1 pound lean ground beef
1 large yellow onion, chopped
1 garlic clove, minced
2 tablespoons all purpose flour
2 cups low sodium beef broth
1 8oz can tomato sauce
1 teaspoon Italian seasoning
1 teaspoon seasoned salt
1/2 teaspoon smoked paprika
1/2 teaspoon garlic powder
2 cups pasta shells (can also use elbow pasta)
½ cup heavy cream
2 cups shredded cheddar cheese
salt and pepper, to taste

Steps:

  • In a large sauté pan with a lid, brown the ground beef over medium high heat. Remove cooked ground beef from pan and set aside, reserving 2 tablespoons of grease in the pan.
  • Cook the onion until soft, about 5 minutes. Add the garlic for the last 30 seconds.
  • Add the flour and stir to cook for about 1 minute, slowly stir in the beef broth and bring the mixture to a boil.
  • Pour in the tomato sauce, Italian seasoning, seasoned salt, smoked paprika, garlic powder and pasta, stirring to combine. Cover with lid and sauté for 12 to 15 minutes or until pasta is cooked, stirring occasionally.
  • Add in the cream and cheese and stir until all the cheese melted. Add back in ground beef, cook for 2 to 3 minutes more to re-heat ground beef and serve immediately!

4 slices bacon, chopped
1 yellow onion, chopped
3 garlic cloves
3 c. beef broth
1 15-ounce can tomato sauce
3/4 c. heavy cream
1 tbsp. paprika
1 tbsp. hot sauce
2 tsp. salt
1 tsp. ground black pepper
12 oz. large elbow macaroni
8 oz. shredded mild cheddar cheese
1/4 lb. yellow American cheese slices, torn into small pieces
Chopped parsley or green onion, for garnish

Steps:

  • In a large Dutch oven, cook the ground beef, bacon and onion over medium heat, stirring, until the ground beef is cooked through, the bacon is rendered and the onion is softened, 12 to 15 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute.
  • Add the beef broth, tomato sauce, heavy cream, paprika, hot sauce, salt and pepper to the beef mixture. Bring the mixture to a simmer over medium. Add the pasta and reduce the heat to medium-low. Cook, stirring occasionally, until the pasta is al dente, about 8 minutes.
  • Reduce the heat to low and gradually stir in the cheeses until fully melted and creamy. Garnish with green onion or parsley, if desired.

The entire dish - even the pasta - is made in one pot, and melds the indelible comfort of macaroni and cheese with the complexity of a good Bolognese. This definitely has a kick, so adjust the hot sauce according to taste.

1/4 cup neutral oil, such as canola or vegetable
1 large yellow onion, diced into 1/2-inch pieces
Kosher salt and black pepper
3 garlic cloves, minced
5 strips uncooked smoked bacon, finely chopped
1 pound ground beef
1 cup dry white wine
3 cups chicken stock or water
3/4 cup heavy cream
1/4 to 1/3 cup hot sauce
2 teaspoons hot smoked paprika
1 bay leaf
8 ounces elbow pasta
5 slices American cheese, ripped into small pieces
1 1/2 cups grated Cheddar
1/2 cup finely chopped chives

Steps:

  • Heat a large (12-inch) sauté pan or Dutch oven over medium-low heat, and add oil and onion; season lightly with salt and pepper. (The hot sauce added in Step 6 will add a lot of flavor, so be careful not to overseason here.) Let cook until the onions turn light beige in color and begin to caramelize, 20 to 25 minutes.
  • Add garlic, and cook until fragrant and starting to brown ever so slightly, about 2 minutes.
  • Increase heat to medium-high and add bacon and ground beef, using the back of a large spoon to break up the meat into smaller pieces. Continue to cook until the liquid has mostly evaporated and the meat starts to sear and develop a crust on the bottom of the pan, 12 to 15 minutes.
  • Remove pan from the heat and carefully drain off most of the fat, leaving a little in the pan to keep the meat moist.
  • Return pan to the medium-high heat and add white wine, allowing it to reduce until the mixture is almost dry, about 10 minutes.
  • Add the chicken stock, heavy cream, hot sauce, paprika and bay leaf to the pan. Mix until combined and bring to a boil over medium-high.
  • Once the mixture is boiling, add the pasta and cook until al dente, stirring often, about 9 minutes.
  • Reduce the heat to low and stir in both types of cheese, stirring until completely melted and sauce is thickened.
  • Remove the pan from heat, stir in chives and season to taste with salt and pepper. Serve immediately.
