HOMEMADE CHEESEBURGER MACARONI HAMBURGER HELPER

Homemade Cheeseburger Macaroni Hamburger Helper image

HOMEMADE HAMBURGER HELPER

Homemade Hamburger Helper image

Think of this as the most luxurious Hamburger Helper you've ever had. It's how Mark Rosati, the culinary director of Shake Shack, turns leftover ground beef into a complete weeknight dinner. The entire dish - even the pasta - is made in one pot, and melds the indelible comfort of macaroni and cheese with the complexity of a good Bolognese. This definitely has a kick, so adjust the hot sauce according to taste.

Categories     dinner, noodles, pastas, main course

Time 1h15m

Yield 4 servings

Number Of Ingredients 16

1/4 cup neutral oil, such as canola or vegetable
1 large yellow onion, diced into 1/2-inch pieces
Kosher salt and black pepper
3 garlic cloves, minced
5 strips uncooked smoked bacon, finely chopped
1 pound ground beef
1 cup dry white wine
3 cups chicken stock or water
3/4 cup heavy cream
1/4 to 1/3 cup hot sauce
2 teaspoons hot smoked paprika
1 bay leaf
8 ounces elbow pasta
5 slices American cheese, ripped into small pieces
1 1/2 cups grated Cheddar
1/2 cup finely chopped chives

Steps:

  • Heat a large (12-inch) sauté pan or Dutch oven over medium-low heat, and add oil and onion; season lightly with salt and pepper. (The hot sauce added in Step 6 will add a lot of flavor, so be careful not to overseason here.) Let cook until the onions turn light beige in color and begin to caramelize, 20 to 25 minutes.
  • Add garlic, and cook until fragrant and starting to brown ever so slightly, about 2 minutes.
  • Increase heat to medium-high and add bacon and ground beef, using the back of a large spoon to break up the meat into smaller pieces. Continue to cook until the liquid has mostly evaporated and the meat starts to sear and develop a crust on the bottom of the pan, 12 to 15 minutes.
  • Remove pan from the heat and carefully drain off most of the fat, leaving a little in the pan to keep the meat moist.
  • Return pan to the medium-high heat and add white wine, allowing it to reduce until the mixture is almost dry, about 10 minutes.
  • Add the chicken stock, heavy cream, hot sauce, paprika and bay leaf to the pan. Mix until combined and bring to a boil over medium-high.
  • Once the mixture is boiling, add the pasta and cook until al dente, stirring often, about 9 minutes.
  • Reduce the heat to low and stir in both types of cheese, stirring until completely melted and sauce is thickened.
  • Remove the pan from heat, stir in chives and season to taste with salt and pepper. Serve immediately.

What makes this really special, though, is the melted cheddar cheese. Once that's incorporated it's fabulous and very creamy. The perfect recipe when you need...

SPICY HOMEMADE HAMBURGER HELPER

Spicy Homemade Hamburger Helper image

I developed this recipe because I wanted something that had a spicier flavour than instant products readily available in your local grocery store but I wanted the ease with which to make it too. I think this recipe is easy to follow and versatile too. You can add any vegetable that you may have in the house and adjust the spices to suit yourself. You can change the type of pasta/sauce used too. Everytime you make it, it can be different from the last time! You can even make it using ground chicken, turkey, or even seafood (or with no meat at all!) Enjoy!

HOMEMADE HAMBURGER HELPER MIX SODIUM FREE

Homemade Hamburger Helper Mix Sodium Free image

I found this somewhere on the web as I was searching for sodium-free alternatives for my DD. She loves stove top mix type meals, but they were absolutely off limits for her salt-free needs. This is a great substitute, easy to make and can be used to make a variety of different stove top meals. One recipe for an Italian skillet dinner is included below; I will add more as I try them. This makes enough for several dinners. Mix it up and store in a plastic container.

Provided by Messy44

Categories     One Dish Meal

Time 5m

Yield 1 container - for several meals

Number Of Ingredients 9

2 cups nonfat dry milk powder
1 cup cornstarch
1 tablespoon sodium free chicken soup base or 1 tablespoon beef base
2 tablespoons onion flakes or 1 tablespoon granulated onion
1 teaspoon basil
1 teaspoon thyme
1 teaspoon black pepper
2 tablespoons parsley flakes
1 tablespoon garlic powder

Steps:

  • Mix ingredients together and store in an air tight container.
  • Use mix as a base for the following dinner: serves 4-6 people.
  • Italian Shells Skillet Dinner. Ingredients: 1 pound ground beef - 1 cup Homemade Hamburger Helper Mix - 1/2 tsp red pepper flakes, or more to taste - 1 onion, chopped - 3 medium tomatoes, chopped - (optional - 1 green pepper, chopped) - 3 cups water, or more if needed - 16 ounces tomato sauce, sodium free - 3 cups small shell noodles, uncooked - 1/2 cup parmesan cheese - 1 cup shredded low sodium mozzeralla cheese
  • Brown beef in skillet and crumble. Drain off fat and add helper mix, onion, 3 cups water, tomato sauce, noodles and red pepper flakes. Bring to boil, reduce heat and simmer 20 minutes, stirring until thickened and noodles are done (may need a few extra minutes, add more water if sauce gets too thick). Remove from heat and stir in parmesan. Top with mozzerlla cheese and allow to sit until cheese is melted.

HOMEMADE HAMBURGER "HELPER"

My kids LOVE hamburger helpers, but being that they are often FULL of sodium etc. I went to work in the kitchen. This recipe is easily adapted by changing a few ingredients. Ground beef -chicken or turkey Cream of mushroom soup to cream of chicken or nacho cheese soup and different pasta change this dish into many alternatives. ex: I replace the ground beef, noodles and cream of mushroom for chicken breast cubed, nacho cheese soup and use cut up tortillas for a Mexican version.
