12 large eggs
1-1/2 cups sugar
1/2 teaspoon salt
8 cups whole milk, divided
2 tablespoons vanilla extract
1 teaspoon ground nutmeg
2 cups heavy whipping cream
Additional nutmeg, optional

Steps:

  • In a heavy saucepan, whisk together eggs, sugar and salt. Gradually add 4 cups milk; cook and stir over low heat until a thermometer reads 160°-170°, 30-35 minutes. Do not allow to boil. Immediately transfer to a large bowl., Stir in vanilla, nutmeg and remaining milk. Place bowl in an ice-water bath, stirring until milk mixture is cool. (If mixture separates, process in a blender until smooth.) Refrigerate, covered, until cold, at least 3 hours. , To serve, beat cream until soft peaks form. Whisk gently into cooled milk mixture. If desired, sprinkle with additional nutmeg before serving.

12 large egg yolks
1 cup white sugar
4 cups whole milk
2 cups heavy whipping cream
1 teaspoon ground nutmeg
½ teaspoon vanilla extract
7 tablespoons whipped cream, or to taste
7 pinches ground cinnamon

Steps:

  • Cream egg yolks and sugar in a large bowl with an electric mixer until light and fluffy. Set aside.
  • Combine milk, whipping cream, and nutmeg in a large saucepan. Cook over medium heat until mixture just begins to simmer with 1 to 2 bubbles every 2 to 3 seconds, about 3 minutes. Remove from the heat.
  • Add a very small amount of the hot milk mixture into the egg yolk mixture while constantly whisking the eggs. Continue adding small amounts of the milk mixture, whisking until all has been added; transfer eggnog back into the saucepan. Continue to cook over medium heat, whisking constantly, until liquid reaches 160 degrees F (70 degrees C). Pour eggnog into a large pitcher, cover, and refrigerate 6 hours to overnight.
  • Blend cooled eggnog with an immersion blender until no lumps remain, about 1 minute. Ladle into 7 cups and top each with a dollop of whipped cream and a sprinkle of cinnamon.

8 ounces white chocolate, chopped
2 cups half-and-half
1 1/2 cups heavy cream
1 vanilla bean, split; seeds scraped, seeds and pod reserved
Finely grated zest from 1 orange
3 cinnamon sticks (must be fresh and fragrant)
5 whole star anise
8 whole allspice berries
2 teaspoons ground (or freshly grated) nutmeg, plus more for garnish
8 whole black peppercorns
5 to 6 whole cardamom pods, cracked
1/4 teaspoon kosher salt
5 large eggs, at room temperature
1 cup granulated sugar
1/4 cup bourbon (Knob Creek or Maker's Mark)
1/4 cup dark rum (Zacapa)
Whipped cream, for garnish
Homemade marshmallows, for garnish

Steps:

  • Melt the white chocolate in a heatproof bowl over simmering water, stirring until melted. Set aside and keep warm. In a heavy-bottomed saucepan, heat the half-and-half, cream, vanilla seeds and pod, orange zest, spices, and salt over low heat until it comes to a boil. Stir occasionally to prevent scorching. Remove from the heat, cover, and steep for 20 minutes. In the bowl of a stand mixer fitted with the whip attachment, whip the eggs and sugar on high speed until thick and ribbony, 3 to 4 minutes. Strain the spices from the cream, return the cream to the pan, and reheat to a simmer. Lower the speed of the mixer to low. Slowly ladle some of the hot cream into the eggs, warming them up. Add them back to the pot of cream. Attach an instant-read thermometer to the pot and cook the cream over low heat, stirring with a rubber spatula, until the cream reaches 170 degrees F. Remove the saucepan from the heat; pour the mixture through a fine mesh strainer. This will remove any pieces of cooked egg and keep the eggnog smooth. Whisk the hot strained eggnog into the bowl of white chocolate. Stir in the bourbon and rum. Pour into 4-ounce cups. Garnish with whipped cream, grated nutmeg, and homemade marshmallows. Best if consumed while hot, creamy, and delicious.

