3 avocados, halved and pitted
1 lime, juiced
2 roma tomatoes, diced
¼ cup red onion, chopped
¼ cup fresh cilantro, chopped
1 clove garlic, minced
1 teaspoon salt
¼ teaspoon chili powder
1 tablespoon butter
1 clove scallion clove, chopped
2 cups cheddar cheese
2 cups monterey jack cheese
½ cup milk
1 tablespoon cornstarch
4 oz mild green chillis, 1 can, with juice
1 pumpkin, whole

Steps:

  • For the guacamole: Mash avocados with the lime juice. Add the rest of the ingredients and mix thoroughly.
  • For the queso: In a pot over medium heat, melt 1 Tbsp. butter and sauté scallions. Add cheese, milk and cornstarch, and mix until melted and smooth. Add green chiles and mix until combined.
  • Serving: Draw eyes and carve a sad mouth on a small pumpkin. Hollow out the inside and insert a bowl. Pour queso in the bowl and top with chopped tomatoes. Spoon guacamole coming out of the pumpkin's mouth. Serve with chips!

1 (16-ounce) box of Velveeta cheese, cubed
1 (10-ounce) can of Rotel or other diced tomatoes with chilies
1/2 tablespoon Cholula or your favorite hot sauce
2 teaspoons paprika
1 clove minced garlic or 2 teaspoons garlic powder
blue corn chips to garnish and serve
green onions to garnish

Steps:

  • Put a saucepan over low heat. Add the Velveeta and let it slowly melt. Once the Velveeta is mostly melted through, add the Rotel, Cholula, paprika, and garlic, and stir slowly until everything is melted and incorporated. In the meantime, break your blue corn chips into jack-o-lantern shapes: two small triangle eyes, a round nose, and a smiling mouth, or feel free to get creative and make up your own design. Pour the warm queso into a round or square serving bowl and place the "face" on the queso. Place a green onion on the top for the stem. Garnish with more blue corn chips and enjoy!

4 pounds lean ground beef
3 cups Italian bread crumbs
4 eggs
1 large onion, chopped
¼ cup spaghetti sauce
¼ cup grated Parmesan cheese
1 pinch garlic salt, or to taste
¼ cup spaghetti sauce
1 tablespoon Italian seasoning
3 drops orange food coloring, or as needed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine beef, bread crumbs, eggs, onion, spaghetti sauce, Parmesan cheese, and garlic salt in a large bowl. Push mixture down into the bottom of the bowl and smooth the top. Flip bowl over into a large cake pan with sides to hold drippings. Use fingers to mold a stem shape at the top and make a happy or scary pumpkin face in the meat.
  • Combine spaghetti sauce and orange food coloring in a small bowl. Paint the meat loaf surface with the sauce mixture and sprinkle Italian seasoning on the stem.
  • Bake in the preheated oven until inside is no longer pink, 1 1/2 to 2 hours.
  • Drain grease from cake pan or transfer loaf to a serving plate.

Hard-boiled eggs
Ingredients for your favorite deviled egg filling
Red bell pepper
Peppercorns
Long-handled tweezers for placing eyes, optional

Steps:

  • Put eggs on to boil. Meanwhile, cut small triangles from strips of red pepper for the ears, and additional thin strips for tails. When eggs are done, cut in halves lengthwise, placing the yolks in a mixing bowl and the whites on a serving dish. Mash together the egg yolks with whatever ingredients you like in your filling. (I used pinches of salt, garlic salt, and dry mustard, about 1/4 tsp. paprika, and enough mayo for a creamy consistency. I used a hand mixer to blend). Transfer filling to a piping bag and fill the egg white halves with the mixture. (I used a ziptop bag with a corner cut off.) At the wider end of eggs, decorate eggs with the bell pepper triangles for ears, bell pepper strips for tails, and peppercorns for eyes. (I used tweezers for placing the peppercorns).

I've made a variation of this for the past two years for Halloween dinner. We enjoy carving the 'pumpkins' and eating the 'worms'.

6 -8 medium orange bell peppers, washed and dried
8 ounces orzo pasta or 8 ounces spaghetti
1 (25 ounce) jar pasta sauce, warmed (I love Mezzetta Napa Valley Bistro Tomato and Basil sauce)

Steps:

  • Carve each bell pepper as you would a Jack-O-Lantern, cutting the top off and hollowing out the inside before carving a face.
  • Discard the tops.
  • Cook pasta according to package directions.
  • Drain Pasta.
  • Mix pasta with warm sauce and spoon into each individual pepper, making sure the pasta 'oozes' out the eyes, mouth, and top of pepper.
  • Serve with breadstick 'bones'--tie a knot at the end of each breadstick, bake, and enjoy!
