Steps:
- To cook the broccoli florets, blanch in a pot of boiling water for 1 minute, then rinse under cold water and drain well; dry on paper towel.
- Using a knife finely chop and set 2 cups aside.
- Preheat oven to 400°F.
- Spray a nonstick cookie sheet with cooking spray.
- In a medium bowl, combine all of the ingredients and season with salt and pepper to taste.
- Spoon heaping tablespoons of mixture in your hands and roll into small ovals.
- Place on the cookie sheet and bake for 16-18 minutes, turning halfway through cooking until golden.

Steps:
- Fill a medium saucepan with water and bring to a boil. Aggressively season with salt. Blanch the broccoli in boiling water for about two minutes.
- Drain and finely chop the cooked broccoli.
- In a mixing bowl, add broccoli, scallions, garlic, cheddar, egg, and bread crumbs. Optional: Add hot sauce of choice. Mix well and chill in the refrigerator for 15-20 minutes.
- Preheat oven to 400°F (204°C).
- Spray a nonstick baking sheet with nonstick spray. Shape the mixture into tot shapes and spread them evenly on the sheet.
- Bake for 8-9 minutes. Flip and then bake for an additional 8-9 minutes on the other side until golden brown.

Steps:
- Preheat your oven to 400 degrees F. Line a rimmed baking sheet with high-heat-resistant parchment paper or nonstick foil and lightly spray it with olive oil cooking spray.
- Place the broccoli in a microwave-safe bowl. Cover with a microwave-safe plate and microwave for 5 minutes, stirring halfway through cooking, to thaw. Drain REALLY well.
- Meanwhile, in another large bowl, whisk together the eggs, salt, pepper, garlic powder, oregano, and cayenne.
- Add the cheddar and the almond flour, then add the thawed and drained broccoli. Use a large spoon to mix everything together. Mix thoroughly, making sure all broccoli pieces are coated.
- Use a heaping 1.5-tablespoon scoop to transfer mounds of the mixture into the baking sheet. You should get about 24 tots. Make sure they don't touch each other. Lightly spray the tots with olive oil.
- Bake the tots for 15 minutes on the first side and for 10 more minutes on the second side, until browned. Allow them to cool for a couple of minutes, then serve.
