Fish can be intimidating for those who didn't grow up cooking or eating it. One of the best ways to ease people into eating anything unfamiliar is by smothering it in roasted garlic and cheese. Forget the old Italian maxim of not mixing seafood and cheese: they pair magically and make first forays into cooking and eating halibut easy to execute and even easier to eat.

1 garlic head
1/2 tablespoon olive oil
1 tablespoon unsalted butter
1 pound halibut, skin removed, in 4 even fillets
Kosher salt, as needed
Freshly ground black pepper, as needed
1/2 cup mayonnaise
1/2 cup grated Parmesan

Steps:

  • Preheat the oven to 375˚F.
  • Cut off the top of the head of garlic and brush off some of the outer paper skin, leaving just the individually wrapped cloves. On a piece of foil, pour the olive oil over the garlic, then wrap the foil around it and place it in the oven for 45 minutes, until it's completely soft. For the recipe, you'll only need six cloves from the head, but it's worth making a whole head to keep the rest for spreading on crusty bread or adding to salads.
  • Raise the oven temperature to 425˚F.
  • Heat the butter in an oven-proof pan over low heat. Sprinkle both sides of the fish with salt and pepper. When the butter is melted, add the halibut and put it into the oven for 10 minutes. The fish should be just cooked and opaque throughout.
  • While the halibut cooks, blend or food process together six cloves of garlic, the mayonnaise, and parmesan. When the halibut is done, pull it out and generously smear the mayonnaise mixture on the top. Switch the oven to a high broil and return the pan to the still-hot oven for 4 minutes under the broiler, until the top is almost entirely golden brown.
  • Remove and serve immediately.

  • Heat oven to 475° and brush a baking sheet with oil. In a small bowl, lightly beat egg and milk together. In a separate bowl, stir together parmesan cheese, flour, paprika, pepper and salt. Dip fish fillets in egg wash, and then dredge in flour mixture. Lay fish fillets in a single layer on prepared baking sheet. Top with dabs of butter and bake for 8-10 minutes, or until crispy and baked through.

This fast-and-easy dish was an instant success at my house, even in my fish-hesitant family. The panko crisps up beautifully, and the halibut is tender, moist, and delicately-flavored. This was inspired, in part, by several Weight Watchers® recipes; I don't know the calories or points exactly, but it's a very simple lean and low-calorie dinner. It pairs well with roasted or stuffed tomatoes (can cook at the same temperature!) and a salad. Serve with lemon wedges.

⅓ cup plain fat-free Greek yogurt
1 tablespoon lemon juice
1 tablespoon Dijon mustard
⅓ cup Italian-style panko bread crumbs
2 tablespoons grated Parmesan cheese
salt and ground black pepper to taste
2 (6 ounce) halibut fillets

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil, spray an ovenproof wire rack with cooking spray, and place rack on the prepared baking sheet.
  • Whisk yogurt, lemon juice, and Dijon mustard together in a shallow bowl. Stir panko bread crumbs and Parmesan cheese together in another shallow dish.
  • Gently dip 1 fillet in yogurt mixture to coat completely; press fillet into bread crumbs. Place coated fillet on the wire rack on the prepared baking sheet. Repeat with remaining fillet.
  • Bake fillets in the preheated oven until fish flakes easily with a fork, 18 to 22 minutes. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C).

One 8-ounce halibut fillet, about 3/4-inch thick
1/2 cup all-purpose flour
1 large egg
1 cup finely grated Parmesan cheese
2-3 tablespoons clarified butter or vegetable oil

Steps:

  • Put an oven rack in the center of the oven and preheat the oven to 450 degrees F.
  • Pat the halibut dry with a paper towel. Spread the flour in 1 shallow dish, beat the egg with 2 tablespoons water in another, and put the Parmesan cheese in a third.
  • Heat a medium oven-proof skillet over medium-high heat. Add the butter or oil and heat until hot but not smoking. Meanwhile, coat the halibut with flour, shaking off the excess; repeat with the egg mixture and Parmesan. Add the fish to the pan and cook until golden on both sides, 1 to 2 minutes per side. Transfer the skillet to the oven and cook until slightly crispy, 4 to 5 minutes. Serve hot.

