HOT SAUSAGE DIP
This spicy sausage dip is great with tortilla chips or crackers. It's so thick and tasty, it could be a meal in itself!

Steps:
- Place pork sausage in a large, deep skillet. Cook over medium high heat until evenly brown.
- Drain sausage and stir in onions. Cook until slightly tender, about 2 minutes. Mix in diced tomatoes with green chile peppers. Stirring occasionally, allow the mixture to simmer approximately 15 minutes.
- Blend cream cheese and sour cream into the sausage mixture. Season with crushed red pepper.

Steps:
- Brown sausage in skillet. Drain.
- Add sausage, cheese, olives, and taco mix to crockpot set to medium-high.
- Stir frequently to mix ingredients and melt cheese.
- When cheese melts, turn to low and stir occasionally.
- Add sour cream if too thick, too hot, need more, etc.
- Serve with tortilla chips or bake in cooked wonton wrappers till set.

SAUSAGE DIP

Steps:
- Heat a 10-inch cast-iron skillet over medium heat until very hot. Add the sausage and break up into small pieces with a wooden spoon. Cook until no pink pieces remain, about 6 minutes.
- Reduce the heat to medium-low. Add the cream cheese and break up into smaller pieces. Add the salsa and stir well to combine. Continue to stir until all of the cream cheese is melted, about 3 minutes.
- Top with scallions and cilantro and serve right out of the skillet, with tortilla chips on the side.

- Preheat oven to 350 degrees.
- In a large skillet over medium heat, brown and crumble sausage until no longer pink.
- Remove from heat and drain off drippings and add all remaining ingredients except one green onion.
- Pour into one-quart baking dish.
- Bake 20-25 minutes until bubbly.
- Garnish with remaining chopped green onion.
- Keep warm and serve with Melba toast, sesame and wheat crackers.
- Refrigerate leftovers.
