Ham, Broccoli and Rice Skillet Dinner image

This no-fuss skillet dinner blends packaged rice mix with precooked ham and vegetables.

2 teaspoons butter or margarine
1/2 cup chopped onion (1 medium)
1 package (4.3 oz) long grain and wild rice mix
1 2/3 cups water
2 cups frozen broccoli florets (from 14-oz bag)
1 1/2 cups cubed cooked ham

Steps:

  • In 10-inch nonstick skillet, melt butter over medium heat. Add onion and rice from mix; cook and stir 1 to 2 minutes or until onion begins to cook. Stir in water and contents of seasoning packet from mix; heat to boiling. Reduce heat to medium-low; cover and cook 10 minutes.
  • Stir in broccoli and ham; return to boiling. Reduce heat to medium-low; cover and cook 10 to 15 minutes, stirring occasionally, until broccoli is crisp-tender and rice is tender.

2 (10 1/2-ounce) packages frozen broccoli spears cooked
6 eggs hard-cooked, sliced
2 cups ham cooked diced
1/2 pound American cheese grated
1/3 cup tapioca quick-cooking
1/3 cup green bell pepper, diced
1/3 cup onion diced
1/3 cup celery diced
2 tablespoons parsley chopped fresh
1/3 cup mayonnaise real
1 cup heavy cream
2 (10 1/2-ounce) cans cream of mushroom soup
1 cup crushed pork rind
1/4 cup butter melted

Steps:

  • 1. Heat oven to 350° F. Grease a 9 x 13-inch baking dish. Cut broccoli spears into bite-size pieces and spread in baking dish cover with sliced eggs. Combine ham, cheese, tapioca, green pepper, onion, celery, parsley, mayonnaise, heavy cream, and soup. Pour over contents of baking dish. Cover with a mixture of pork rinds and melted butter. Cover and bake for 15 minutes uncover and bake for another 15 minutes.Note: Make ahead and remove from refrigerator 1 hour before baking.