1 tablespoon lemon juice
1 garlic clove, very finely minced
1/2 teaspoon Dijon mustard or 1/2 teaspoon country-style dijon mustard
1 tablespoon grated parmesan cheese
1 thin green onion, finely sliced
1/8-1/4 teaspoon Tabasco sauce
2/3 lb halibut fillet
2 teaspoons lemon juice
1/8 teaspoon salt

Steps:

  • To prepare the topping: Combine mayonnaise, lemon juice, garlic, mustard, Parmesan, green onion and Tabasco.
  • To prepare the halibut: Place fish on a broiling pan.

  • Bake in a preheated 450-degree oven 12 minutes per inch of thickness, or until fish tests done.
  • Remove fish from oven and place a rack close to the broiling element.
  • Turn the oven to broil.

1 lb halibut fillet
1/2 cup breadcrumbs, divided
1/4 cup light mayonnaise (Helman's)
1 tablespoon Dijon mustard
1 tablespoon lemon juice
3 -4 tablespoons parmesan cheese, divided
2 -4 tablespoons butter
1/4-1/2 teaspoon garlic
1/2-3/4 teaspoon parsley

Steps:

  • Wash and pat dry the Halibut filets.
  • Mix 1/4 C light Mayo, 1 Tbl Dijon, 1 Tbl lemon juice, 1/4 C breadcrumbs and 1.5 Tbl Parm.
  • Spray olive oil in a 9X13 pan bottom.
  • Place Halibut filet's into the pan. Spread mayo / dijon mixture on the top of the filet's.
  • Melt the butter in a small bowl. (microwave) Mix in the balance of the bread crumbs and the parm, garlic and parsley into melted butter. Note - I used 4 Tbl of the butter, but upon double checking the recipe's I leveraged, they used substantially less. I bet you could easily get by on 2 tbl butter. Put the breadcrumb/herb/butter mixture on top of the fish - for an extra crispy topping.
  • Bake the fish at 350 degrees for about 12 - 14 minutes. Then put oven on Broil (change the racks in the oven if needed) for a couple of minutes (4) until the top is nicely brown.
  • (Note first time I made this - had about 1.25 lbs halibut and husband thought there was a smidge too much of the mayo / dijon mixture.).

1 cup sour cream

1/2 teaspoon dill weed

  • Place fish in a greased 13x9x2-inch baking dish.

1/2 cup crushed pine nuts
4 tablespoons grated parmesan cheese
2 tablespoons fresh basil, chopped
2 garlic cloves, minced
1 tablespoon olive oil
4 halibut fillets
sea salt

Steps:

  • Preheat the oven to 425°F.
  • In a medium sized bowl, mix the pine nuts, Parmesan, basil, garlic, and olive oil.
  • Place the fish filets on a baking tray (I used aluminum pie pans) skin side down. Salt the upper portions to your taste.
  • Press the pine nut mixture onto the salted fish, patting it down to make it stick.
  • Bake for 10-15 minutes or until the fish flakes with a fork and is opaque. Don't forget to scrape the brown crusty bits off the bottom of the pan - those are the tasty parts.
  • I made this recipe for 2 using 2 fish filets and coating both sides of the fish with the mixture.

4 large halibut steaks, 1 inch thick

1/2 cup dry bread crumbs
2 large cloves garlic, really finely minced (or if you prefer 1/2 teaspoon or more of garlic powder)
1/4 cup olive oil, more to brush on fish
1/3 cup grated Parmesan cheese
1/8 teaspoon dried thyme, rubbed
lemon wedges

  • Step 1 Place fish steaks in an greased shallow baking pan. Brush the fish all over with olive oil. Sprinkle with salt and pepper. Step 2 Combine bread crumbs, garlic, 1/4 cup olive oil, Parmesan cheese and thyme to a thick paste and pat onto surface of steaks. Step 3 Bake in a preheated 450 degree oven for 14 minutes per inch of thickness of fish or until fish is not longer translucent when tested with a fork. Garnish with lemon wedges and serve.

