ONION, HAM, AND CHEESE FRITTATA



Onion, Ham, and Cheese Frittata image

2 tablespoons unsalted butter
1 large onion, sliced
3/4 teaspoon kosher salt
Freshly ground black pepper
8 large eggs
1/4 cup milk
1 cup diced ham
1 tablespoon chopped fresh herbs, like parsley, thyme, or dill
1 cup grated Swiss or cheddar cheese

Steps:

  • Position a rack about 8 inches from the broiler and preheat.
  • Melt the butter in a medium non-stick skillet over medium heat. Add the onions and season with 1/2 teaspoon salt and some pepper. Cook, stirring occasionally, until the onions get very soft, about 15 minutes. Meanwhile, whisk the eggs and milk in a medium bowl with the remaining 1/4 teaspoon salt and some pepper until smooth. Transfer onions to a bowl to cool. Reserve the skillet.
  • Stir the onions, ham, herbs and cheese into the eggs.
  • Heat the non-stick skillet. Pour the frittata mixture into the pan and stir to make sure the fillings are evenly arranged. Cook, stirring gently a couple times in the first minutes of cooking. Then let the mixture cook undisturbed until the bottom sets, about 5 minutes. Transfer the skillet to the oven and broil until the eggs are just set and brown, about 5 minutes. Take care not to overcook or the eggs will be dry. Remove from the oven, cover, and set aside for 5 minutes.
  • Invert the frittata onto a large plate or platter. Cut into wedges and serve warm or at room temperature.

Steps:

  • In a 10-in. cast-iron or other ovenproof skillet, brown potatoes in 2 tablespoons butter over medium-high heat; remove and set aside., In the same skillet, saute the mushrooms, onion, red pepper and ham in remaining butter until vegetables are tender. Add garlic; cook 1 minute longer; drain. Remove and set aside. , In the same skillet, cook the potatoes, ham mixture and parsley in oil over medium-high heat. Leek, Potato and Ham Frittata with Parmigiano image

1 cup extra-virgin olive oil
2 leeks, white part only, cut into 1/4-inch dice
Kosher salt
3 Yukon gold potatoes, peeled, cut into 1/2-inch dice
Pinch crushed red pepper
1/2 pound ham steak, cut into 1/2-inch dice
8 large eggs
1/2 cup grated Parmigiano
2 cups mesclun mix or mixed greens
2 tablespoons red wine vinegar

Steps:

  • Preheat the oven to 350 degrees F.
  • Coat a 12-inch nonstick saute pan with 3/4 cup oil, add the leeks to the pan, season with salt and bring to a medium heat. Cook until the leeks are starting to soften and are very aromatic, 5 to 6 minutes. Toss in the potatoes, season with a little more salt and the crushed red pepper, about 3 minutes. Add the ham and the remaining 1/4 cup of oil. Cook, stirring occasionally to be sure the potatoes do not stick to the bottom of the pan, until the potatoes start to soften, 15 to 18 minutes.
  • Meanwhile, beat the eggs with about 2 tablespoons water to a smooth consistency in a bowl, then add a heavy pinch of salt and half the grated cheese and beat together until the eggs and cheese are a smooth, homogeneous mixture.
  • Using a colander or mesh strainer, carefully strain out the excess olive oil from the potato-leek mixture and reserve. Return the potato-leek mixture to the pan and stir in the eggs. Cook over medium heat, stirring occasionally, until the eggs start to cook around the outside edges of the pan. Transfer the pan to the oven and bake until the eggs are cooked through, about 18 minutes.
  • Remove the pan from the oven. Place a snug fitting lid or a baking sheet on the pan, then hold the handle of the lid, swing the pan and flip the frittata onto the pan lid. Commit to it! It's fun! Slide the frittata onto a plate. You can serve this hot or at room temperature.
  • Toss the mixed greens with the red wine vinegar, 2 tablespoons of the reserved potato-leek oil and a pinch of salt in a bowl. Serve with slices of the frittata.
  • You gotta break some eggs to make frittata!

You can make this using cold cooked finely diced potatoes in place of hash browns, I have made this using leftover potatoes with great success!   • melt butter in an 8 or 9 inch nonstick, ovenproof skillet over low heat. Add the leek and garlic and cook very slowly, stirring frequently, until soft and golden, about 10 minutes, then set skillet aside off the heat.
  • Meanwhile, fill a large bowl with water and ice cubes and set aside.
  • Bring a skillet of salted water to a boil over high heat. Add the asparagus spears and cook until blanched, about 2 minutes. Immediately drain the asparagus in a colander, then plunge into the bowl of ice water to stop the cooking. Drain asparagus again.
  • Cut asparagus spears into 1/2 inch pieces. Scatter asparagus and ham over the leek mixture in the skillet.
  • Preheat the broiler and set the rack about 5 inches from the heat source.
  • Place the eggs and milk in a medium bowl and whisk to combine. Add dill, chives and lemon zest, then season with salt and pepper.
  • Add the egg mixture to the skillet with the leek mixture and cook, without stirring, over medium-low heat until the bottom and sides have set, about 4 minutes. The top of the frittata will still be wet.
  • Sprinkle the cheese over the frittata and place the skillet under the broiler. Cook until the top puffs and turns golden brown, 3-5 minutes. Remove from the broiler and let it rest for 2 minutes.
  • Run a heat-proof rubber spatula or small knife around the edge of the frittata to release it from the skillet. Slide it onto a serving plate. Cut into 4 wedges and serve hot.