2 large eggs
3 large eggs, only use the yolk, reserve whites for eggnog cookie dippers
1 cup sugar
1 pinch kosher salt
1 cup heavy cream
1 cup dark rum, or spiced rum (optional)
nutmeg, freshly grated for garnish

Steps:

  • Heat 3 cups (720 ml) of milk in a medium saucepan over medium-low heat until it is steaming, 5-6 minutes (do not allow it to come to a boil.)
  • While the milk is warming, whisk together the eggs, egg yolks, sugar, and a pinch of salt in a medium bowl until pale yellow in color, 1-2 minutes.
  • Once the milk has begun to steam, slowly pour half into the egg mixture while continuously whisking so the eggs don't scramble. Once combined, slowly pour the egg and milk mixture back into the saucepan. 4. Keep warm over medium-low heat, stirring continuously for 15-20 minutes, until the mixture has thickened enough to coat the back of a spoon.
  • Prepare an ice bath in a large bowl. Place a medium bowl in the ice bath and set a fine-mesh sieve on top. Pour the egg mixture through the sieve to remove any unwanted egg bits.
  • Remove the sieve and add the remaining cup of milk and heavy cream, and stir to combine. Let cool for 20 minutes, stirring every 5. Add the rum, if desired, then cover and refrigerate for at least 2 hours. The eggnog will keep in the fridge for up to 3 days.
  • Serve with freshly grated nutmeg on top.

Large pinch of coarse salt
1 cup heavy cream
2 ounces bourbon, such as Michter's or Maker's Mark
2 ounces dark rum, such as Appleton Estate
1 ounce cognac
Unsweetened freshly whipped cream, for serving
Freshly grated nutmeg, for serving

Steps:

  • In a medium heatproof bowl, whisk egg yolks and 1/2 cup sugar until pale yellow and thick, about 2 minutes. In a medium saucepan, bring milk and salt to a bare simmer. Whisking constantly, slowly pour hot milk mixture into yolk mixture.
  • Pour yolk mixture back into saucepan. Cook over medium heat, stirring constantly with a wooden spoon, until mixture is just thick enough to coat back of spoon and hold a line drawn by your finger, 3 to 5 minutes.
  • Pour mixture through a fine-mesh sieve into a large bowl; discard solids. Let cool, stirring occasionally, about 20 minutes. Add cream, bourbon, rum, and cognac; cover and refrigerate overnight.
  • Whisk remaining 1/4 cup sugar and egg whites in a heatproof mixer bowl set over (not in) a pan of simmering water. Whisk until sugar is dissolved and mixture is warm (it should feel smooth between your fingers), 2 to 3 minutes. (For fully cooked eggs, a thermometer inserted into meringue should register 160 degrees.) Remove from heat. With a mixer on high speed, beat until stiff peaks form, about 5 minutes. Fold into eggnog.
  • Pour into glasses (or a punch bowl); top with a dollop of whipped cream and sprinkle with nutmeg.

Steps:

  • Place egg yolks in a saucepan. Whisk in sugar until well blended and creamy. Add milk and cream; whisk until blended. Place pan over medium heat; whisk frequently until mixture reaches a temperature of between 170 to 180 degrees F (75 to 80 degrees C) using an instant-read thermometer. Remove from heat. Stir in nutmeg and whiskey.

1 cup organic heavy cream or half-and-half
2 cups almond or soy milk
1 teaspoon rum or vanilla extract (for non-alcohol version) or 1 tablespoon brandy or rum.

Steps:

  • OLD-FASHIONED METHOD: Avoid contact between the yolks or whites and the shell. It's the shell, not the inside of the egg, that may contain salmonella or other bacteria. If using farm eggs, wash them well before cracking them open. For recipes that call for eggs that are raw or undercooked when the dish is served, use eggs that have been treated to destroy salmonella, by pasteurization or another approved method. Beat egg yolks until very thick and lemon-colored. Add 1/2 cup of the cane juice or agave and continue beating until sweetener starts to dissolve and mix in well. Add milk, flavoring and cream or half and half. Beat egg whites in separate bowl until stiff. Gradually beat in remaining cane juice or agave while beating. Fold into other ingredients. Chill well and serve with a sprinkle of nutmeg on top. PASTEURIZED METHOD: Heat the milk and the cane juice or agave in a medium saucepan on medium heat until scalded, just until bubbles start to form around the edge of the pan but not boiling. In a separate bowl, beat the eggs until foamy and light colored. Add half of the egg mix to the milk, mix well, then pour this mixture into the remaining eggs. This mixing procedure, called tempering, stops the eggs from actually being cooked, which you do not want. Continue to simmer on low heat for 10 minutes but make sure it does not boil. Remove from heat, add the cream or half and half and your choice of rum or vanilla flavoring. Sprinkle with nutmeg and chill in refrigerator. Will keep in the refrigerator for up to one week. DIETARY PREFERENCES NOTE: If you substitute the half-and-half for the heavy cream, you will cut the fat calories for this drink almost in half. If you use almond milk or soy rather than cow's milk, you can cut the fat down to about 1/4 of what most eggnogs are and never sacrifice anything in flavor.

1 vanilla bean, scraped for vanilla seeds (or 2 tsp vanilla bean paste)

12 candy canes, blended into a fine powder
whipped cream, for garnish

Steps:

  • In a mixing bowl, combine the yolks and brown sugar. Whisk well for 5-6 minutes until the mixture has increased in volume and thickened, and a figure "8" can be drawn when lifting up your whisk.
  • In a saucepot, add the milk and vanilla then bring up to a barely a simmer. Then, start to slowly add the warmed milk to the yolk and sugar bowl, whisking constantly to avoid scrambling. Continue to temper the mixture until the warm milk and egg mixture has combined, then return everything back to the pot. Then add the nutmeg.
  • Cook the mixture on low heat, stirring constantly with a wooden spoon (making sure that no bits begin to stick or scramble to the bottom). Continue to cook slowly and gently until the mixture slightly thickens and coats the back of your spoon. Strain into a bowl (to capture any bits that may have scrambled in the process) then stir in ¼ cup of the ground candy cane. Transfer to a resealable plastic container, then place in the fridge to chill completely.
  • When ready to serve, wet a paper towel then swipe the rims of each glass. Dip the glass into some more of the candy cane powder to create a festive rim. Fill each glass with some eggnog, then top with fresh whipped cream and some extra grated nutmeg.

2/3 c milk

Steps:

  • 1. In a small bowl - soften gelatin in cold water; set aside
  • 2. In a sauce pan - combine sugar and cornstarch
  • 3. Gradually stir in milk until smooth
  • 4. Bring to a boil
  • 5. Cook and stir for 2 minutes or until thickened
  • 6. Remove from heat
  • 7. Stir a small amount of hot mixture into egg yolks
  • 8. Return all to the pan
  • 9. Bring to a gentle boil; stirring constantly
  • 10. Remove from the heat
  • 11. Stir in gelatin and vanilla
  • 12. Cool to room temperature; stirring occasionally
  • 13. Fold in whip cream
  • 14. Pour into pie shell
  • 15. Sprinkle with nutmeg
  • 16. Refrigerate until set; about 2 hours or overnight

Friends and relatives say this is the best eggnog they have ever tasted. It takes a bit of preparation, but the results are definitely worth the prep time.

4 cups low-fat half-and-half
4 cups 2% milk
1 cup white sugar
1 cup stevia sweetener (such as Stevia Sugar in the Raw®)
⅔ cup all-purpose flour
2 vanilla beans, split lengthwise
12 large egg yolks
8 fluid ounces dark rum
4 fluid ounces brandy
2 fluid ounces bourbon
1 pint vanilla ice cream
1 cup heavy cream
½ teaspoon ground cinnamon
1 teaspoon ground nutmeg
½ teaspoon ground mace
½ teaspoon ground cloves

Steps:

