This is a very good veggie dish I learned years ago at a school camp-out. It's easy to make and can also be made in the oven the same way.

4 pounds baking potatoes
2 pounds carrots
1 onion
seasoning salt to taste
½ cup butter
1 ¼ cups sour cream

Steps:

  • Peel and cut up the potatoes and carrots into bite-size chunks. Chop up onion.
  • Combine all veggies in tin foil or foil baking bag. Season with desired amount of seasoning salt and top with butter. Seal foil well (you may need more than one bag, so the vegetables are done evenly).
  • Grill for approximately 40 minutes or until potatoes and carrots are soft (flip bags at least 3-4 times during grilling). Remove form grill and place the veggies in a large bowl and add the sour cream, mixing well.

COOKING VEGETABLES IN A FOIL PACKET DATES BACK TO THE EARLY DAYS OF GRILLING, BUT I JUST FOUND THIS RECIPE LAST SUMMER. THIS IS A 1995 BETTER HOMES AND GARDENS RECIPE THAT MY FAMILY REALLY ENJOYS.

3 slice BACON, (coarsely chopped)
4 c Potatoes (Cut 1/4" thick sliced,cut into circles not strips)
1/2 c Green Sweet Pepper (chopped)
1/2 c Onion (chopped)
1 c Cheddar Cheese (shredded)
1/4 tsp Season Salt (I use Tony's Creole,it is a little on the spicy side and that's what we like)
1/4 tsp Ground Black Pepper
Non-stick cooking spray (PAM)

Steps:

  • 1. Fold a 36 x 18-inch piece of heavy foil in half to make a 18-inch square. Lightly coat one side of the square with nonstick cooking spray. On coated surface, arrange half of the bacon in the center of the foil. Top with half of the potatoes, half of the sweet pepper, half of the onion , and half of the cheese. Top with remaining potatoes, remaining sweet pepper and remaining onion. Sprinkle with seasoned salt and black pepper. Top with remaining cheese and remaining bacon.
  • 2. Lightly coat one side of another 18-inch square piece of double thickness heavy foil with the non-stick cooking spray; place it, coated side down , on top of potato stack. Seal all edges with a double fold, leaving space for steam to build. Grill vegetable packet on the grill rack of an uncovered grill directly over medium coals for 20 to 25 minutes or until potatoes are tender, turning the packet once.

Breakfast Hobo Packs with Hash Brown Potatoes, Sausage, and Scallions image

These make-ahead packs are perfect for camping trips as well as quick and easy breakfasts on the go. Shredded potatoes and flavorful sausage are topped with baked eggs and spinach for a hearty morning meal.

3 scallions, trimmed, sliced
1 (16-ounce) package frozen shredded hash brown potatoes, defrosted
12 ounces cooked breakfast sausages (about 16 sausage links), cut into 3/4" pieces
1/4 cup olive oil
1 teaspoon kosher salt, plus more to taste
1/2 teaspoon freshly ground black pepper, plus more to taste
3 (packed) cups baby spinach
6 large eggs
1/2 cup shredded cheddar (optional)

Steps:

  • Cut 12 (12x16") pieces of heavy-duty foil. Layer 2 pieces of foil on top of each other to create 6 stacks. Line top pieces of foil with parchment paper cut to the same size.
  • Toss scallions, potatoes, sausage, oil, salt, and pepper in a large bowl. Divide mixture among prepared packs, arranging in the center of each piece of parchment. Bring edges of foil together to enclose each pack, covering completely, then crimp to seal packs closed.
  • Prepare a campfire or grill for medium, indirect heat, preferably with hardwood or hardwood charcoal. Let coals burn until covered with ash and glowing red with no black remaining.
  • Place packs side by side directly onto hot coals or grill and cook, rotating with tongs occasionally, about 5 minutes. Carefully remove 1 pack from heat and check if ingredients are steaming hot. If necessary, return pack to coals and continue to cook, 5-10 minutes more.
  • Transfer packs with tongs to a flat surface and carefully open them (they will be full of hot steam). Top each pack with spinach, then crack 1 egg into the center of each and season with salt and pepper. Reseal, return to coals, and cook until egg whites are opaque but yolks are still runny, 4-5 minutes.
  • Carefully remove packs from coals, open, and sprinkle with cheddar, if using. Serve immediately.
  • Do Ahead
  • Packs can be assembled and chilled for up to 2 days or frozen for up to 1 month.
  • Cooks' Note
  • Packs can be prepared in an oven. Preheat to 450°F and place packs on rimmed baking sheets. Bake until steaming hot, about 15 minutes if packs were refrigerated and about 30 minutes if baking frozen packs (no need to defrost). Carefully open packs (they will be full of hot steam), top each pack with spinach, crack 1 egg into the center of each, season with salt and pepper, and reseal. Return to oven and cook until egg whites are opaque but yolks are still runny, 4-5 minutes more. Top with cheddar, if using. Serve immediately.

4 medium potatoes
1 sweet onion
4 ounces butter

Steps:

  • Grills vary widely, so you may need to experiment with the heat setting. For my propane grill, I use medium-high heat, or even high heat, high enough to sear/brown the meat dish when I throw them on the grill.).
  • Wash potatoes and cut into slices 1/4 inch or so with skin intact.
  • Slice onion into thin slices, then separate into rings.
  • On heavy duty aluminum foil, about 18" to 24" long, put in the center a layer of potatoes (leaving plenty of foil on each side and each end to fold and seal the packet).
  • Follow with a layer of onion rings.
  • Sprinkle with salt, pepper, and a hint of garlic (powder, or freshly minced).
  • Repeat layers, dotting each second layer with butter.
  • Wrap the foil securely around the layers. Should make a packet about 15"-18" long and 10" wide.
  • Put the foil package on the grill about 45 minutes to an hour before the intended serving time. (These can also be prepared as described, but placing the packet in a stainless steel skillet on the stove top. Or in the oven. Be creative!).
  • It's okay if the bottom layer "caramelizes;" some will love those bottom pieces!

