I was looking for healthier ground turkey recipes and came up with this ground turkey soup with rice. I serve this with a fresh French bread. It also freezes really well!

1 pound ground turkey
2 tablespoons salted butter, or to taste
2 medium carrots, diced
1 small onion, diced
1 stalk celery, diced
2 cloves garlic, minced
4 cups chicken broth, or more to taste
1 cup 1% milk
1 tablespoon dried parsley
1 tablespoon dried thyme
1 ½ teaspoons ground black pepper
3 ½ cups cooked wild rice

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir ground turkey in the hot skillet until browned and crumbly, 5 to 7 minutes. Remove from the heat. Drain and discard grease.
  • Melt butter in a skillet over medium heat; stir in carrots, onion, celery, and garlic. Cook and stir until the onion has softened and turned translucent, about 10 minutes.
  • Add broth, milk, parsley, thyme, and pepper. Stir in turkey and bring to a boil. Reduce heat to medium-low and simmer for 30 minutes. Stir in rice and cook until heated through, about 5 minutes.

1 tablespoon Butter
1/2 cup White Rice (uncooked)
1 cup Water
1/2 cup Hoisin Sauce
1/2 cup Barbecue Sauce
1 tablespoon Peanut Butter
1 1/2 teaspoons Soy Sauce
1 teaspoon Garlic ( minced)
1 teaspoon Ginger Root (fresh, grated)
2 teaspoons Sesame Oil
1 cup Onion (diced)
1/2 cup Carrot (grated)
1 cup Pea Pods
1 cup Broccoli ( cut in small pieces)
2 batches Eggs (beaten)
1/8 cup Sesame Seeds

Steps:

  • 1. Melt butter in saucepan over medium heat. Add uncooked rice and cook till toasted, stirring occasionally.
  • 2. Add water and bring to a boil. Reduce heat, cover and simmer for 15 minutes until tender.
  • 3. While riuce is cooking, mix hoisin sauce, barbecue sauce, peanut butter, soy sauce,garlic, and ginger. Set aside.
  • 4. When rice is done cooking, heat sesame oil in wok over medium-high heat. When it begins to smoke add onion and cook till clear.
  • 5. Add carrot and cook for 1 - 2 minutes. Add rice and stir for 2 minutes.
  • 6. Add broccoli and pea pods,cook and stir for 1 - 2 minutes.
  • 7. Move eveything to side of the wok and put beaten eggs in middle of wok and scramble till done.
  • 8 Stir into rice mix. Sprinkle with sesame seeds.
  • **** If you choose to add meat , scramble it and add to step 5

1 tablespoon sunflower oil
1 lb ground turkey
1/2 cup onion, chopped
3/4 cup celery rib, chopped
1 cup brown rice
7 cups chicken broth
1 teaspoon savory
1/2 teaspoon turmeric
1/2 teaspoon coriander
salt and pepper

Steps:

  • Put oil in large pot. Saute onions and celery.
  • Add chicken broth, spices and rice. Cover and cook 1 hour over medium flame.
  • Meanwhile, brown turkey meat and add to the soup mixture.
  • Season with salt and pepper.

1 large onion, chopped
4 large potatoes, peeled and cubed
4 large carrots, grated
4 celery ribs, chopped
1/2 small head cabbage, shredded
1/4 cup uncooked long grain rice
1 quart water
2 cans (14-1/2 ounces each) no-salt-added diced tomatoes, undrained
1 can (8 ounces) tomato sauce
1 can (16 ounces) kidney beans, rinsed and drained
2 bay leaves
1 teaspoon dried basil
1 teaspoon dried thyme
3/4 teaspoon pepper
1/2 teaspoon dill weed
1 teaspoon salt-free seasoning blend

2 Tbsp olive oil, divided
1 lb ground turkey
1/2 tsp garlic powder
1/2 tsp italian seasoning
salt and pepper, to taste
1/2 c diced white onion
8 oz sliced fresh cremini mushrooms
5 oz fresh spinach leaves, chopped
1 c raw white rice
2 can(s) (10.5 oz) cream of mushroom soup
1 c shredded sharp cheddar cheese
2 c chicken broth

Steps:

  • 1. Preheat oven to 350F. Coat a deep 2 qt. casserole or baking dish with nonstick olive oil spray.
  • 2. Heat 1 tablespoon oil in a large skillet and brown ground turkey until pink starts to disappear. Season with salt and pepper, garlic powder and Italian seasoning. Drain and place in prepared baking dish.
  • 3. Heat remaining oil in skillet and add onions; sauce until just soft, Add mushrooms and sauce until juices start to evaporate. Add spinach and sauté and just wilted.
  • 4. Add veggie mix to meat and add raw rice. Stir in mushroom soup and grated cheddar; stir until well mixed.
  • 5. Add broth and stir. Cover with foil and bake 1 1/2 hours, or until rice is done.
  • 6. If desired, remove foil last 10 minutes and add more shredded cheese, baking until it is melted.

1/2 lb ground turkey
2 cups rice, uncooked
2 carrots, peeled and chopped
2 celery ribs, peeled and chopped
1/2 medium onion, chopped
1 bell pepper, chopped
1 (4 ounce) can green chilies
4 cups chicken stock
4 cups water
3 tablespoons Knorr chicken bouillon
1 teaspoon pepper
1 teaspoon season salt
1 teaspoon cumin
1/2 teaspoon chili powder
1 teaspoon minced garlic clove

Steps:

  • Chop up all vegetables.
  • Saute ground turkey in the pot sprayed with Pam.
  • Spice turkey with season salt, pepper, cumin, garlic, and a little chili powder. Begin to brown.
  • Add vegetables and saute for 2 - 3 minutes.
  • Add can of green chiles and saute another 2 - 3 minutes.
  • Add 4 cups of chicken stock and 4 cups of water, and bouillon, and bring to a boil.
  • Once boiling, add rice.
  • Add a little more seasonings if desired.
  • Bring back to a boil, and then simmer for approximately 20 minutes or until the rice is tender.
  • Remove from heat and enjoy!

1 cup Brown Rice
2.5 cups chicken stock
1 pound ground turkey
1 medium red and white onion
1 bunch of scallions
1 red bell pepper
1 yellow bell pepper
1/2 cup chopped green bell pepper
1/3 cup chopped onion
1/2 teaspoon minced garlic
1/2 teaspoon garlic powder
garlic salt
cilantro
broccoli

Steps:

  • Bring 2 1/2 cup of chicken stock to a boil in a saucepan, and stir in the brown rice. Reduce the heat to a simmer, cover, and simmer until the rice is tender and the liquid has been absorbed, 40 to 50 minutes. Set the rice aside. Dice red and white onion, finely chop cloves of garlic, and slice scallions stir in green bell pepper, onion. Cook vegetables with 2 tablespoons of olive oil in a large skillet over medium heat. Add ground turkey into a skillet over medium heat, and cook and stir the turkey until the meat gives up some of its fat, 2 to 3 minutes; Cook and stir until the turkey is crumbly and no longer pink and the vegetables are tender, 5 to 8 more minutes. Stir in the cooked brown rice Stir in half a bunch of cilantro, finely chopped. Stir in cooked brown rice and adjust seasonings to taste. A final handful of cilantro brightens the dish and then it's done!

1 pound Ground Turkey
1/4 cup Lawry's Seasoned Salt
1 cup Long Grain Rice
1 stalk Celery
1 piece Green Pepper
2 stalks Small Carrot
1 piece Small Onion
14 cup Chicken Broth
1 tablespoon Vegetable Oil

Steps:

  • Sprinkle the seasoned salt and (if using) fennel seed over the ground turkey. Mix well.
  • Spray large skillet with vegetable spray and place turkey mixture in pan.
  • Over medium-high heat cook and stir Turkey until browned; drain well.
  • While the Turkey is draining add the vegetables to the hot pan and saute for about 5 minutes.
  • Add the Turkey back into the pan and mix.
  • Sprinkle rice over mixture and pour in Chicken broth. When broth comes to a boil reduce heat, cover and simmer for approx 20-30 minutes, stirring occasionally until liquid is absorbed.
  • When the rice is cooked if there is still too much liquid in the pan remove cover, increase the heat and continue cooking until all liquid is absorbed.