  • Pour half-and-half and milk into a large saucepan over medium heat. Cook, stirring intermittently, until heated through, 8 to 10 minutes.
  • Whisk sugar, stevia, and flour together in a bowl. Add slowly to the hot milk, stirring constantly. Add vanilla beans and continue so stir until mixture comes to a boil. Cook and stir for 2 minutes more. Remove from heat.
  • Whisk egg yolks in a bowl until smooth. Add about 1 cup of the hot milk mixture to the egg yolks gradually, whisking constantly.
  • Pour egg-milk mixture back into the main milk mixture in the saucepan. Cook and stir over medium heat until thickened to the consistency of heavy cream, about 4 minutes; do not allow the mixture to boil. An instant-read thermometer inserted into custard should read at least 180 degrees F (82 degrees C). Remove from heat, discard vanilla beans, and let cool completely, at least 30 minutes.
  • Mix rum, brandy, and bourbon into the custard. Pour into a container and cover with a lid or plastic wrap. Refrigerate custard until well chilled, at least 4 hours.
  • Pour 2 cups of the chilled custard into a blender; add ice cream and blend until smooth. Pour ice cream mixture back into the chilled custard and mix together thoroughly.
  • Beat heavy cream in a chilled bowl with an electric mixer just until stiff. Fold whipped cream into the chilled custard mixture, completing the eggnog. Keep refrigerated until ready to serve.
  • Mix cinnamon, nutmeg, mace, and cloves together and pour into a shaker. Serve individual portions of the eggnog with a dusting of topping.

3 cups heavy whipping cream, divided

Steps:

  • In a large heavy saucepan, combine the eggs, sugar, 1 cup milk and 1 cup cream. Cook and stir over medium heat for about 25 minutes or until a thermometer reads 160° or is thick enough to coat the back of a metal spoon., Pour into a large bowl; stir in nutmeg and the remaining milk and cream. Place bowl in an ice-water bath; stir frequently until mixture is cool. Cover and refrigerate for at least 3 hours before serving.

Steps:

  • In a large bowl, vigorously whisk the egg yolks, sugar and salt until light in color, and the sugar is almost dissolved. Carefully whisk in the milk. Set aside.
  • In a small bowl, beat the egg whites and cream of tartar until stiff peaks form.
  • Swiftly stir the egg whites and nutmeg into the milk mixture until just combined, popping as little bubbles as possible.

6 large eggs
1 c sugar
2 c whole milk
1 c heavy cream
1/2 to 1 1 c bourbon, rum, cognac, or a mix, optional
freshly grated nutmeg, to serve
EQUIPMENT: MIXING BOWLS, WHISK, PITCHER, STAND MIXER OR HAND MIXER, MICROPLANE OR NUTMEG GRATER

Steps:

  • 1. Separate the eggs: Separate the eggs, placing the yolks in one bowl and the whites in another (I recommend the 3-Bowl Method for this step). Cover the whites and refrigerate until needed (or freeze if aging the eggnog for longer than a day).
  • 2. Whisk the yolks with the sugar: Combine the yolks and the sugar in a medium mixing bowl. Whisk by hand, or with a mixer, until the mixture is smooth and creamy, and it has lightened to a lemon-yellow color
  • 3. Whisk in the milk, cream, and liquor (if using): Pour the milk, cream, and liquor into the bowl with the egg mixture and whisk until combined.
  • 4. Cover and refrigerate: Cover the bowl and chill in the refrigerator for at least an hour. The more liquor you add, the longer it will keep - non-alcoholic eggnog should be consumed within a day; eggnog with 1/2 to 1 cup of liquor will keep for several days; and eggnog with 1 1/2 cups of liquor will keep for several weeks and continue aging and thickening quite nicely. (If aging for longer than a few days, transfer the eggnog to a sealed glass container or a mason jar.)
  • 5. Whisk the egg whites: Just before serving, whisk the reserved egg whites in a stand mixer or with a hand mixer at high speed until the whites form stiff peaks.
  • 6. Fold the egg whites into the eggnog: Transfer the beaten egg whites to the bowl with the eggnog and gently fold or stir the whites into the base - this gives the eggnog a frothy, extra-creamy texture. Some of the egg whites will also float to the top, like cappuccino foam.
  • 7. Serve the eggnog: Transfer the eggnog to a pitcher or punch bowl. Serve in individual glasses with a grating of nutmeg over top.
