4 tilapias
1/4 cup Unsalted Butter
2 lemons
2 tbsp Garlic Parley Salt
1 tbsp dill (garnish)

Steps:

  • Slice lemon into half rings. Butter into small chunks.
  • Make small incisions on tilapia. Season all sides generously. Stuff it with butter and lemon slices.
  • Grill tilapia at 450 °F for about 5 minutes on each side. Depending on the size of the fish, you may need to grill longer.

1 1/4 pounds new potatoes, cut into 1/2-inch pieces
2 tablespoons extra-virgin olive oil
3 teaspoons chopped fresh thyme
Kosher salt and freshly ground pepper
Cooking spray
2 cups cherry tomatoes
1/4 cup pitted kalamata olives
2 tablespoons capers, drained
3 cloves garlic, smashed
1/4 cup white balsamic vinegar or white wine vinegar
4 6-ounce tilapia fillets

Steps:

  • Preheat the oven to 400 degrees F. Toss the potatoes with 1 tablespoon olive oil, 1 teaspoon thyme, 1/4 teaspoon salt, and pepper to taste in a bowl. Coat a rimmed baking sheet with cooking spray; add the potatoes and spread in an even layer. Roast until browned and crisp, tossing halfway through, about 35 minutes.
  • Meanwhile, toss the tomatoes, olives, capers and garlic with 1 teaspoon olive oil, 2 tablespoons vinegar and 1 teaspoon thyme in a bowl. Coat another baking sheet with cooking spray; add the tomato mixture and spread in an even layer. Roast until softened, 15 minutes.
  • Mix the remaining 2 teaspoons olive oil and 1 teaspoon thyme, 2 tablespoons vinegar, 1/4 teaspoon salt, and pepper to taste in a bowl; brush on the fish. Place the fish on top of the roasted tomato mixture and return to the oven until just cooked through, about 10 minutes. Divide among plates and serve with the potatoes.

Tilapia is cooked in a foil packet on the grill with summer vegetables, butter, and lemon for a super fast, flavorful, and healthy summer meal!

4 (4-6 oz.) tilapia fillets
1 zucchini, sliced
1 yellow squash, sliced
½ lb. asparagus, trimmed and cut into thirds
1 ¼ teaspoon Kosher salt
¼ teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon dried dill
1 large lemon or 2 smaller lemons, thinly sliced
4 Tablespoons unsalted butter, cut into thin slivers
1 ½ Tablespoons capers
Cooking spray
Foil

Steps:

  • Preheat the grill to high (between 450-500 degrees)
  • For each packet, you will need 2 large (about 20 inches long) sheets of foil, or just 1 sheet of heavy duty aluminum foil.
  • Create four packet making stations with the foil, then spray each with cooking spray or brush with olive oil.
  • Mix together seasonings (salt, pepper, garlic powder, and dill) in a bowl. Layer each foil packet with one tilapia fillet and 1/4 of the veggies. Sprinkle evenly with the seasoning mixture, turning the fish over to coat both sides.
  • Place several slivers of butter on top of each packet, a few on both the fish and the veggies. Put two slices of lemon on top of the fish, then toss the capers over everything.
  • Fold the long sides of the foil in towards the center and roll over to seal, then roll up the short edges.
  • Place on the preheated grill, cover, and cook for 10-12 minutes. If the fillets were frozen, add a few minutes to the cooking time.
  • To serve, carefully remove the fish from the grill and peel back the foil layer. Fish are done when they are white (not translucent) and flake easily with a fork. Serve in the foil packet or on plates with the sauce from the bottom of the packet.

⅓ cup olive oil
1 teaspoon lemon-pepper seasoning, or to taste
1 teaspoon ground cumin, or to taste
1 teaspoon paprika, or to taste
1 teaspoon dried mustard, or to taste
garlic powder, or to taste
4 (4 ounce) fillets tilapia
cooking spray

Steps:

  • Mix olive oil, lemon pepper, cumin, paprika, dried mustard, and garlic powder together in a small bowl. Brush each tilapia fillet with mixture using a pastry brush. Flip; brush the other side. Cover with aluminum foil and refrigerate for 1 hour.
  • Preheat an outdoor grill for high heat and lightly oil the grate.

