4 turkey drumsticks (1-1/2 pounds each)
2/3 cup Louisiana-style hot sauce
1/3 cup canola oil
1 tablespoon reduced-sodium soy sauce
1 tablespoon chili powder
2 teaspoons ground mustard
1 teaspoon garlic powder
1 teaspoon poultry seasoning
1 teaspoon onion powder
1 teaspoon celery salt
1/2 teaspoon white pepper
1/2 teaspoon hot pepper sauce, optional

Steps:

  • Divide drumsticks between 2 large bowls or shallow dishes. In a smaller bowl, whisk remaining ingredients until blended. Add 3/4 cup marinade to drumsticks, dividing evenly between the bowls. Turn to coat. Cover and refrigerate 8 hours or overnight. Cover and refrigerate remaining marinade., Preheat oven to 375°. Remove drumsticks from marinade to a foil-lined 15x10x1-in. baking pan; discard marinade in bowls., Bake, covered, 45 minutes. Uncover; bake 45-60 minutes longer or until a thermometer reads 175°, basting occasionally with reserved marinade.

3 tablespoons minced garlic
salt and ground black pepper to taste
12 chicken legs, thawed
1 pinch garlic powder, or to taste
1 (12 ounce) bottle hot pepper sauce (such as Frank's® RedHot)
½ cup butter, melted

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Line a jelly roll pan with aluminum foil and place a wire baking rack on top.
  • Fill a large pot with water. Add minced garlic, salt, and pepper; bring to a boil. Add chicken legs; cook until tender, about 10 minutes. Drain.
  • Arrange chicken legs on the wire rack. Season with salt, pepper, and garlic powder.
  • Bake in the preheated oven for 20 minutes. Flip and continue baking until juices run clear, about 20 minutes more.
  • Transfer chicken legs to a slow cooker. Cover with hot pepper sauce and melted butter.
  • Cook on Low until flavors combine, 1 to 2 hours.

  • heat grill or start coals in a small pan on the grill add butter and entire bottle of hot sauce, stir till it becomes red medium thick liquid, let simmer or move off direct heat till chicken is ready. put on chicken legs and cook over heat till the skin begins to crisp. Apply sauce liberally to each leg, and turn often till achieving a smoky red skin and cooked throughout. don't spare the sauce and remember the mantra "sauce and flip" cooking times vary depending upon methiod but normally 15 to 20 minutes total

2 tablespoons red wine vinegar
2 teaspoons hot pepper sauce, divided (recommended: Tabasco)
4 pounds chicken drumettes
1 cup ranch salad dressing
Celery sticks

Steps:

  • In a large bowl, combine taco seasoning, canola oil, red wine vinegar, and 1 teaspoon hot sauce. Add drumettes and toss to combine.
  • In a small bowl, combine ranch dressing and 1 teaspoon hot sauce. Set aside.

2 to 2 1/2 lbs. chicken legs
1 1/4 cups low-fat buttermilk
1 1/2 cups flour
2 teaspoons coarse salt
1/2 teaspoon pepper
3 cups vegetable oil (or 2 lbs. lard), plus 2 tbsp. vegetable oil (or melted lard), for hot sauce
2 tbsp. ground cayenne
1 1/2 tsp. garlic powder
1 1/2 tsp. kosher salt
White bread
Dill pickle slices

Steps:

  • 1. In a resealable plastic bag, soak the chicken legs in the buttermilk for 30 minutes (or up to 12 hours). In a medium bowl, combine the flour, salt and pepper. 2. Remove the chicken pieces and coat them evenly with the flour mixture; transfer to a parchment-lined baking sheet and let stand for 15 minutes. Coat the chicken again in the flour mixture. 3. Meanwhile, in an extra-large, heavy skillet, heat 3 cups oil to 350°. Carefully add the chicken to the pan and partially cover. Lower the heat to medium-low and fry the chicken, turning occasionally, until the crust is gold-brown and the meat is cooked through, 25 to 30 minutes. (Lower the temperature if the chicken is browning too quickly.) Transfer to paper towels to drain. 4. Meanwhile, stir together remaining oil or melted lard, cayenne, garlic powder and kosher salt.
