- In a pitcher, combine the iced tea mix and water; refrigerate until chilled. Just before serving, add ginger ale. Serve over ice.

GINGER GREEN ICED TEA
Steps:
- 1. Place 2 cups water and the ginger into a saucepan and bring to a boil. Reduce the heat to low and simmer for 5 minutes. Stir in the honey. Remove the pan from heat and add the tea bags. Steep for 3 minutes, and then strain out all the solids.
- 2. In a large pitcher combine the strained tea with the remaining 3 cups water. Chill in the refrigerator. Serve over ice, garnished with mint sprigs, if using.
ICED GINGER GREEN TEA
Steps:
- Put the green tea bags into a heatproof container and pour in 1 quart boiling water. Let steep until it comes to room temperature, about 1 hour. Remove the tea bags and discard.
- While the tea is steeping, in a saucepan over medium-high heat, bring 1 cup water, the sugar, and ginger to a boil. Stir to dissolve the sugar, remove from the heat, and allow to cool to room temperature, about 1 hour. Store the tea and ginger simple syrup in the refrigerator until ready to serve.
- To serve, fill glasses with ice and pour in the tea. Sweeten, to taste, with the ginger simple syrup. Garnish with a slice of ginger. For the adults, top each with 1/2 cup prosecco, if desired.

ICED LEMON GINGER TEA

- Peel gingerroot and cut crosswise into thin slices. In a medium saucepan boil water, gingerroot, honey, sugar, and zest, stirring, until sugar is dissolved. Remove pan from heat and steep "tea" covered, 45 minutes. Uncover tea and cool completely.
- Remove gingerroot and zest with a slotted spoon and discard. Transfer tea to a pitcher and stir in lemon juice. (Chill tea, covered, until cold and up to 2 days.)
- Serve tea over ice in tall glasses and garnish with lemon slices.
ROOIBOS, FRESH APPLE, GINGER AND LEMON ICED TEA
You'll need a good juicer. Rooibos (redbush) is a herb-type plant that only thrives in the Cederberg mountain area, about 200 kms north of Cape Town, South Africa. Its health properties have been increasingly studied and confirmed in recent years and the tea (tisane, or infusion) of rooibos has become popular in Western countries and is available in the herbal tea section of many supermarkets as well as specialty health stores. Babies that grow up in South Africa are often fed rooibos tea from the bottle. It is high in antioxidants and micro-nutrients, and contains no caffeine. Since I live near to where rooibos is grown and I have a newfound love affair with juicing fresh fruits, I want to share this awesome iced tea, packed full of goodness. You won't need to sweeten this iced tea, since there is so much sweetness and deliciousness in the fresh apple juice. The ginger adds zing and has additional health benefits, and the lemon adds a hint of tartness and of course Vitamin C.

- 1. Bring water and ginget to a boil. Pour water over the tea bags in a 4 cup heat proof measuring cup. Step 3 minutes. remove tea bags and ginger. discard. Stir in 1/4 cup sugar & let cool to room temperature. Mix remaining 1/4 cup sugar with lime juice, add to tea. Pour into pitcher, chill in fridge. GINGER LEMONGRASS ICED GREEN TEA

- Cut lemongrass into two-inch pieces, and crush with the flat side of a knife, or just cut each piece lengthwise a few more times like I did.
- Peel ginger and cut into thin slices.
- In a large saucepan over high heat, bring the water, lemongrass, ginger, and sugar to a boil.
- Remove saucepan from the heat, and add the green tea (if you're adding the loose tea, put it in something so you can get it out right after it's steeped, while leaving the ginger and lemongrass in). Steep for about a minute, or until it's the right color/flavor for your tastes.
- Remove the tea bags/leaves, then let sit for about 30 minutes.
- Pour the tea through a fine-mesh sieve into a pitcher.
- Refrigerate until cool - about a couple of hours.
- Pour over ice. Top with a mint sprig. And enjoy!
LEMON-GINGER ICED TEA WITH BERRY CUBES

- Place about 4 raspberries in each compartment of an ice cube tray, 6 hours before serving iced tea. Fill with water and freeze.
- Place honey, 2 cups water and ginger in a saucepan and bring to a boil. Reduce heat and simmer over low heat for 5 minutes. Remove from heat and add tea bags. Let mixture steep for at least 30 minutes and up to 1 hour, then strain out solids.
- In a pitcher combine strained liquid with 6 cups water and lemon juice. Chill in refrigerator.
- To serve, place 3 ice cubes in a tall glass and pour iced tea over cubes. Garnish with lemon slices and mint sprigs.

- In a small saucepan, combine the sugar, 1/2 cup water, lemongrass and ginger. Bring to a boil over medium-high heat, stirring to the dissolve sugar. Reduce heat to low and simmer for 2 minutes. Remove from the heat and allow the lemongrass and ginger to steep in the sugar syrup for at least half an hour. For more pronounced flavor, place in the refrigerator and allow to steep several hours or overnight.
- Bring 4 cups of water to a boil. Add the teabags, turn off the heat, and allow the tea to steep for 5 minutes. Squeeze out the teabags and discard. Pour the brewed tea into a heat-proof pitcher.
- Strain the lemongrass ginger syrup through a small sieve, pressing on the solids to extract as much flavor as possible. Discard the solids, and add the syrup to the pitcher of tea. Add three cups of cold water to the tea, and stir well. Chill the tea, and serve over ice. Enjoy!