Broiled Tilapia and Eggplant with Moroccan Pesto image

1/2 cup whole-wheat couscous
1 clove garlic, smashed
1 cup packed fresh cilantro, plus more for topping
1/4 cup extra-virgin olive oil
Finely grated zest of 1/2 lemon, plus wedges for serving
1 1/2 teaspoons ground cumin
1 teaspoon ground coriander
1 teaspoon sweet paprika
2 Japanese eggplants (about 8 ounces each), halved lengthwise
Freshly ground pepper
4 tilapia fillets (6 to 8 ounces each)
1/4 cup nonfat Greek yogurt

Steps:

  • Preheat the broiler. Bring 3/4 cup water and 1/2 teaspoon salt to a boil in a small saucepan. Put the couscous in a medium heatproof bowl and stir in the boiling water. Cover the bowl and set aside until the couscous is tender, about 5 minutes. Fluff with a fork.
  • Meanwhile, puree the garlic, cilantro, 3 tablespoons olive oil and 1/4 cup water in a blender. Pulse in the lemon zest, cumin, coriander, paprika and 1/4 teaspoon salt. Score the eggplant flesh in a 1/2-inch crosshatch pattern and place cut-side up on a foil-lined baking sheet. Brush with 2 tablespoons of the cilantro pesto and season with salt and pepper. Broil the eggplant, without turning, until browned and softened, 10 to 14 minutes.
  • Lay the tilapia on another foil-lined baking sheet. Brush with the remaining 1 tablespoon olive oil and season with salt and pepper. Broil until the fish is cooked through, 5 to 8 minutes. Brush each fillet with about 1 teaspoon pesto.
  • Divide the fish, couscous and eggplant among plates. Mix the yogurt with 1 tablespoon water and drizzle on the eggplant. Top the fish with the remaining pesto and more cilantro. Serve with lemon wedges.

1/2 teaspoon salt
2 teaspoons olive oil
2 teaspoons garlic
1 cup eggplant, diced*
1 cup zucchini, diced*
1 cup yellow squash, diced*
3 cups fresh diced plum tomatoes(4 tomatoes)
3 tablespoons oregano
2 lemons cut into halves
1 pound tilapia
Salt and pepper
Nonstick cooking spray
1 cup = 1 small eggplant,zucchini and yellow squash.

Steps:

  • Preheat oven to 350F. Heat a large, straight-sided skillet. Add 2 cups water and 1/2 teaspoon salt; bring to boil. Add the diced potatoes and blanch them in the boiling water for 3 minutes; just until the start to soften. Drain the potatoes, reserving the cooking liquid. Set the potatoes aside. To same pan add the olive oil and heat it through over medium heat. Swirl the oil to cover the bottom of the pan. Saute the garlic until it is fragrant, about 1 minute.Add the eggplant, zucchini, yellow squash, and saute the vegetables for another 5 minutes.Add the diced tomatoes and oregano; cook another 5 minutes, until the vegetables are heated through and starting to fall apart. If the pan is dry, add a little of the peserved potato cooking liquid.

One 6-ounce tilapia fillet
Pinch ground cumin
Pinch cayenne pepper
Pinch paprika
Pinch kosher salt
1 tablespoon olive oil
Tilapia Salad, recipe follows
Cashew Yogurt Sauce, recipe follows
1 honey tangerine
1/2 cup watercress
1 teaspoon tangerine zest
1/8 cup raw red beets, peeled and julienned
1 tablespoon cashews, roasted
3 quarts plain yogurt
6 limes, juiced
1 1/2 bunches fresh cilantro leave
6 large garlic cloves
4 tablespoons ground cumin
1 teaspoon cayenne pepper
3 teaspoons paprika
1/2 teaspoon kosher salt

Steps:

  • Heat the grill. Cut the fillet in 1/2 lengthwise. Lightly season the fish with the cumin, cayenne, paprika, and salt. Coat each piece in olive oil and grill, 3 to 4 minutes on each side. To plate, begin by covering a dinner plate with a layer of Cashew Yogurt Sauce. Place the pieces of grilled tilapia in the center, overlapping one another. Top the fish with the Tilapia Salad and place the tangerine segments around the plate.
  • Using a sharp pairing knife, remove the skin of the tangerine. Slice the tangerine into rings and remove any seeds. Mix the watercress, tangerine zest, and beets with the cashews. Serve with the grilled tilapia and Cashew Yogurt Sauce.
  • Place all ingredients in a blender and blend on high until smooth. Taste for seasoning.

1 tablespoon pure olive oil
8 petite potatoes (yellow, thinly sliced)
1 zucchini, sliced
8 cremini mushrooms, sliced
4 tilapia fillets, about 4 oz each

Steps:

  • Cut four 8x14 pieces of foil.
  • .Preheat barbecue to medium.

1 red onion, cut into wedges
18 spears fresh asparagus, trimmed
12 crimini mushrooms, stems removed
1 (1 pound) eggplant, sliced into 1/4 inch rounds
1 red bell pepper, cut into wedges
1 yellow bell pepper, cut into wedges

Steps:

  • In a large resealable plastic bag, mix the olive oil, parsley, oregano, basil, vinegar, kosher salt, pepper, and garlic. Place the onion, asparagus, mushrooms, eggplant, red bell pepper, and yellow bell pepper into the bag. Seal, and marinate 2 hours in the refrigerator, turning occasionally
