Delicious party sized baked ziti with meat sauce, pasta, and 3 cheeses.

2 pounds dry ziti or penne pasta
1 cup chopped onion (frozen is fine)
2 pounds lean ground beef
1 hot Italian sausage link, crumbled (optional)
4 (26-ounce) jars spaghetti sauce
3/4 pound (12 oz) sliced provolone (not smoked)
1 cup sour cream
1 egg, beaten
1 (16-oz) carton whole milk ricotta cheese
3/4 pound (4 cups) mozzarella cheese, shredded
1/2-1 cup freshly grated Parmesan cheese
1 TB Italian seasoning (optional)

Steps:

  • Bring a large pot of lightly salted water to a boil. Add ziti pasta, and cook until al dente, about 8 minutes; drain.
  • In a large skillet, brown onion and ground beef over medium heat. Add spaghetti sauce, and simmer 15 minutes.
  • In medium bowl, stir together ricotta, sour cream, egg & Italian seasoning.
  • Spray one jumbo or two large aluminum foil pans with cooking spray.
  • Layer ingredients as follows:
  • Half of the sauce
  • Half of the ziti
  • Half of the Provolone cheese,
  • Half of the mozzarella
  • Layer remaining sauce, ziti, provolone & mozzarella.
  • Spread all of ricotta/sour cream mixture on top.
  • Sprinkle parmesan on top.
  • Bake at 350 degrees until bubbly.
  • IF FREEZING:
  • Assemble (but do not cook) ziti.
  • Wrap well, label, and freeze.
  • TO COOK FROM FROZEN:
  • Place in fridge to thaw a few days before serving.
  • Bake at 350 until bubbly.
  • Allow to rest at least a half hour before serving.

Got this recipe from a friend. Ran out of ideas for a potluck dish and this one was a winner. Was hoping to bring leftovers home for my lunch the next day but no such luck it was gone in a minute.One nice thing about this recipe is you can adjust the amount of egg noodles to your liking.

1 large onion
2 -2 1/2 lbs ground beef
1 (16 ounce) package of medium size egg noodles (thin egg noodles, not wide ones)
1 (46 ounce) can tomato juice
1 (14 1/2 ounce) can cream-style corn
2 (10 1/2 ounce) cans chicken noodle soup
2 tablespoons sugar

Steps:

  • Saute in butter 1 large onion, diced, until transparent.
  • Add: ground beef and cook until done. Season the meat with salt & pepper to taste.
  • Cook: the noodles, just until limp, not fully cooked.
  • Drain fat from meat mixture.
  • Drain water from noodles.
  • Put meat and noodle into a large roaster.
  • Add the tomato juice, cream style corn, chicken noodle soup and the sugar.
  • Bake in oven at 325 for about 1 hour. Watch it so it doesn't cook too much. Stir it from time to time while it is baking.

This is my go-to pasta salad recipe for a crowd! It's great for showers, picnics, parties, you name it! My mother-in-law taught me to make it. It is easy and very versatile. Today I made it for an event, and I decided to keep track of the measurements so that it could be shared with others who may need a large crowd pasta salad recipe. Hope you enjoy! 3 pounds garden rotini pasta
2 (16 ounce) packages steam-in-bag frozen broccoli florets
6 tomatoes, chopped
2 (16 ounce) bottles Italian-style salad dressing
16 ounces Cheddar cheese, cubed
1 tablespoon salt
1 tablespoon ground black pepper
1 tablespoon garlic powder
1 tablespoon onion powder

Steps:

  • Bring a large pot of lightly salted water to a boil; cook rotini at a boil until tender yet firm to the bite, about 8 minutes.
  • While pasta is boiling, steam broccoli, one bag at a time, in a microwave per directions on the package, 4 to 6 minutes.
  • Rinse cooked pasta in a colander until completely cool. Return to the pot. Add broccoli, tomatoes, salad dressing, Cheddar cheese, salt, pepper, garlic powder, and onion powder. Mix well. Refrigerate until chilled, 30 minutes to 1 hour. Serve cold.

6 to 7 cups all-purpose flour
1-1/2 teaspoons salt
6 eggs, lightly beaten
1 cup water
1 tablespoon canola oil
Melted butter and minced fresh parsley, optional

Steps:

  • In a large bowl, combine 6 cups flour and salt. Make a well in the center. Beat eggs and water; pour into well. Stir together, forming a dough. Turn dough onto a floured surface; knead 8-10 times. , Divide dough into eight portions. On a lightly floured surface, roll each portion into a 1/16-in.-thick square. Let stand, uncovered, for 10 minutes. , Roll up, jelly-roll style. Using a sharp knife, cut into 1/4-in. slices.