Its grilling time again and love to have most of my food prepared outside on the grill. I just love the flavor of food cooked over charcoal. This is my favorite way to make a side dish of my new red potatoes, while grilling out. You may serve these with your favorite bbq meal. Tonight I was in the mood for an old fashioned...

pound or half pound of bacon
olive oil, extra virgin
1 large sweet vidalia onion
3 cloves of fresh grated garlic
5 large new red potatoes with the skin on
salt and pepper to taste
red pepper , optional

Steps:

  • 1. Prepare the charcoal grill and place a cast iron skillet on the grill. I used #8 for this recipe today. The larger the portion made, step up to larger number skillet. I like to use my fathers old cast iron grill to cook on. Be sure to have hot out door grilling mitt to handle the hot skillet.
  • 2. Place the bacon in the skillet and drizzle a little olive oil on the skillet to prevent the bacon from wanting to stick.
  • 3. When bacon is done take up and add the grated garlic, let cook a few seconds'
  • 4. Wash the potatoes well and remove any bad spots but do not need to peel. With a mandolin or if you can do this by hand, slice the potatoes in circles.
  • 5. Slice the onion up in slices loose.
  • 6. Now add the potatoes in the pan then the onion. Salt and pepper to taste. I like to add a little red pepper too. Let cook stirring them often and do not allow to burn. Add the bacon back whole when the potatoes a feeling tender. As potatoes are cooking stir and keep it up so not to burn and if need add a little more olive oil, depending on how much your bacon grease renders in pan.
  • 7. Continue to cook and while stirring begin to cut the potatoes with the side of your spoon in half along with cutting the bacon up too with side of spoon. Keep stirring till very tender and done. They should look like these when ready.
  • 8. Cooking time will very from charcoal cooker. It will depend on how heavy you put on the coals and how far the skillet is from the coals. My complete time on the bacon was 5 minutes and the rest took about 45 minutes to finish.

1 onion (or more)
2 -4 tablespoons butter

cheddar cheese, sliced

Steps:

  • After washing potatoes slice with skin on.
  • Lay potato slices into a good size piece of aluminum foil.
  • Slice onion and put on top of potatoes.
  • Salt and pepper to taste.
  • Slice up pats of butter on top of potatoes and onions.
  • Seal up aluminum foil around potatoes and onion to make a closed package.
  • Put on grill over indirect heat and cook for 1 hour.
  • Ten minutes before serving open packet and place sliced cheese on top of potatoes and onion.
  • Reseal and cook for approximately 10 minutes or until cheese is melted.
  • Open packet and enjoy!

HOBO PACK OF NEW POTATOES, RED ONION AND ORANGE

1 pound new potatoes (about 14 golf-ball size), trimmed, cut into quarters
2 medium navel oranges (about 3/4 pound), peeled and sectioned
4 pieces orange peel, 1 inch long and 1/2-inch wide
2 medium red onions (about 3/4 pound), peeled, ends trimmed, each cut into 6 pieces
2 tablespoons tightly packed fresh oregano leaves, washed and dried
1 teaspoon coarse salt
1/2 teaspoon freshly ground black pepper
2 tablespoons grainy mustard
1 tablespoon balsamic vinegar
2 cloves garlic, minced
3 tablespoons olive oil

Steps:

  • In a large bowl, mix potatoes, oranges, orange peel, red onions, oregano, salt and pepper. In a small bowl, whisk mustard, vinegar and garlic, then add olive oil in a thin stream, whisking until emulsified. Pour dressing over potato and orange mixture, and toss gently to combine.
  • Tear off 6 12-inch sheets of heavy-duty aluminum foil and stack in two piles (three sheets each). Pour half the potato mixture into center of each top sheet of foil. Shape ingredients on each sheet into a pile 6 inches by 6 inches, and pour any dressing left in the bowl over the piles. Wrap ingredients in each pile in the top sheet of aluminum foil, sealing it tightly, followed by the second and third sheets.
  • Prepare a fire in the grill. When flames have subsided and coals are glowing, carefully remove grill grate, and set hobo packs directly on coals. With tongs, gather a few hot coals around hobo packs. Replace grill grate, and let cook 25 minutes. Remove grill grate, and with kitchen mitt or spatula, remove hobo packs from grill. Cut a vent through top of each pack, and serve.

1/2 cup chopped green bell pepper
1/3 cup chopped onion
1 1/2 cups shredded cheddar cheese
1/8 teaspoon seasoned salt
1/8 teaspoon pepper
1 teaspoon butter or margarine, optional

Steps:

  • Spray one side of an 18 inch piece of heavy foil with non-stick spray coating.
  • On sprayed surface, arrange half of the bacon to within about 2 inches of edge.
  • Top with half of the potatoes, half of the green pepper, half of the onion, and half of the cheese.
  • Top with remaining potatoes, green pepper, and onion. Sprinkle with seasoned salt and pepper.
  • Top with remaining cheese and bacon. Dot with butter, if you like.
  • Spray another 18 inch piece of foil on one side. Place it, sprayed side down, atop potato stack.
  • Seal all edges with a double fold.
  • Place the packet on the grill rack directly over medium to medium hot coals.
  • Grill for about 40 minutes or until potatoes are tender, turning the packet once.
