½ cup rice vinegar (unseasonsed)
3/4 cup water
4 oz white sugar ((1/2 cup + 2 tbsp))
5 garlic cloves (chopped finely)
1 tbsp soy sauce (gluten free soy sauce or salt if you'd like to keep the recipe gluten free or soy free, OR 1/2 tbsp fish sauce)
1/2 tsp cayenne pepper (optional - halve it or leave it out if you like it less spicy)
2.8 oz sambal oelek (a generous 2 1/2 tbsp (please see recipe notes))
4 tsp cornflour / cornstarch ((see recipe notes))
2 tbsp water

Steps:

  • Add the vinegar, water, sugar, garlic cloves, soy sauce, and cayenne pepper (if using) in to a non-stick pan. If you're using dried chili instead of sambal oelek, add it to the pan at the same time.
  • Heat over medium heat while stirring, to dissolve the sugar. Increase the heat to medium-high and bring it to a boil. Let it simmer for about 2 minutes.
  • Add the sambal oelek and mix through. Let it cook for a few minutes until it's slightly thickened (2- 5 minutes)
  • Mix the cornstarch and water into a smooth slurry and add this to the sauce as well.
  • While stirring frequently (to prevent the sauce from burning at the bottom), simmer the sauce for a further 2 - 5 minutes or until it reaches a desired thickness. Remember, the sauce thickens as it cools as well. If it thickens too much, add a little extra water to thin it out. If you're using Clear Jel, the sauce will thicken mostly only as it cools down.
  • Pour into glass jars with air-tight lids (OR heated and sterilized jars to store for longer).
  • Cool to room temperature and store in the fridge.

This recipe for sweet and spicy chili is the result of much experimenting. I knew I had perfected it when my husband took a pot to work, where one guy ate five bowls himself!

3/4 pound beef sirloin tip steak, cubed
2 tablespoons canola oil
1 pound ground beef
2 medium onions, chopped
3 garlic cloves, minced
4 cans (16 ounces each) kidney beans, rinsed and drained
3 cans (14-1/2 ounces each) diced tomatoes with mild green chilies, undrained
2 cans (6 ounces each) tomato paste
1 can (12 ounces) root beer
1 cup strong brewed coffee
1 cup beef broth
2 jalapeno peppers, seeded and chopped
1/4 cup packed brown sugar
3 tablespoons chili powder
1 tablespoon ground cumin
1 tablespoon baking cocoa
1 teaspoon garlic salt
1 teaspoon cayenne pepper
1 teaspoon Creole seasoning
1 teaspoon dried oregano

Steps:

  • In a Dutch oven, brown steak in oil. Remove and set aside. Add the ground beef, onions and garlic to the pan; cook and stir over medium heat until meat is no longer pink. Drain., Return steak to the pan; stir in the remaining ingredients. Bring to a boil. Reduce heat to low. Simmer, uncovered, for 2 hours or until beef is tender.

yummy homemade sweet chili sauce. good for dipping, or stir fry's, etc. For less heat, use 1 tsp chili peppers. For variation, try blending half the chili flakes. For a little sweeter flavour, add 1/2 instead of 1/3 cup sugar.

2 teaspoons red chili pepper flakes

If you know me, you understand that I like to make my own condiments, sauces, and spice mixes. In doing so, I get exactly what I want, without all the added chemicals. I worked on this last night and into the wee hours of the morning. If I could give you an idea of what it tastes like, I would say that it is a cross between a Thai chili sauce, and Heinz chili sauce. So, you ready... Let's get into the kitchen.

1 cup(s) water, filtered variety

3 clove(s) baked garlic, minced

  • Storage Of Homemade Condiments, Spices, and Sauces Because homemade spices and condiments do not contain any preservatives, it is important to store them properly. Non-reactive (glass) containers with tight-fitting lids are a must. If I am making a dry spice, I love to use old spice bottles that I have run through the dishwasher. If I am doing homemade sauces, I love using Weck jars. They are all glass, come in all sizes and shapes, and have excellent leakproof lids. If you shop online, you can go to Amazon, and type in "Weck Jars" and you will find a ton of them. Dry spices should be kept in a cool space, away from sunlight (spice cabinet), and sauces, in most cases, should be stored in the fridge. If properly stored, this chili sauce should last 4 - 6 weeks in the fridge.
  • Baked Garlic I love what baking does to garlic... it mellows the flavor and creates an awesome ingredient that enhances so many diverse dishes. I use it so much in catering that I usually bake 15 or more bulbs of garlic at a time, and then save them for when needed.   • Homemade Ketchup Okay, this may seem like a lot of time to spend on making ketchup; however, the time spent is well worth the flavor you get on the other side.   • Gather your ingredients (mise en place).
  • THE SAUCE
  • Add the vinegar and water to a saucepan over medium heat and bring up to a simmer. Add the remainder of the ingredients and continue to simmer for about 10 minutes.
  • OPTIONAL THICKENER (SLURRY)
  • If you want the sauce a bit thicker, mix the arrowroot, or cornstarch together with the water, add to the sauce, then allow to simmer an additional 5 minutes, as the sauce thickens.
  • Allow to cool, then store in a non-reactive container in the fridge.
  • PLATE/PRESENT
  • Use in any recipe that requires a sweet/spicy chili sauce, or just place it at the table to use as a condiment. Enjoy.
