2 Spanish onions, diced
Extra virgin olive oil
8 ounces mushrooms, sliced
6 garlic cloves, minced
2 celery ribs, thinly sliced
1 pound matzo farfel
2 cups chicken broth
1 cup chopped pitted dates or raisins
2 egg yolks
Kosher salt
Freshly ground black pepper

Steps:

  • 1. Preheat oven to 350°F. Grease a 9- x 13-inch casserole dish. 2. Sauté onions in a large sauté pan lightly coated with evoo, over medium-high heat, until medium brown and very soft. 3. Add mushrooms to the pan and a bit more evoo. Sauté mushrooms until browned and crispy on edges. Add celery and garlic to the pan and continue to cook for 3 to 5 minutes until celery begins to soften. 4. Transfer vegetables to greased pan. Add matzo farfel, broth, dates, and egg yolks. Stir to combine. Season with salt and pepper. Cover with foil and bake at 350°F for 30 minutes. Uncover and bake 15 minutes more until lightly browned, or cool completely and freeze for up to 1 month.

This is a super yummy dish that my family has every Passover and sometimes for Thanksgiving. It can also be spiced up by adding different vegetables that are in season.

4 onions, diced
2 stick butter
1 lb box matzo, broken into pieces
4 c broth (i use vegetable)
2 eggs, lightly beaten
pinch salt & pepper
pinch garlic powder
pinch paprika
OPTIONAL:
1 c celery, diced
2 carrots, diced

Steps:

  • 1. Preheat oven to 375°F.
  • 2. In a large pan over medium heat, melt the butter and sauté the onions and other vegetables. Sauté until the onions are nearly brown and the other vegetables are tender, should take 10-12 minutes.
  • 3. Add matzo to pan with the other vegetables and toast it for 2 minutes. Add salt, pepper, garlic powder, & paprika.
  • 4. Transfer the mixture to a large bowl. Stir in the broth and eggs.
  • 5. Pour mixture into a greased 9x13 dish and bake uncovered for 45 minutes or until browned.

This kosher for Pesach stuffing is made from matzah farfel, water, egg, chopped onion, salt, and pepper. Cook together with poultry or bake as a casserole.

4 cups matzah farfel
1 cup water
1 egg
½ cup oil
½ onion, chopped
Salt and pepper

Steps:

  • Sauté onion in oil until light brown. Put farfel in a bowl and add water. Let stand a few minutes to absorb water. Mix in egg, onions and oil. Add salt and pepper. Stuff cavity of chicken or turkey and roast. Preferably, put the stuffing in a greased casserole, cover with foil, and bake separately for about 1 hour at same temperature as chicken. As the chicken roasts, spoon some of the liquid over the stuffing as it bakes. Leave uncovered the last 15 minutes.

RUTH'S MATZO FARFEL DRESSING

1 pound farfel
3 cups chicken stock
8 ounces butter or margarine
1 cup chopped onion
1 cup chopped celery
2 tablespoons chopped fresh parsley
1 large clove garlic, minced
1 medium apple, peeled and grated
2 large eggs, beaten
1 teaspoon ground ginger
1 teaspoon salt
1/4 teaspoon freshly ground black pepper

Steps:

  • Preheat the oven to 350°F. place the farfel in a large bowl; at the chicken stock and let stand for 15 minutes.
  • Meanwhile, melt the butter or margarine in a large skillet over medium high heat. Add the onion, celery, bell pepper, if desired, mushrooms, and parsley and sauté until onion is golden, about five minutes. Mix in the garlic and grated apple.
  • Stir the sautéed mixture into the softened farfel and let cool. Add the eggs, ginger, salt, and pepper and mix until well combined. Spoon the mixture into a greased 9 x 13" casserole.
  • Bake for 30 minutes; remove from the oven. Turn the dressing over with a spoon, breaking it up in order to brown the other side. Bake an additional 30 minutes or until golden brown.

3 large onions, sliced thin
oil, enough to saute' onions
1 (14 1/2 ounce) can chicken broth
1 teaspoon sugar
1 carrot, peeled and grated
1 apple, peeled and grated
pepper, to taste
1/2 teaspoon poultry seasoning
onion powder
garlic powder

Steps:

  • Crush matzah.
  • Saute' onions in oil till transparent.
  • Add carrots and apples and cook till the are softened.
  • Add remaining ingredients.
  • Mix together and taste for seasoning.
  • If too dry you can moisten with a bit more broth or water.
  • Stuff turkey loosely.
  • Any leftover stuffing can be cooked along-side turkey in foil or in a casserole dish.
  • When basting turkey, add some of the juices to any stuffing cooked outside the bird.

5 tablespoons olive oil, divided, plus more for greasing dish
3/4 pound mixture of shitake and crimini mushrooms, stems trimmed (removed for shitakes) and sliced
1 large onion (about 1 pound), chopped (about 2 cups)
2 medium fennel bulbs (about 1 1/2 pounds total), trimmed, cored and coarsely chopped
2 celery ribs, cut crosswise into 1/4-inch slices
8 unsalted plain or egg matzos, broken into roughly 1-inch pieces
1/2 cup finely chopped flat leaf parsley
4 large eggs, lightly beaten
Equipment:
A 2- to 2 1/2-quart shallow ovenproof baking dish

Steps:

  • Preheat oven to 400°F with rack in middle.
  • Heat 3 tablespoons oil in a large heavy skillet over medium-high heat until oil shimmers. Sauté mushrooms with 1/2 teaspoon kosher salt and 1/4 teaspoon pepper until the liquid they give off has evaporated and mushrooms are browned, about 10 minutes. Transfer to a large bowl.
