HOMEMADE RED HOT SAUCE



Homemade Red Hot Sauce image

20 tabasco or serrano chiles, stemmed and cut crosswise into 1/8-inch slices, or 12 very ripe red jalapenos (about 10 ounces)
1 1/2 tablespoons minced garlic
3/4 cup thinly sliced onions
3/4 teaspoon salt
1 teaspoon vegetable oil
2 cups water
1 cup distilled white vinegar

Steps:

  • Combine the peppers, garlic, onions, salt and oil in a non-reactive saucepan over high heat. Saute for 3 minutes. Add the water and continue to cook, stirring occasionally, for about 20 minutes, or until peppers are very soft and almost all of the liquid has evaporated. (Note: this should be done in a very well-ventilated area!) Remove from the heat and allow to steep until mixture comes to room temperature. In a food processor, puree the mixture for 15 seconds, or until smooth. With the food processor running, add the vinegar through the feed tube in a steady stream.
  • Taste and season with more salt, if necessary. (This will depend on the heat level of the peppers you use as well as the brand of vinegar used.) Strain the mixture through a fine mesh sieve and then transfer to a sterilized pint jar or bottle and secure with an airtight lid. Refrigerate. Let age at least 2 weeks before using. Can be stored in the refrigerator for up to 6 months.

1 cup water
1 cup white vinegar
9 dried pequin peppers, seeded
4 dried arbol peppers, seeded
6 cloves garlic, minced
2 tablespoons ground paprika
1 tablespoon onion flakes
1 teaspoon salt
2 tablespoons cold water
¼ teaspoon xanthan gum

Steps:

  • Combine 1 cup water, vinegar, pequin peppers, arbol peppers, garlic, paprika, onion flakes, and salt in a small saucepan over medium heat until the mixture reaches 180 degrees F (82 degrees C) and keep at that temperature for 10 minutes. Transfer to a blender and puree until smooth. Allow to cool to room temperature in the blender, about 15 minutes.
  • Combine 2 tablespoons cold water and xanthan gum in a small bowl. Add to blender with pepper mixture and puree for 30 seconds. Transfer mixture to a bottle and store in the refrigerator for up to 9 months.

20 habanero peppers (4-1/2 ounces)
5 serrano peppers (2-1/2 ounces)
15 dried arbol chiles
2 large carrots (5-1/2 ounces), peeled, halved lengthwise and quartered
1 large sweet onion (15 ounces), cut into 8 wedges
8 garlic cloves, halved
1 cup water
3/4 cup white vinegar (minimum 5% acetic acid)
1/2 cup fresh lime juice
3 teaspoons salt
1 teaspoon coarsely ground pepper

Steps:

  • Cut habanero and serrano peppers in half; discard stems and seeds. In a bowl, combine arbol chiles and enough boiling water to cover. Let stand, covered, 10 minutes; drain., Meanwhile, in a well-ventilated area, fill a 6-qt. stockpot three-quarters with water; bring to a boil. Add carrots, onion and garlic. Return to a boil; cook until soft, 20-22 minutes. Remove with a slotted spoon to a bowl. Add peppers to stockpot; return to a boil. Boil 1 minute; drain. Place water, vinegar, lime juice, salt and pepper in a blender. Add vegetables; cover and process until smooth. Return to stockpot; bring to a boil., Carefully ladle mixture into 5 hot half-pint jars, leaving 1/2-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight. , Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 10 minutes. Remove jars and cool.

