TACO HAMBURGER HELPER

Steps:
- Saute ground beef, peppers, and onions in skillet until brown. Drain off fat and return to pan.
- Add in taco seasoning, water, and brown rice. Bring to a boil, then cover and simmer 5 minutes or until rice is tender.
- Top with salsa and shredded cheese, cover again and cook 2 minutes or until cheese is melted.
- Remove from heat and top with sour cream and crumbled chips.

HAMBURGER HELPER® BEEF TACO & CHEESE COPYCAT!
I just made this on a whim...why I have no idea but it was awesome and you can't tell a difference from the boxed stuff *yuck* It's soooo much cheaper to make it from scratch! I use Penzey's Taco seasoning but they advertise Old El Paso on the box so I assume that's what they use (could also use your own!). Also the noodles are an approximation since I kinda didn't pre-measure them I grabbed a couple of handfuls to fill up my skillet lol...same with the cheese, I had a half bag of "taco seasoned" shredded cheese left over and just threw it in there too. My husband didn't believe I made it from scratch! He was looking all over for the box haha

Steps:
- Brown ground beef and cook with diced onions. After the beef is cooked drain and rinse.
- Put back in the pan and add and mix well the seasoning, milk, water and cheese let it come to a slight boil.
- Add the egg noodles, let the pan simmer for about 10 minutes until egg noodles are cooked and sauce has thickened.
- Now Enjoy! I guarantee no one will be able to tell the difference :).

This is a great comfort food! It takes less than 30 minutes and everything is cooked in one pot!

- 1. In a large skillet over medium-high heat, add beef and break it down into small pieces; season with salt and pepper. When half way cooked, add onions and continue cooking until meat is no longer pink and onions are softened, about 2 ½ to 3 minutes. Add garlic and sauté for 1 minute.
- 2. Add ketchup, tomato paste, mustard, hot sauce, taco seasoning, and re-season with salt and freshly ground black pepper; stir well. Add macaroni and pour in broth; stir well. Bring to a boil then reduce to medium-low, cover and simmer for 15 minutes or until macaroni is cooked through.
- 3. Add sour cream and stir well. Add cheese and stir until melted. Sprinkle on some chopped parsley and serve immediately. Serves 4

- Set a large skillet, pan, pot, or Dutch oven over medium-high heat. Add the ground beef and cook until no longer pink, breaking apart and stirring as the meat cooks. Drain the grease from the pot and sprinkle the cooked meat with taco seasoning.
- Add the rice and beef broth and stir well to combine. Increase heat to high and bring to a boil, then stir and reduce to a simmer.
- Simmer, covered, for 15 to 20 minutes, stirring occasionally, until rice is tender and liquid is mostly absorbed. Stir in the grated cheese and serve immediately.
