2 cups flour
4 teaspoons baking powder
1/2 cup soft brown sugar
4 teaspoons instant coffee powder
1 tablespoon boiling water
60 g butter, melted
1/4 cup bailey's irish cream
3/4 cup milk
2 eggs
2 tablespoons chopped walnuts
icing sugar, to dust tops

Steps:

  • Preheat oven to 200 C.
  • Lightly grease 12 muffin tins.
  • Sift together flour and baking powder into a bowl, stir in sugar and make a well in the centre.
  • In a cup, dissolve instant coffee in the boiling water.
  • In another bowl lightly whisk together the melted butter, Baileys, milk and eggs, and stir in instant coffee.
  • Fold Baileys mixture into dry ingredients and stir quickly to combine.
  • Spoon mixture into prepared muffin tins, sprinkle with chopped walnuts and bake for 12 - 15 minutes or until muffins spring back when lightly pressed.
  • Dust with icing sugar and serve.

2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1/3 cup sugar
1 teaspoon instant coffee granules
2 teaspoons coffee liqueur
2 teaspoons Irish whiskey
milk
1 egg
8 tablespoons melted butter or 8 tablespoons melted margarine

Steps:

  • Line 12 muffin-tin cups with paper liners.
  • Preheat oven to 375.
  • In a bowl, combine flour, baking powder, salt and sugar.
  • Stir well.
  • In a 1-cup measure, dissolve coffee granules in coffee liqueur and whiskey.
  • Add enough milk to measure 1 cup.
  • Whisk egg in a bowl with coffee-milk mixture.
  • Whisk in melted butter.
  • Gently stir liquid into dry ingredients just until moistened.
  • Spoon into muffin tin.
  • Bake at 375 for 25 minutes, or until the top springs back when gently touched.

1/3 cup(s) granulated sugar
2 tablespoon(s) baking powder
1/2 teaspoon(s) salt
2 tablespoon(s) coffee liqueur (kahlua)
2 tablespoon(s) irish whiskey
1 tablespoon(s) instant coffee granules
- milk
1 - egg, beaten
1/2 cup(s) (8 tablespoons) melted butter or margarine
24 teaspoon(s) turbinado sugar (raw sugar)

Steps:

  • Preheat oven to 350 degrees F Spray 12 count muffin tin with nonstick cooking spray. In a large mixing bowl, stir together flour, sugar, baking powder and salt. Make a well in the center.
  • In a 1 cup measure, dissolve coffee granules in coffee liqueur and whiskey. Add enough milk to measure 1 cup. Add beaten egg and melted butter to coffee-milk mixture. Whisk to blend. Gently stir liquid into dry ingredients just until moistened; batter will be lumpy. Spoon a little less than 1/3 cup of batter into each muffin cup. Sprinkle 2 tsps turbinado sugar over each batter filled cup.
  • Bake 18 minutes, or until the top springs back when gently touched. Let rest a couple of minutes before removing muffins from tin and cooling on a baking rack.
