6 frozen mozzarella sticks
4 tablespoons unsalted butter, at room temperature
4 slices hearty white bread or Italian bread
8 ounces fresh mozzarella, sliced into 12 slices

Steps:

  • Bake the mozzarella sticks according to the package instructions.
  • Meanwhile, start the grilled cheese. Heat a griddle or large skillet over medium-low heat. Butter 1 side of each slice of bread and arrange the slices buttered-side down on the griddle. Top each slice of bread with 3 slices of cheese and cover with a lid to help the cheese melt. Cook until the bottom of the bread is toasted and golden brown and the cheese is melted, 4 to 5 minutes.
  • Top 2 of the bread slices with 3 baked mozzarella sticks each. Top with the remaining bread slices to form 2 sandwiches. Slice and serve.

2 slices sourdough bread
4 slices jalapeño, to taste
1 ¼ cups shredded Cabot Pepper Jack Cheese, divided
2 tablespoons jalapeño, finely chopped
½ tablespoon habanero pepper, optional, finely chopped
1 tablespoon green onion, finely chopped
6 jalapeño-flavored potato chips, lightly crushed

Steps:

  • Heat a large nonstick skillet over medium heat. Hold a slice of bread over the skillet to measure the space for the cheese crust. Place 2-4 jalapeño slices in the skillet where the bread will go, then top with ¼ cup Cabot Pepper Jack Cheese roughly the shape and size of the slice of bread. Place the bread on top of the cheese and press down lightly so the melting cheese sticks to the bread.
  • Top the bread with ¾ cup Cabot Pepper Jack Cheese, the chopped jalapeño, habanero (if using), green onions, and potato chips. Cover with the other slice of bread. Cook for 2-3 minutes, or until the cheese on the bottom forms a browned crust.
  • Using a spatula, lift the sandwich out of the pan and layer the remaining jalapeño slices and Cabot Pepper Jack Cheese in the skillet. Place the sandwich on top of the cheese in the pan, cheese-crust side up, and press down lightly to adhere. Cook for 3-5 minutes, or until the cheese crust is well browned and the cheese in the middle of the sandwich is completely melted. Let the sandwich rest for 1 minute before slicing.

1 lb. lean ground beef
4 KRAFT Big Slice Hot Habanero Cheese Slices, quartered
4 fresh pineapple rings (1/4 inch thick)
1/4 cup KRAFT Real Mayo
1 tsp. Sriracha sauce (hot chili sauce)
4 Hawaiian sandwich buns, toasted
1 small avocado, cut into 8 slices

Steps:

  • Heat grill to medium-high heat.
  • Shape meat into 8 (1/4-inch-thick) patties. Top 4 patties with cheese; cover with remaining patties. Pinch edges together to seal.
  • Grill 6 to 7 min. on each side or until done (160ºF), adding pineapple to the grill for the last 4 min. and turning after 2 min. Meanwhile, mix mayo and Sriracha sauce until blended.
  • Place burgers on bottom halves of buns; top with pineapple, avocados and mayo mixture. Cover with tops of buns.
