Yield 2 loaves (16 slices each).

Number Of Ingredients 11

2 packages (1/4 ounce each) active dry yeast
3 cups warm water (110° to 115°)
1/2 cup nonfat dry milk powder
1/2 cup honey
1/3 cup wheat bran
1/3 cup toasted wheat germ
1/4 cup ground flaxseed
2 tablespoons canola oil
2 teaspoons salt
4 cups whole wheat flour
3-1/2 to 4 cups all-purpose flour

Steps:

  • In a large bowl, dissolve yeast in warm water. Add the milk powder, honey, wheat bran, wheat germ, flax, oil, salt, whole wheat flour and 3 cups all-purpose flour. Beat until smooth. Stir in enough remaining flour to form a soft dough (dough will be sticky)., Turn onto a lightly floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a bowl coated with cooking spray, turning once to coat the top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down and turn onto a floured surface; shape into two loaves. Place in two 9x5-in. loaf pans coated with cooking spay. Cover and let rise until doubled, about 30 minutes., Bake at 350° for 35-40 minutes or until golden brown. Remove from pans to wire rack to cool.

2/3 cup canola oil
1/2 cup sugar
2 teaspoons salt

1 cup toasted wheat germ
6 to 8 cups bread flour

Steps:

  • In a large bowl, dissolve yeast in 3/4 cup warm water and 1 tablespoon honey. Add the remaining water and honey, the oil, sugar, salt, whole wheat flour, wheat germ and 3 cups bread flour. Beat until smooth. Stir in enough remaining bread flour to form a soft dough (dough will be sticky)., Turn onto a lightly floured surface; knead until smooth and elastic, 6-8 minutes. Yield 8 mini-loaves

Number Of Ingredients 11

1 1/2 C warm water
2 Tbsp butter
1/2 C honey
2 C unbleached flour
2 C wheat flour
1 Tbsp cocoa
1 Tbsp sugar
2 tsp coffee
1 tsp salt
2 1/4 tsp. yeast (bread machine)
3 Tbsp cornmeal to dust loaves

Steps:

  • Put all ingredients in the bread machine on the dough cycle.When the cycle is complete. turn out onto a floured board and pat into an even rectangle. Cut into 8 pieces, as equal as possible. Form into cigar shaped loaves. Place on greased cookie sheets and dust with cornmeal. Allow to rainse until double. Bake @ 350 degrees, 20-25 min. until brown
