3 yams (enough to yield 3 cups)
1/4 cup Splenda brown sugar blend, packed
2 teaspoons flour, sifted
1/4 teaspoon salt
1/2 teaspoon ground cinnamon (or more to taste)
1/2 teaspoon ground nutmeg
3/4 teaspoon orange peel
2 teaspoons soft tub margarine
1 cup orange juice

Steps:

  • Cut yams in half and boil until tender but firm (about 20 minutes).
  • When cool enough to handle, peel and slice into 1/4-inch thickness.
  • Combine sugar, flour, salt, cinnamon, nutmeg, and grated orange peel.
  • Place half of the sliced yams in a medium-sized casserole dish.
  • Sprinkle with spiced sugar mixture.
  • Dot lightly with half the amount of margarine.
  • Add a second layer of yams, using the rest of the ingredients in the same order as above. Add orange juice.
  • Bake uncovered in oven preheated to 350° F for 30 minutes or until cooked through.

I absolutely love candied yams...but don't want the oh so sweet from all the sugars. So here is my version of deliciousness without all the sugar!

Number Of Ingredients 7

8 medium yam or sweet potatoes
1 orange, use zest and juice
1 1/2 Tbsp nutmeg
1 1/2 Tbsp cinnamon
2 Tbsp pure vanilla extract
2 Tbsp brown sugar
2 Tbsp salted butter

Steps:

  • 1. Peel the potatoes, making sure you get the white off. Slice them in 1/2 inch rounds.
  • 2. Mix together your sugar and spices. Set aside.
  • 3. Place your potato slices to form a single layer, sprinkle 1/2 of your SnS mix and vanilla over top, take 1/2 of your butter in lil pats over top and zest 1/2 of your orange over that. Repeat that. Then squeeze your orange juice over the whole thing, watching for seeds.
  • 4. Bake covered for roughly an hour and a half,give them a stir, sit for 5 minutes and enjoy!
