Her friends still remember these crisp, delicious potatoes brushed with basil, garlic and onion salt that Ruth Andrewson of Peck, Idaho used to make. Now they can pass on her recipe to their friends.

TASTY OVEN TATERS (ROASTED, SEASONED RED POTATOES)
I probably don't make these the same way twice, but it's a quick way to toss together a tasty side to your main dish. As always, since I don't measure anything, these are approximate quantities of the ingredients!

- 1. Preheat oven to 400. Place scrubbed, cut potatoes and onions into gallon zip bag. While you don't want to cut the potatoes too small, they do get done faster if they're not too big. My husband chokes easily from a medical condition, so I do mine in about 1 inch chunks. At any rate, keep the potato cuts as uniform as possible so they'll get done evenly.
- 2. Stir together remainder of ingredients except for butter and pour into bag with potatoes. Close bag securely and thoroughly work oil mixture into potatoes. If the mixture is too dry, add a little more olive oil or you could even use a couple of tablespoons water. Pour into large pan (I use a jelly roll pan and it gives ample room for roasting without overcrowding. Lining the pan with aluminum foil makes cleanup a little easier if you prefer. I've also divided the potatoes into two large cast-iron skillets and this also works well.
- 3. Roast for 35-45 minutes, depending on your oven and preference of doneness, giving the potatoes one or two stirs during roasting time. Once potatoes are tender, cut butter into pieces and stir into potatoes. Turn broiler on and broil for a few minutes until nice and brown. Note: if you'd like, sample one to see if this is seasoned enough to suit you; and if needed, add additional salt/pepper to taste. Careful...they're hotter than a two-dollar pistol! Variation: include 1/4 cup balsamic vinegar in the oil mixture, and finish with a light sprinkling of parmesan cheese before serving.

- Cut the petite potatoes in halves. Set aside.
- Preheat the stove to medium-low heat.
- Put a medium (or small) frying pan on top of the stove to heat it up.
- Combine the garlic salt, crushed rosemary, oregano leaves, parsley flakes, thyme, marjoram leaves, ground ginger, chili powder, dill weed, curry powder, black pepper, chives, seasoned salt and grated Parmesan cheese in a medium sized bowl; stir well.
- Crush the French's fried onions until slightly fine; add to the spice mixture.
- In the same medium bowl add the olive oil; stir it in well.
- Add the sliced potatoes to the spice and oil mixture; coat the potatoes well.
- Pour the mixture into the frying pan.
- Cook for 25 to 40 minutes.
- Move potatoes around every 5 to 10 minutes.

GREEK SEASONED BAKED POTATOES
My sister told me about this years and years ago. It's the only way I've made baked potatoes since then. The measurements are approximate because I really don't measure out the seasonings, I just sprinkle them on until it looks good! After baking, I like to top mine with butter, sour cream and shredded cheese. My DH is not a big fan of russet potatoes, so sometimes I use red or yellow potatoes.

- Preheat oven to 400 degrees.
- Scrub potato, then use a sharp knife to pierce the skin several times all over.
- Place the potato on a piece of foil and spray one side with PAM.
- Sprinkle half of the seasoned salt and half of the Greek seasoning on the potato.
- Flip the potato over and repeat steps with the rest of the seasonings.
- Wrap potato securely in the foil and place in the hot oven. They tend to leak so you might want to place them on a piece of foil to help with clean up.
- Bake for approximately 1 hour. Time will vary based on the size of the potato. I check mine by using a pot holder to gently squeeze the potato. It should feel soft and slightly mushy.
- Note: Sometimes my husband also likes for me to substitute the Greek seasoning for Tony Chachere's Cajun seasoning on his.
