1 pound ground pork
1 garlic clove, minced
1 tablespoon dried sage, crumbled
3/4 teaspoon dried thyme
1/2 teaspoon dried fennel, crushed
Pinch of ground nutmeg
1 1/2 teaspoons coarse salt
1/2 teaspoon freshly ground black pepper
1 large egg white
2 teaspoons vegetable oil

Steps:

  • Mix together the pork, garlic, sage, thyme, fennel, nutmeg, salt, and pepper in a medium bowl. Add the egg white and combine thoroughly. Cover and chill for at least 15 minutes.
  • To easily form the sausage patties, rinse your hands in cold water. Divide the mixture into eighths and shape each portion into a 2 1/2-inch disk. Patties can be made to this point and refrigerated or frozen until ready to use.
  • Heat a skillet over high heat, and then swirl in the oil. Fry the sausages on both sides until completely cooked through and golden brown, about 4 minutes per side. Drain and serve immediately with pancakes, waffles or eggs. Sausage patties can be fully cooled, wrapped, and frozen for microwave reheating.

Remove to paper towels to drain. Freeze option: Wrap each cooked, cooled patty; transfer to an airtight container. May be frozen for up to 3 months. To use, unwrap patties and place on a baking sheet coated with cooking spray. Bake at 350° until heated through, about 15 minutes on each side.

I looked and looked at the grocery store for a breakfast sausage that did not include sugar. It was a long and fruitless search, so I decided to make it myself. After a couple of tries, yielding rather bland tasting sausage, I realized that commercial sausage sits with its seasonings and preservatives, and possibly, flavor enhancers, in the grocer's refrigerator case for a long time. When you make this sausage, please don't skip the resting time in the refrigerator, because this allows the seasonings to bloom.

1 tablespoon rubbed sage
1 teaspoon kosher salt, or to taste
1 teaspoon dried parsley

1 slice bacon, thinly sliced*
2 tablespoons vegetable oil
1/2 small onion, finely chopped
3 cloves garlic, minced
2 tablespoons plain dried bread crumbs
2 teaspoons brown sugar
3/4 teaspoon dried thyme
1/4 teaspoon cayenne pepper
Kosher salt and freshly ground black pepper
8 ounces 72% lean ground pork
1 egg yolk
1 tablespoon water

Steps:

  • In a small saute pan, cook the bacon over medium heat until rendered but not crispy, about 3 minutes. Add 1 tablespoon vegetable oil and onions, and cook until the onions are soft and begin to turn golden in color, about 3 more minutes. Add the minced garlic and cook an additional 1 minute, or until fragrant. Remove the pan from the heat, and set aside.
  • In a medium bowl, use a fork to mix together the bread crumbs, brown sugar, thyme, cayenne pepper, and salt, and pepper. Add the ground pork, egg yolk, and bacon and onion mixture to the bread crumbs, and gently mix with your hands until just combined. Do not over mix. Divide the mixture into 8 even portions and form into patties, pressing a small thumb indentation in the middle of each so they stay flat when they cook. In a large saute pan, heat 1 tablespoon vegetable oil over medium-high heat. Add the sausage patties and brown on both sides, about 2 minutes per side. Add a tablespoon of water and cover the pan for 3 minutes, or until the sausage is fully cooked. Serve hot.

Make a double recipe of these, shape them and then freeze for brunches. I love these between butter pan rolls! The first time you make these use the amounts of spices listed, you might however want a stronger flavor, so the next time you make them just adjust all spices to taste. This recipe will not work well with lean pork, the patties will be very dry, so try to purchase ground pork with some extra fat in it for flavor and texture. The garlic is optional, I added it in when I made these, only because we love garlic. I strongly advise you to prepare the patties (do not cook) shape and refrigerate overnight, as the flavors will blend and become stronger, they do take on a whole different flavor when left overnight.

1/4 cup oil
1/2 cup fresh breadcrumb
2 tablespoons milk

1/4 teaspoon nutmeg
1/4 teaspoon cinnamon

Steps:

  • In a small skillet heat oil over medium-low heat and saute the onion and garlic (if using) for about 7-8 minutes, or until softened; cool for 10-15 minutes.
  • Meanwhile while the onions are cooling, in a bowl stir together the soft bread crumbs and milk; let stand until the milk is absorbed.
  • Add in the onions to the milk/crumb mixture with all remaining ingredients; mix with a spoon until well blended (I use clean hands).
  • Form sausage into about a 3-inch patty (about 1/2-inch thick) but of coarse you can make them any size you desire.
  • With wet hands arrange on a baking sheet lined with wax paper.
  • At this point the patties may be frozen.
  • Heat oil in a frypan over medium heat.
  • Cook patties for about 4-6 minutes, turning once (do not flatten patties while cooking, as the juices will run out).

1/2 to 2/3 cup grated Parmigiano-Reggiano, a couple of handfuls
Freshly grated nutmeg

2 1/4 teaspoons ground sage or rubbed sage, half a palmful
2 1/4 teaspoons granulated onion
1 1/2 teaspoons granulated garlic, half a palmful
2 1/4 teaspoons fennel seed, half a palmful
3 pinches ground cloves or allspice
2 tablespoons extra-virgin olive oil
8 slices thick cut good quality white bread
2 tablespoons butter
2 cups halved or sliced strawberries
1/2 cup thinly sliced or torn fresh basil leaves

Steps:

  • Preheat the griddle to medium.
  • Whisk together the eggs, milk or cream, the cheese, the nutmeg and salt and pepper, to taste, in a shallow dish.
  • In a medium bowl add the pork, sage, onion, garlic, fennel, cloves, lots of black pepper and salt, to taste, and mix to combine. Divide the mixture into 4 pieces and form each piece into 2 small patties, about 2 1/2-inches wide. Heat the extra-virgin olive oil in large skillet over medium heat. Add the patties and cook 3 to 4 minutes on each side. Turn off the heat and keep warm in the pan.
  • Wipe the hot griddle with butter nested in a paper towel. Soak the bread, a few slices at a time, in the milk mixture, shaking off the excess. Add the bread to the griddle and cook until toasted, crispy and golden, about 3 minutes on each side. Cook in batches, if necessary.
  • While the bread toasts, combine the strawberries, basil and sugar in a medium bowl.
  • Halve the toast from corner to corner. Serve the toast on individual plates layered with sausage patties, a liberal drizzle of honey and the berries with basil.

Steps:

2 lbs ground pork
1 tsp garlic powder
½ tsp thyme
½ tsp ground sage
1 tsp fennel seeds
½ tsp red pepper flakes
pinch of cloves
pinch of salt

1-2 tbsp maple syrup

Steps:

  • In a mixing bowl, combine ground pork with all seasonings.
  • Form the meat into patties. The size is up to you! I find I enjoy nice thin wide patties to work best in sandwiches, but you can make them however works best for you. ????
  • To prevent your patties from falling apart when cooking, chill them in the fridge for about 10 minutes before cooking them in the frying pan. This will help them hold their shape.
  • Add a little oil to your frying pan, on medium-high heat and cook the patties for about 5 minutes on each side or until golden. Lay on a paper towel to drain any excess fat before serving.
  • Serve as they are, or on homemade breakfast sandwiches!

Steps:

  • Cut turkey breast into large chunks.
  • Place in food processor and pulse until coarsely ground.
