SURPRISINGLY TASTY TOMATO-LESS SALSA



Surprisingly Tasty Tomato-less Salsa image

Stray from the ordinary salsa or pico de gallo... cut the tomatoes!

Number Of Ingredients 10

3-4 colorful sweet peppers
2 Large jalapenos
1 Med serrano pepper
2-3 green onions
1/2 c chopped cilantro, fresh
1/4 c chopped red onion
1 tsp minced garlic
2-3 Tbsp red wine vinegar
Drizzle canola or olive oil
salt & pepper

Steps:

  • 1. Chop green onion and all peppers. (De-vein and de-seed peppers before chopping. I leave in only the Serrano's veins and seeds for a MEDIUM heat. For HOT heat, leave the jalapenos' veins and seeds in also.) Add to bowl.
  • 2. Next, chop and add cilantro, red onion and garlic to mixture. Stir.
  • 3. Drizzle very lightly with oil, (about 2 teaspoons.) Then add red wine vinegar. Salt and pepper to taste. (I add about a teaspoon of each.) Stir, making sure to coat everything with oil and vinegar.
  • 4. Serve with chips or as a topping for tacos, nachos, burgers... endless choices. (Add to a large container of sour cream to make a unique, spicy dip.)

When fresh tomatoes from my garden start ripening faster than I can eat them fresh, I make this salsa. I modified the recipe to match my taste for sweet salsa with just a bit of zip. I freeze peeled tomatoes so that I can have the garden-fresh taste in winter, too.

8 tomatoes, peeled and coarsely chopped
½ onion, chopped
1 (4 ounce) can diced green chilies
¼ cup white vinegar
2 tablespoons brown sugar
½ teaspoon garlic powder
½ teaspoon ground cumin
½ teaspoon dried oregano
½ teaspoon ground coriander
salt to taste
hot pepper sauce to taste

Steps:

  • Combine the tomatoes, onion, green chiles, vinegar, brown sugar, garlic powder, cumin, oregano, coriander, salt, and hot sauce in a Dutch oven or large pot over medium-low heat. Simmer, stirring occasionally, until the salsa reaches your preferred consistency, about 3 hours. Store in refrigerator until using.

I got this salsa recipe from my sister, and my children and I have been making batches of it ever since. We pair pint jars with packages of tortilla chips for zesty Christmas gifts. Number Of Ingredients 12

10-1/2 pounds tomatoes (about 35 medium), peeled and quartered
4 medium green peppers, chopped
3 large onions, chopped
2 cans (12 ounces each) tomato paste
1-3/4 cups white vinegar
1/2 cup sugar
1 medium sweet red pepper, chopped
1 celery rib, chopped
15 garlic cloves, minced
4 to 5 jalapeno peppers, seeded and chopped
1/4 cup canning salt
1/4 to 1/2 teaspoon hot pepper sauce

Steps:

  • In a large stockpot, cook tomatoes, uncovered, over medium heat 20 minutes. Drain, reserving 2 cups liquid. Return tomatoes to the pot. , Stir in green peppers, onions, tomato paste, vinegar, sugar, red pepper, celery, garlic, jalapenos, canning salt, hot pepper sauce and reserved tomato liquid. Bring to a boil. Reduce heat; simmer, uncovered, 1 hour, stirring frequently., Ladle hot mixture into 10 hot 1-pint jars, leaving 1/2-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight. , Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 20 minutes. Remove jars and cool.
