CRISPY BENNE SEED SHRIMP WITH SWEET MUSTARD AND HOT CHILE GARLIC SAUCES



Crispy Benne Seed Shrimp with Sweet Mustard and Hot Chile Garlic Sauces image

20 large white shrimp, peeled and deveined
3 tablespoons sea salt
8 to 10 fried whole cilantro leaves, for garnish
3 tablespoons scallions, sliced thinly, on the bias
1 cup honey
1 cup Dijon mustard
1/4 teaspoon sesame oil
2 teaspoons hot chile garlic sauce (sambal)
4 tablespoons honey
1 teaspoon rice wine vinegar
1 1/2 cups cornstarch
1 1/2 cups flour
2 1/2 cups chilled soda water
4 tablespoons black sesame seeds (goma seeds)
2 tablespoons white sesame seeds
2 tablespoons sliced finely chives
1 tablespoon minced parsley

Steps:

  • Preheat the frying oil to 360 degrees F.
  • Place shrimp on paper towels and refrigerate. They must be free of moisture to hold the batter.
  • Mix together ingredients for the Mustard Sauce and set aside.
  • Mix together ingredients for the Hot Chile Garlic Sauce and set aside.
  • For the batter: In a large stainless or glass mixing bowl, mix the cornstarch and flour together. Add the soda water gradually, until a forms smooth thick batter the consistency of pancake batter. Add seeds and herbs. Keep the batter cold and use immediately.
  • Grab the shrimp 3 or 4 at a time by the tail and dip into the batter. Shake off excess and place in the hot oil. While the shrimp are frying, lay out the plates and drizzle the 2 sauces around using a coffee spoon. Remove the shrimp from the hot oil and place on absorbent paper. Season with sea salt.
  • Stack the shrimp, 5 on a plate and garnish with the scallions and fried cilantro leaves. Serve immediately and enjoy!
  • Note: Always get more shrimp as you can easily eat more that 5 of these!

3 tablespoons dark brown sugar
4 1/2 tablespoons Thai fish sauce
1 teaspoon crushed black peppercorns
3 tablespoons minced fresh ginger
1 tablespoon minced garlic
1 1/2 pounds large shrimp, peeled and deveined
1 teaspoon fresh lime juice
1/4 cup finely slivered fresh basil
4 cups steamed basmati, jasmine or long-grain rice

Steps:

  • Mix sugar and fish sauce together, then stir in 1/2 cup water. Add the pepper, ginger and garlic. Place in a nonstick skillet and cook over high heat about five minutes, until the mixture starts to become syrupy.
  • Add the shrimp and cook, stirring, until firm and pink. Cook a few minutes longer, turning the shrimp constantly, so it becomes coated with the sauce.
  • Stir in the lime juice and basil and serve with steamed rice.

1 lb. 41-50ct or larger p&d raw shrimp
1 peeled and diced honey mango
1/2 julienne red bell pepper
1/2 julienne green bell pepper
i/4 julienne med. red onion
2 Tbsp pine nuts
2 minced small red peppers (ripe jalapenos if available)
2 cloves minced fresh garlic
2 Tbsp mince cilantro
1 Tbsp red curry
juice of 1 lemon
1/4 c. water
1/2 tsp corn starch
1/4 c. Hot Damn liqueur
2 Tbsp white vinegar
3 Tbsp vegetable oil
steamed white rice

Steps:

  • Rinse and drain shrimp.Place into small bowl and toss with juice of 1 lemon. Set aside. In a large (14") skillet or wok heated over med. heat, add all peppers,onions and honey mango and saute for appx. 2 minutes.Add pine nuts,cilantro and garlic and continue sauteing for an additional 2 mins.Sprinkle curry powder over ingredients in pan. Mix together water, corn starch and liqueur and add to pan. Add shrimp and bring mix to a boil while tossing all ingredients to coat evenly. cover and turn off heat. Let stand 3 minutes. Serve over steamed white rice.
