Steps:
- Cut yams in half and boil until tender but firm (about 20 minutes).
- When cool enough to handle, peel and slice into 1/4-inch thickness.
- Combine sugar, flour, salt, cinnamon, nutmeg, and grated orange peel.
- Place half of the sliced yams in a medium-sized casserole dish.
- Sprinkle with spiced sugar mixture.
- Dot lightly with half the amount of margarine.
- Add a second layer of yams, using the rest of the ingredients in the same order as above. Add orange juice.
- Bake uncovered in oven preheated to 350° F for 30 minutes or until cooked through.

HEALTHY CANDIED YAMS
I absolutely love candied yams...but don't want the oh so sweet from all the sugars. So here is my version of deliciousness without all the sugar!

Steps:
- 1. Peel the potatoes, making sure you get the white off. Slice them in 1/2 inch rounds.
- 2. Mix together your sugar and spices. Set aside.
- 3. Place your potato slices to form a single layer, sprinkle 1/2 of your SnS mix and vanilla over top, take 1/2 of your butter in lil pats over top and zest 1/2 of your orange over that. Repeat that. Then squeeze your orange juice over the whole thing, watching for seeds.
- 4. Bake covered for roughly an hour and a half,give them a stir, sit for 5 minutes and enjoy!
