream
1 tablespoons grated lemon zest
¾ cup unbleached flour
¾ teaspoon baking powder
1/8 teaspoon Sale di Cervia Sea Salt
½ teaspoon cinnamon
4 large apples
2 tablespoons warm Italian Organic Jam (optional)

Steps:

  • Preheat the oven to 350 degrees F. Line an 8 inch square metal pan with foil and butter and flour the foil or spray it with baking spray. Beat the eggs and Brown Sugar with an electric mixer until light and fluffy. Beat in the extract and sour cream. Stir in the lemon zest. Sift the flour, baking powder, Sale di Cervia Sea Salt and cinnamon together into another bowl or onto a piece of foil. Stir the flour mixture into the egg mixture. Stir the sliced apples in last. Pour the mixture into the pan and bake for 35-40 minutes. Remove from oven. If using jelly, brush it over top. Let the cake cool to warm and remove the cake from the pan by lifting the foil.
