My sweet neighbor brought me a bag of apples one year and I went in search of recipes to use them up. I found this one and just knew it would be awesome. Everyone just loves it. It's so good!

Number Of Ingredients 12

3 eggs
1 c vegetable oil
1 tsp vanilla
1 tsp baking soda
1 tsp salt
3 c all purpose flour
4 c grated, peeled, apples
TOPPING MIX
1/2 c sugar
1 Tbsp cinnamon
2 tsp flour
1/4 c cold butter

Steps:

  • 1. Heat oven to 350. Grease and flour 2 loaf pans.(Use Large loaf pans) Mix the topping ingredients together and put half of mixture into bottom of prepared pans.
  • 2. Mix eggs, sugar, oil, vanilla, baking soda and salt together in large mixing bowl.Pour in 3 cups flour, stir a few times, then add apples and stir well. Don't over mix.Pour into prepared pans.
  • 3. Sprinkle remaining topping mixture on top of apple mixture. and place in a preheated 350 degree oven for 1 hour.

Number Of Ingredients 11

3 cups all-purpose flour
2 cups sugar
2 teaspoons ground cinnamon
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
4 large eggs, room temperature
1 cup canola oil
1/2 teaspoon vanilla extract
2 cups chopped peeled apples (about 2 medium)
1 cup coarsely chopped walnuts

Steps:

  • Preheat oven to 350°. Line 2 greased 8x4-in. loaf pans with parchment; grease paper., Whisk together first 6 ingredients. In another bowl, whisk together eggs, oil and vanilla; add to flour mixture, stirring just until moistened (batter will be thick). Fold in apples and walnuts. , Transfer to prepared pans. Bake until a toothpick inserted in each center comes out clean, 50-55 minutes. Cool in pans 10 minutes before removing to wire racks to cool.Freeze option: Securely wrap cooled loaves in plastic and foil, then freeze. To use, thaw at room temperature.

This bread is so moist and flavorful that my kids even eat the ends, which for most quick breads I usually have to throw away. At Christmas, I make the mini loaves and give as gifts to my neighbors. The oil can be replaced with 1 cup of unsweetened applesauce. Still flavorful but not quite as moist. If possible, don't skip the walnuts, they really add to it.

1 cup oil
3 eggs
2 cups sugar
1 teaspoon vanilla
3 cups apples, diced
3 cups flour
1 teaspoon cinnamon
1 teaspoon baking soda
1 teaspoon salt
1 cup walnuts, chopped (optional)

Steps:

  • Combine and set aside the oil, eggs, sugar, and vanilla.
  • Sift flour, cinnamon, soda, and salt. Add dry ingredients to oil mixture gradually.
  • Add apples and nuts.
  • Bake in 2 regular loaf pans or 3 foil loaf pans for 1 1/2 hours at 300 degrees.
  • Cool 10 minutes in the pan.
  • Sprinkle with sugar, if desired.
  • Note: I bake it at 325 degrees for about 70 minutes.

½ cup brown sugar
1 ½ teaspoons ground cinnamon
2 large eggs (room temperature)
½ cup granulated sugar
½ cup butter (melted)
1 teaspoon vanilla extract
1 ½ cups all purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
2 cups chopped apples (Pink Lady, Gala, Honeycrisp - any apples that are good for baking, peeled and chopped, about 2 apples)

Steps:

  • Preheat oven to 350°F. Grease and flour an 8 x 5 inch loaf pan or line with parchment paper. Set aside.
  • In a small bowl, whisk together brown sugar and cinnamon and set aside.
  • Whisk eggs and granulated sugar together in a large mixing bowl.
  • Whisk in melted butter and vanilla extract until thoroughly combined.
  • Stir in all purpose flour, baking powder, baking soda and salt just until combined. The batter will be very thick. Fold in chopped apples.
  • Add half of the batter to the prepared loaf pan. Sprinkle about three quarters of the brown sugar mixture on top of the batter.
  • Spread the remaining batter carefully on top of the brown sugar mixture. Sprinkle remaining brown sugar mixture on top and use a knife or spoon to gently swirl it into the top layer.
  • Bake for 35 to 45 minutes or until lightly golden on top and an inserted toothpick comes out clean or with just a few moist crumbs. (If bread is browning too quickly, tent with foil for the last 10 to 15 minutes.)
  • Let bread cool completely before slicing and serving.

5 cups all-purpose flour
2 tablespoons sugar
2 teaspoons salt
2 cups cold butter, cubed
1 to 1-1/4 cups ice water
FILLING:
2/3 cup sugar
2/3 cup all-purpose flour
1/2 teaspoon salt
6 cups thinly sliced peeled Granny Smith apples (about 6 medium)
6 cups thinly sliced peeled Gala or Jonathan apples (about 6 medium)
1 cup Red Hots candies
1/4 cup cold butter
Vanilla ice cream, optional

Steps:

  • In a large bowl, mix flour, sugar and salt; cut in butter until crumbly. Gradually add ice water, tossing with a fork until dough holds together when pressed. Divide dough into 2 portions so that 1 portion is slightly larger than the other. Shape each into a rectangle; cover and refrigerate 1 hour or overnight., Preheat oven to 375°. For filling, in a large bowl, mix sugar, flour and salt. Add apples and Red Hots; toss to coat., On a lightly floured surface, roll out larger portion of dough into an 18x13-in. rectangle. Transfer to an ungreased 15x10x1-in. baking pan. Press onto the bottom and up the sides of pan. Add filling; dot with butter., Roll out remaining dough; place over filling. Fold bottom crust over edge of top crust; seal and flute or press with a fork to seal. Prick top with a fork., Bake 50-55 minutes or until golden brown and filling is bubbly. Cool on a wire rack. Serve warm. If desired, top with ice cream.
