SWISS ROSTI WITH GRUYèRE CHEESE



Swiss Rosti with Gruyère Cheese image

This is a classic Swiss recipe for a potato side dish that's prepared and served much as we in the United States would serve hash brown potatoes.

Number Of Ingredients 6

2 large baking potatoes (such as russet)
1 Tbsp olive oil
2 Tbsp minced onion
2 clove garlic, crushed
1 c grated gruyère cheese
salt and pepper, to taste

Steps:

  • 1. Peel potatoes and then grate. Press potatoes between several thickness of paper towels to remove excess moisture.
  • 2. Heat oil in large skillet over moderately high heat but not smoking, and sauté onion for 2 minutes. Add half of the grated potatoes, and spread to make a thin layer, and press down on potato layer with a spatula. Sprinkle onion and garlic over potatoes. Reduce heat to moderate and sprinkle the Gruyère over the potatoes. Spread remaining grated potatoes on top, pressing down again with spatula. Cook until golden brown and crisp, about 10 minutes on each side. Season potatoes with salt and pepper.
  • 3. Cut into individual portions, and serve hot.

CRISPY KALE CHIPS WITH LEMON

2 bunches fresh kale, stemmed, torn into bite-size pieces
Extra-virgin olive oil
Flaky sea salt
1 lemon
Crushed red pepper flakes

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the kale in a large bowl and dress very lightly with olive oil so the leaves are barely coated. Season with salt. Spread the leaves out across 2 roasting sheet trays so they aren't stacked up on each other too much. Roast in the oven until crispy but still green, 12 to 15 minutes. Remove from the oven and dress with a squeeze of fresh lemon juice and a touch of crushed red pepper flakes.

GRUYERE ROLLS WITH PECAN-CHILE SALSA



Gruyere Rolls with Pecan-Chile Salsa image

1/4 cup pecans
4 dried arbol chiles
1 clove garlic, unpeeled
Salt and freshly ground black pepper
4 flour tortillas, warmed
8 ounces smoked gruyere cheese, or any other smoked cheese, sliced into 1/2-inch logs
1 pear, such as Bartlett, cut into 1/4-inch slices
3 tablespoons honey
Vegetable oil, for brushing

Steps:

  • Preheat a medium heavy skillet. Add the pecans, chiles and garlic, toasting on all sides until fragrant, about 3 minutes. Remove from the heat and let cool slightly. Remove the outer peel from the garlic and remove the stems from the chiles. Transfer the pecans, garlic, chiles and1/3 cup water to a blender and blend until smooth. Season with salt and freshly ground black pepper.
  • Preheat the oven to 400 degrees F.
  • Place the tortillas on a work surface and top with 4 slices of cheese, 4 slices of pear and then drizzle with about 2 teaspoons of honey per tortilla.
  • Fold in the sides of the tortilla over the filling and roll up to fully enclose. Secure with 2 toothpicks to prevent it from opening while baking and brush with vegetable oil.
  • Place the rolls on a greased baking sheet and bake until tortillas are crunchy, about 35 minutes. Let the rolls cool enough to handle, about 5 minutes. Cut into thirds and serve warm or at room temperature with the pecan-chile salsa.

GRUYERE WITH PEAR CONFIT

2 large firm Anjou or Bartlett pears, light green to yellow in color
4 tablespoons (1/2 stick) unsalted butter
1/2 cup light brown sugar, packed
1 tablespoon freshly squeezed lemon juice
2 slices fresh ginger, about 1/4-inch thick
4 ounces Gruyere cheese
8 thin slices whole-grain bread, cut in half

Steps:

  • Peel the pears and cut them in half. Scoop out the seeds with a melon baller or cut them out with a knife. Slice thin and set aside. In a medium skillet, melt the butter over medium heat. Add the sugar and cook, stirring, until slightly browned, about 3 to 5 minutes. Add the lemon juice and ginger and stir. Add the pears and reduce the heat to low. Cook uncovered, stirring occasionally, until the pear slices are tender and almost translucent and the mixture is thickened, about 30 minutes. Let cool to room temperature. To serve, shave the cheese with a vegetable peeler or a cheese slicer into thin shards. Toast the bread. Spoon a mound of confit in the center of each serving plate. Fan 4 pieces of toast around the top of the plate, and pile the cheese shards around the bottom.

  • Gruyere is made in a copper vat which is what gives it its nuttiness. It's basically made the same way Parmegiano Reggiano is, combining the morning milk and the evening milk from the night before, which is skimmed, making it a part-skimmed milk cheese.

CREAMY GRUYERE POTATOES

4 medium baking potatoes, peeled and cut across into 1/8-inch slices
1 1/2 teaspoons kosher salt
Freshly ground pepper to taste
1 tablespoon unsalted butter, cut into small pieces
1 1/2 cups half-and-half
1 cup grated Gruyere cheese

Steps:

  • Preheat the oven to 350 degrees. Arrange half of the potato slices in slightly overlapping layers in a deep-dish pie plate or small shallow casserole dish. Sprinkle with 3/4 teaspoon of the salt and pepper to taste. Dot with half of the butter pieces.
  • Repeat the layers. Pour the half-and-half over the potatoes. Bake until the potatoes are tender, about 45 minutes.
  • Remove the dish from the oven and preheat the broiler. Sprinkle the cheese over the potatoes and broil until melted and lightly browned. Divide among 4 plates and serve.