6 large eggs
1/4 cup ricotta
1/2 cup chopped ham
1 teaspoon coarse salt
1/4 teaspoon ground pepper
1 teaspoon olive oil
1 cup baby spinach

Steps:

  • Preheat oven to 350 degrees. In a bowl, whisk eggs, ricotta, and chopped ham; season with coarse salt and ground pepper. In a medium ovenproof nonstick skillet, heat oliveoil over medium. Add baby spinach; cook until wilted. Stir in egg mixtureand cook until edge sets, 1 minute. Transferskillet to oven. Cook frittata until center is set, 15 minutes. Invert frittata onto a plate to serve.

I like to make frittatas with pasta or potatoes when I'm feeding a few of us and this is what I made this morning for brunch. This is one of the lighter ones, but you can use full fat ingredients if you want to. Just DON'T SKIP THE BAKING POWDER - you'll be surprised how fluffy this makes your eggs. Enjoy!

1/2 tablespoon olive oil
2 cups potatoes, cut into small cubes
1 cup no fat cooked ham, cut into small cubes
1/2 cup onion, chopped
8 eggs
4 egg whites
2 teaspoons baking powder
1 green onion, sliced
1 cup low-fat cheddar cheese, grated

Steps:

  • Heat oil over medium heat in large nonstick ovenproof pan. Saute potato, ham and onion (not green onion yet) until potato is just tender.
  • Meanwhile, whisk eggs, egg whites and baking powder until frothy and baking powder has dissolved. Add green onion to pan. Gently pour egg mixture into pan, covering the ham and veggie ingredients. Sprinkle cheese over top.
  • Place pan, uncovered, in 375F preheated oven. Cook until egg has set, about 25 minutes.

4 -5 medium size red potatoes, thinly sliced
6 large eggs
1/4 cup olive oil
2 shallots, thinly sliced
1 green pepper, seeded and thinly sliced
1/3 cup grated asiago cheese
salt
1/4 teaspoon cayenne pepper (to taste)
1/4 cup sun-dried tomato packed in oil, drained and diced
1/4 lb thinly sliced ham or 1/4 lb Canadian bacon

Steps:

  • Preheat oven to 350 degrees.
  • Dry and lightly salt potatoes.
  • In heavy skillet, heat 1/4 cup oil over medium heat.
  • To skill add alternating layers of potatoes, shallots, green pepper and ham or Canadian Bacon.
  • Cover skillet and cook on low for 10 minutes until tender (occasionally lift potatoes to prevent them from sticking).
  • Remove from heat.
  • Beat eggs with whisk until foamy.
  • Add cayenne pepper and sun-dried tomatoes.
  • Sprinkle cheese on vegetables.
  • Spread the egg mixture evenly in the pan, lifting vegetables allowing egg mixture to run under and between potatoes.
  • Cook on medium heat (shaking pan occasionally) until the eggs are set on the bottom and still slightly liquid on top.
  • Cook in the oven until eggs are set, 8-10 minutes.
  • Frittata can be served warm or at room temperature.

8 ounces small red potatoes, halved
3 tablespoons extra-virgin olive oil
Coarse salt and freshly ground pepper
12 large eggs
2 teaspoons Dijon mustard
2 dashes hot sauce, such as Tabasco
2 tablespoons unsalted butter
2 leeks, white and pale-green parts only, thinly sliced crosswise, rinsed well
8 ounces baked ham, cut into 1/4-inch pieces

Steps:

  • Preheat oven to 400 degrees. Arrange potatoes on a rimmed baking sheet. Drizzle with 1 tablespoon oil; season with salt and pepper. Roast until tender and golden brown, about 30 minutes. Set aside.
  • Preheat broiler. Whisk eggs, mustard, 1/2 teaspoon salt, 1/4 teaspoon pepper, and the hot sauce in a large bowl; set aside.
  • Heat butter and remaining 2 tablespoons oil in a large cast-iron skillet over medium heat until butter has melted. Add leeks; cook, stirring, until soft, about 5 minutes. Add ham; cook, stirring, until heated through, about 2 minutes.
  • Add egg mixture, and gently stir with a heatproof rubber spatula. Cook, using spatula to pull eggs away from sides, allowing uncooked egg to run underneath, until almost set, about 8 minutes.
  • Arrange potatoes over top of frittata. Broil frittata until set and lightly golden, 30 seconds to 1 minute. Serve, cut in wedges, warm or at room temperature.
