1 pound uncooked large shrimp, unpeeled
2 green onions, coarsely chopped
1 shallot, chopped
2 tablespoons chopped fresh tarragon
1 cup mayonnaise
1 cup sour cream
1/2 teaspoon Worcestershire sauce
1/2 teaspoon hot pepper sauce

Steps:

  • Bring medium saucepan of lightly salted water to boil. Add shrimp and cook just until bright pink and opaque in center, about 3 minutes. Drain; rinse under cold water. Peel and devein shrimp; transfer to processor. Add green onions, shallot, and tarragon; using on/off turns, process until shrimp are finely chopped. Transfer shrimp mixture to medium bowl. Mix in mayonnaise and next 3 ingredients. Season to taste with salt and pepper. Cover and chill at least 2 hours. (Can be made 1 day ahead. Keep chilled.)

1 pound cooked peeled shrimp, chilled
3 green onions, coarsely chopped
1 small onion, coarsely chopped
1 tablespoon chopped fresh tarragon
1 ½ teaspoons dried parsley
1 teaspoon minced fresh rosemary
½ teaspoon chili powder
1 teaspoon lemon juice
1 tablespoon finely grated carrot
1 cup low-fat mayonnaise
1 cup low-fat sour cream
salt and pepper to taste

Steps:

  • Add shrimp, green onions, onion, tarragon, parsley, rosemary, chili powder, and lemon juice to the jar of a blender or food processor; process the mixture until shrimp are finely chopped.
  • Scrape the chopped shrimp mixture into a bowl and stir in the carrot, mayonnaise, and sour cream, mixing until well blended. Season to taste with salt and pepper. Chill at least 1 hour before serving.
