If you can absolutely help it -- don't leave out the fenugreek. It might be tricky to find, but it has a sweet, maple-like taste and gives this spice blend its exoticness.

2 teaspoons paprika
1 teaspoon turmeric
1 teaspoon coarsely ground black pepper
1 teaspoon ground coriander
1 teaspoon ground fenugreek
1/2 teaspoon dry mustard
1/2 teaspoon ground cumin
1/2 teaspoon ground ginger
1/8-1/4 teaspoon cayenne powder (to taste)

Steps:

  • Combine well and store in an airtight container. Note: I use 1/8 teaspoon of cayenne because I have small children who freak out over spicy food. Use more if you'd like it spicier!

Thai spice blends often combine multiple exotic ingredients such as lemongrass, galangal, and kaffir lime leaves. We combined dried lemongrass (easy-to-find dried lemon peel works, too) with common spices such as ginger (a cousin of galangal) to achieve that distinct Thai flavor. Try adding it to a vegetable stir-fry and top with fresh cilantro; sprinkle it over a salad of chopped green papaya and bean sprouts; use it to season steamed vegetables and jasmine rice; or make a quick peanut sauce by mixing with peanut butter, tamari, vinegar, and water.

2 tablespoons garlic powder
2 tablespoons onion powder
1 tablespoon ground ginger
1 tablespoon paprika
1 tablespoon dried basil
2 teaspoons dried lemon zest
2 teaspoons dried lemongrass or lemon zest
½ teaspoon ground coriander
⅛ teaspoon cayenne pepper
⅛ teaspoon ground white or black pepper

Steps:

  • In a blender or spice grinder combine all ingredients. Blend to a fine powder. Transfer to an airtight container and store in a cool, dry place up to 6 months.

1/2 Tbsp dried cumin
1 Tbsp freshly ground white pepper
1 Tbsp freshly ground black pepper
2 Tbsp dried lemongrass
2 Tbsp dried lime zest
2 Tbsp garlic powder
2 Tbsp dried ginger
2 Tbsp dried mint
2 Tbsp toasted unsweetened coconut, ground

Steps:

  • 1. Combine all ingredients with a mortar and pestle or a food processor. Store in an airtight jar. (The little spice jars with rubber gasket seals keep herbs fresh longer than jars with screw-on tops.)

Spices:
Dried Mint- 4 TBsp
Dried Lemon Zest- 2 TBsp
Ground White Pepper- 4 Tsp
Ground Black Pepper- 2 Tsp
Dried Lemongrass- 2 Tsp
Ground Cumin- 1/4 Tsp
Cayenne Powder- 1/2 Tsp
Thai Roll-Up:
Ground Chicken or Crumbled (marinated in soy) Tofu- 1/2 lb
Garlic- 3 Cloves minced
Chicken Broth or Veggie Broth- 4-6 TBsp
Green Onion- 2 TBsp finely chopped
Fresh Cilantro- 1 TBsp finely chopped
Herbal Thai Seasoning Mix- 1 TBsp
Lime Juice- 1 TBsp
Nam Pla (fish sauce) or 2 parts Soy Sauce/1 part Lime or Hoisin- 1 TBsp
Lettuce Leaves, washed and dried- 12
Optional:
Shredded carrots
Shredded cabbage

Steps:

  • Spice Blend- Combine all and grind finely. Thai Roll-Up- Heat 2 Tbsp broth to a boil in saute pan. Add chicken (or other) and garlic, stir fry. Keep adding broth as needed till chicken is cooked. Remove from heat and mix in onions, herbs, lime and fish sauce (or other). Mix well, spoon onto lettuce leaves, wrap up sides, then roll up, and eat with fingers.