1 1/2 cups fat-free reduced-sodium chicken broth
1/4 cup dry white wine (or 3 tablespoons chicken broth and 1 tablespoon lemon juice)

1/8 teaspoon freshly ground black pepper
4 6-ounce halibut fillets
4 teaspoons olive oil
1/2 teaspoon salt
1 pint grape tomatoes, quartered
8 large pitted Kalamata olives, slivered
1 tablespoon drained capers
2 garlic cloves, minced
1/8 teaspoon crushed red pepper
2 tablespoons slivered fresh basil

Steps:

  • Directions 1. In a medium saucepan, combine the orzo, broth, and wine. Bring to a boil and stir; reduce heat to low. Cover and simmer until orzo is just tender, about 12 minutes. Stir in the Parmesan and black pepper. Cover and set aside. 2. While orzo is cooking, heat a grill pan over medium-high heat. Brush the halibut with 2 teaspoons over medium-high heat. Brush the halibut with 2 teaspoons of the olive oil and season with 1/4 teaspoon of the salt. Grill until just cooked through, 3 to 4 minutes per side. Transfer to a platter. 3. PESTO CRUST (I made it in the food processor and mixed the cheese in at the end by hand)
½ cup (120ml) pine nuts, coarsely chopped
4 tablespoons freshly grated Parmesan cheese
2 tablespoons (30ml) fresh basil, finely chopped
1 clove garlic, minced
1 tablespoon (15ml) extra virgin olive oil
4 6oz (170g) Halibut fillets (enough for 4 people)
Sea salt
Pepper
Lemon Slices

Steps:

  • 1. Salt and pepper both sides of the Halibut fillets. Lay on lightly oiled baking sheet. 2. Spread the Halibut fillets with the above pesto crust. Pat the pesto crust & press lightly to make it ahere. 3. If prepared an hour or so before baking - cover lightly with foil and refrigerate. Remove 15 min or so before baking to bring to room temp. BAKE: Preheat oven to 425F (220C). Bake in middle of oven for 10-15 minutes until fish is opaque all the way through and the pesto is lightly browned. (I left the foil on for approx. 10 min - then removed it for the balance of the baking time - then I turned the oven off And put the foil back on for approx. 5 min. and left it in the turned off oven My piece of fish was about ¾" thick sp you need to judge the baking time).

juice of 1/2 lemon
2 tbsp. olive oil
l/4 cup butter
2 tbsp. garlic
1 tbsp. fresh thyme
1/2 tsp. crushed red pepper flakes
1/2 cup parmesan cheese, grated
3 tbsp. mayonnaise
3 green onions, chopped
1/4 tsp. salt
1/4 tsp. black pepper
1 tsp. hot sauce
1/2 tsp. paprika

Steps:

  • Preheat oven to 400 degrees. Line a roasting pan with aluminum foil; place halibut fillets on foil and season with salt and pepper to taste. Drizzle fillets with lemon juice and oil and cover with aluminum foil cutting several slits in foil. Bake fillets for 25 to 30 minutes. Remove from oven and remove foil covering fish. Leave fish in roasting pan; set aside. Preheat broiler to 500 degrees. In a small saute pan over medium heat, melt butter and saute garlic thyme and red pepper flakes; cook for 2 to 3 minutes and remove from heat. In a small mixing bowl, combine sauteed herbs, parmesan, mayonnaise, onions, salt, pepper, hot sauce and paprika; stir to mix well and spread evenly over baked fish. Place pan 6 inches from broiler and broil for about 90 seconds or until lightly browned and bubbly.
