1/2 pound ground beef
1/4 cup finely chopped onion
1 teaspoon salt
1/2 teaspoon garlic salt
1/2 cup diced green pepper
1 teaspoon dried oregano
1 teaspoon dried parsley flakes
1/2 cup dry bread crumbs
1/4 cup grated Parmesan cheese
1 large egg, lightly beaten
Pastry for double-crust deep-dish pie
4 cups sliced zucchini, divided
2 medium tomatoes, peeled and thinly sliced

Steps:

  • In a skillet, cook beef, onion, salt and garlic salt over medium heat until meat is no longer pink; drain. Add the green pepper, oregano, parsley, bread crumbs, cheese and egg; mix well. Set aside. , Place bottom pastry in pie plate; layer 2 cups of zucchini in crust. Cover with beef mixture. Top with tomato slices and remaining zucchini. Place top pastry over zucchini. Cut a few slits in top. , Bake at 350° for 1 hour or until crust is lightly browned.

Pastry for a double-crust pie (9 inches)
4 medium zucchini, cut into 1/4-inch slices (about 4-1/2 cups)
1/2 pound ground beef
1/2 cup finely chopped green pepper
1/2 cup dry bread crumbs
1/2 cup grated Parmesan cheese
1 tablespoon dried minced onion
1 teaspoon each salt, dried oregano and dried parsley flakes
1/2 teaspoon garlic salt
2 medium tomatoes, peeled and sliced

Steps:

  • Line a 9-in. pie plate with bottom pastry; trim even with edge of plate. Arrange half of the zucchini in pastry shell; set aside., In a large skillet, cook beef and green pepper over medium heat until meat is no longer pink; drain. Stir in the bread crumbs, Parmesan cheese, onion, salt, oregano, parsley and garlic salt. Spoon half over the zucchini; repeat layers. Arrange tomatoes over top., Roll out remaining pastry to fit top of pie; place over filling. Cut slits in top of pastry. Trim, flute and seal edges. Bake at 350° for 60-65 minutes or until golden brown. Let stand for 5 minutes before cutting.

I got this recipe from and very good friend of mine. My friend made this crustless and it is very good this way also. This recipe can be prepared ahead of time.

Number Of Ingredients 11

1/2 lb hamburger
4 medium zucchini
2 tomatoes, peeled and sliced or an 8 ounce can of whole tomatoes sliced
1/2 cup dried breadcrumbs
1/4 cup parmesan cheese
1/2 cup green pepper (chopped)
1 teaspoon fresh parsley, chopped
1 small onion, minced
1/2 teaspoon garlic salt
1 teaspoon oregano
pastry crust

Steps:

  • Brown hamburger with onion and dry seasoning.
  • Line a large, deep pie pan with pastry crust.
  • Slice2 zucchini and alternate with layers of meat mixture into the pie crust.
  • Top with tomato slices.
  • If the tomatoes are not juicy and ripe, add a bit of tomato juice.
  • You may use an 8 ounce can of whole tomatoes sliced.
  • Top with pastry, cut a small hole and dust with pepper.
  • Bake in a 350'F.
  • If you are going to make this recipe crustless, you can make in a square baking pan.
  • This recipe freezes superbly.

1 1/2 lb hamburger
1/2 c chopped onion
1/2 c green pepper
1/2 c italian bread crumbs
1/2 c parmesan cheese
1 tsp garlic salt
1 tsp thyme, dried
1 tsp oregano, dried
3-4 small zucchini
3-4 tomatoes, overripe or 1 can diced tomatoes
2 refrigerated pie crust
1 Tbsp milk
coarse grind black pepper for sprinkling

Steps:

  • 1. Brown hamburger and add onion and pepper. Cook until tender.
  • 2. Add garlic salt, thyme, oregano, bread crumbs and cheese.
  • 3. Place pie crust in pie plate and layer sliced zucchini, meat mixture, tomatoes and repeat another layer.
  • 4. Place top crust over the top and brush top of crust lightly with milk and sprinkle with coarse black pepper.
  • 5. Bake at 350 for 30-45 min or until crust is browned.