2 jalapeno peppers, sliced into 1/4-inch pieces
2 habanero peppers, sliced into 1/4-inch pieces
2 serrano peppers, sliced into 1/4-inch pieces
2 cloves garlic, minced
6 tomatoes, stems removed
lemon, juiced
1 lime, juiced
1 ½ fluid ounces whiskey (such as Jack Daniel's®)

Steps:

  • Heat olive oil in a skillet over low heat. Cook and stir jalapeno peppers, habanero peppers, serrano peppers, and garlic in the hot oil until slightly tender and fragrant, about 5 minutes.
  • Blend tomatoes in a blender until pureed and smooth.
  • Mix pureed tomatoes, lemon juice, and lime juice into pepper mixture; bring to a low simmer. Stir whiskey into tomato mixture and simmer for 15 minutes.
  • Strain sauce through a fine-mesh strainer, reserving the solids and transferred strained sauce back to the skillet. Blend the solids in a blender until smooth.
  • Transfer pureed solids to the sauce and simmer for 15 minutes. Cool sauce completely; pour into jars or bottles and store in the refrigerator.

1 ½ cups white vinegar
1 ½ cups water
3 large serrano peppers
4 large jalapeno peppers
2 medium tomatoes, chopped
¼ teaspoon salt

Steps:

  • Inspect 4 half-pint jars for cracks and rings for rust, discarding any defective ones. Immerse in simmering water until sauce is ready. Wash new, unused lids and rings in warm soapy water.
  • Combine vinegar, water, serrano peppers, jalapeno peppers, tomatoes, and salt in a saucepan over medium heat. Bring to a simmer and cook sauce for 50 minutes.
  • Run sauce through a tomato mill or a fine-mesh sieve 3 times.
  • Pack sauce into hot, sterilized jars, filling to within 1/4 inch of the top. Run a clean knife or thin spatula around the insides of the jars to remove any air bubbles. Wipe rims with a moist paper towel to remove any spills. Top with lids and screw rings on tightly.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars 2 inches apart into the boiling water using a holder. Pour in more boiling water to cover jars by at least 1 inch. Bring to a rolling boil, cover, and process for 10 minutes.
  • Remove the jars from the stockpot and let rest, several inches apart, for 24 hours. Press the center of each lid with a finger to ensure the lid does not move up or down. Remove the rings for storage and store in a cool, dark area.

  • Melt the chocolate and butter in a small saucepan over medium-low heat. Alternately add sugar and milk in two additions; whisk to combine. Add salt and continue whisking until sugar is dissolved, about 5 minutes. Serve warm.

2 kg hot red chili peppers
3 bulbs of garlic
2 cups olive oil
1 1/2 cups coarse salt

Steps:

  • First remove the stems from the hot peppers, but leave the seeds inches.
  • Next you peel the garlic bulbs, and the onion.
  • Add all of the ingredients into a blender, for the exception of 1/2 cup salt and olive oil.
  • Blend everything until its very well blended. Like a thick sauce.
  • Now you pour it into a bowl, and sprinkle the remaining salt and olive oil over the sauce. Leave it for 4-5 days in a dark cool place, remember to stir it 2-3 times a day.
  • Now just pour into distilled jar, add a little more oil if it looks too dry, and store away. Enjoy!

This is a recipe I have used for many years. It's great with all meats or just on its own with toast. My sister just eats it right out of the jar and gobbles it all up LOL. The level of heat depends on what peppers you use - we like it hot.

3 can(s) italian-style diced tomatoes (28 oz each)
2 large onions
2 large green peppers
2 large bell peppers
2 large poblanos or hot banana peppers
6 clove garlic, minced
1 1/2 c sugar (i use splenda - about a cup)
2 c white vinegar
3 Tbsp salt
1 Tbsp hot chili powder
1 tsp ground cinnamon
1 tsp ground allspice
1 tsp ground cloves
1 tsp ground nutmeg

Steps:

  • 1. Chop all peppers/onions into small even pieces and combine all ingredients in a large pot. Bring to a boil and simmer for 1.5 hours or put in a crock pot and cook on low for 8 hours.
  • 2. Pour into sterilized jars and put in a water bath for 10 minutes.

Set a fine-mesh sieve over a medium bowl; pour the pureed mixture through the sieve, pushing on the solids with a wooden spoon to extract all the liquid. (Discard solids.)
