2 tablespoons all-purpose flour
Coarse salt and freshly ground pepper
2 1/2 tablespoons soft goat cheese
2 1/2 tablespoons thinly sliced fresh mint
4 paper-thin slices Serrano ham (about 1 ounce)

Steps:

  • Preheat oven to 375 degrees. Prepare an ice-water bath; set aside. Bring a wide medium saucepan of water to a boil. Add the asparagus, and cook until bright green and just tender, 2 to 3 minutes. Goat Cheese Omelet with Mixed Herbs, Lyonnaise Potatoes, Glazed Ham and Texas Toast image

Provided by Carla Hall

Categories     main-dish

Time 30m

Yield 1 omelet

Number Of Ingredients 20

3 large eggs
1 tablespoon heavy cream
1 tablespoon minced mixed fresh herbs, such as chives, thyme leaves, flat-leaf parsley leaves and tarragon leaves
1 tablespoon unsalted butter
Pinch kosher salt
2 tablespoons crumbled goat cheese or feta or shredded Cheddar or Gruyère
Lyonnaise Potatoes, recipe follows
Ham and Toast, recipe follows
1 teaspoon sweet paprika
1/4 teaspoon cayenne
Kosher salt and freshly ground black pepper
2 tablespoons olive oil
2 medium red potatoes (about 1 1/2 pounds), cut into 1/2-inch slices
1 medium onion, halved and thinly sliced
1/4 cup maple syrup
1 to 2 tablespoons apple cider vinegar
Vegetable oil, for cooking
1 ham steak, halved lengthwise
2 slices Texas toast
Unsalted butter, for the toast

Steps:

  • In a 4-cup liquid measuring cup or large bowl with a spout, gently whisk the eggs with the heavy cream until blended. Whisk in the herbs.
  • Heat an 8-inch nonstick skillet over medium-low heat. Add the butter to the pan and swirl to coat the bottom and sides. Stir the egg mixture again, then pour into the pan. Immediately start stirring with a rubber spatula and scraping around the edges of the pan without stopping. Add the salt. As soon as the eggs are just scrambled but still quite wet, spread the eggs in an even layer on the bottom of the pan. Add the cheese in a line down the eggs, perpendicular to the pan handle. Tilt the pan at a 45-degree angle to your serving plate and start nudging the edge of the egg closest to you to roll the top third of the egg over the filling in the center. Keep nudging to roll again into a three-fold omelet. The final roll should flip the omelet out of the pan and onto your plate.
  • Mix the paprika, cayenne and 1 teaspoon salt together in a small bowl. Heat the oil in a large skillet over medium heat. Add the potatoes and a pinch of salt; cook, tossing about every 5 minutes, until evenly golden brown, about 15 minutes total. Add the onions and cook, stirring occasionally, until the onions are golden brown and tender, 5 to 7 minutes. Stir in the paprika mixture and season with salt and pepper to taste.
  • Combine the maple syrup and apple cider vinegar in a small bowl. Preheat a flat top grill or cast-iron pan over medium-high heat and brush with oil. Sear the ham until golden, flipping halfway through, 2 minutes per side. Glaze the ham with the maple syrup mixture with a heatproof brush and cook 1 minute longer.
  • Add the toast to the flat top and toast 1 to 2 minutes per side. Spread with butter and cut in half diagonally.

ITALIAN HAM AND CHEESE OMELET

Italian Ham and Cheese Omelet image

My daughter just made this omelet for lunch. We are both rather small-portion eaters, so the recipe serves 2. But there are only 2 eggs in it, so it could be a large serving for one person. Feel free to vary the ingredients. We used leftover Christmas ham in this one (a honey-baked ham), but Prosciutto Cotto (Italian cooked ham) is another option.

Provided by Susan Feliciano @frenchtutor

Categories     Eggs

Number Of Ingredients 8

2 large eggs
3 tablespoon(s) cream
1/2 teaspoon(s) dried italian seasoning
1 dash(es) salt and pepper
1 tablespoon(s) butter or olive oil
1/4 cup(s) shredded sharp cheese
1 1/2 ounce(s) ham, chopped
1 tablespoon(s) grated parmesan cheese

Steps:

  • Whisk together the eggs, cream, Italian seasoning, salt, and pepper.
  • Melt the butter or heat the oil in a 9" skillet over a (lowish) medium flame.
  • When heated, pour the eggs into the pan. Lower heat to prevent burning. Shake pan to prevent sticking. Lift up edges of omelet to allow uncooked eggs to run underneath.
  • When eggs are partially set, sprinkle in grated cheese and the ham. Keep cooking until eggs are softly set in the middle of the omelet. Sprinkle on the Parmesan cheese.
  • NOTE: It helps if you cover the pan while it's cooking, as the steam cooks the top of the omelet. But check it every few seconds to prevent scorching or over-cooking.
  • Fold Omelet over by about 1/3. Flip pan to turn out on plate, folding over the other 1/3, for a rolled omelet effect. Cut in half to serve.

Provided by Rebam98

Categories     Breakfast

Time 15m

Yield 1 omelet, 1 serving(s)

Number Of Ingredients 8

2 large eggs
1/2 cup 1% low-fat milk (or your preference)
1 tablespoon ham, chopped or diced
1/4 cup mexican cheese (or your preference)
1 tablespoon dried pineapple
nonstick cooking spray
salt (optional)
pepper (optional)

Steps:

  • Get a 10-12" non-stick frying pan warm by placing on burner on medium-low. (The size of the pan is the most important thing. The eggs should make a very thin layer in the pan).

  • Whisk together eggs and milk.
  • Season with salt and pepper if desired.
  • Spray frying pan with non-stick cooking spray.
  • Pour eggs into pan.
  • As the edges of the omelet thicken, use a wooden spoon and move the thickened egg to the center of the pan.
  • Do this until half of the omelet is cooked. Then leave alone and allow to cook on medium-low until there is no more liquid.
  • Add cheese to the half of the omelet closest to you.
  • Add ham and pineapples on top of cheese.
  • Fold the omelet in half. Do this by folding the half with the ingredients onto the half without. Use the spoon to loosen up the edges first.
  • Move to plate.
  • Enjoy!
