This is the third recipe of my feta dips that I have posted and I can't rank it which one is my favorite. They are all very good and very healthy. So you decide! ;)

Number Of Ingredients 9

4 red bell peppers
1/4 cup extra virgin olive oil
3 garlic cloves, peeled
2 cups crumbled feta cheese
1 teaspoon smoked paprika
1/2 teaspoon chili pepper flakes
1 tablespoon lemon juice
1/4 cup parsley
olive (to garnish)

Steps:

  • Char peppers directly over gas flame or in broiler until blackened on all sides. Enclose in paper bag 10 minutes. Peel and seed peppers.
  • Puree all ingredients including peppers in processor. Season with salt and pepper. Chill at least 3 hours or overnight.

FETA PEPPER DIP

For the feta cheese lovers among us!!!! You can use the pickled peppers of your choice, pepperoncici or sweet red cherry. Cook time is actually chill time. Since this is a dip, serving size is an estimate.

8 ounces feta cheese, crumbled
8 ounces cream cheese
1/2 cup mayonnaise
1/2 cup pickled pepper, sliced
1/2 cup scallion, sliced
1/2 teaspoon lemon zest, minced
fresh black pepper

Steps:

  • Blend feta, cream cheese and mayonnaise in a food processor until smooth, scraping the sides of processor a couple of times to make sure it all gets blended.
  • Put blend in bowl and fold in peppers, scallions, lemon zest and black pepper.
  • Transfer to the serving bowl and chill for at least 1 hour.
  • Just before serving, you can drizzle with olive oil, if desired.
  • This is good served with BBQ potato chips, toasted bread triangles -- whatever you like best!

No mezi, or hors-d'oeuvre, platter is complete without a dip, and this simple one is intensely flavourful. Serve with pitas, flatbreads or crisp vegetables.

2 large sweet red peppers
1 cup feta cheese, Crumbled
2 teaspoons red wine vinegar
1 pinch granulated sugar
1 pinch cayenne

Steps:

  • Place peppers on greased grill over medium-high heat; close lid and cook, turning often, for 15 to 20 minutes or until charred.
  • Let cool; peel and seed.
  • In blender or food processor, puree together peppers, feta cheese, vinegar, sugar and cayenne.
  • (Dip can be refrigerated in airtight container for up to 5 days; let stand at room temperature for 30 minutes.).
