1 bone-in leg of lamb (4 to 5 pounds)
Salt and pepper to taste
2 cans (15 ounces each) plums, pitted
2 garlic cloves
1/4 cup lemon juice
2 tablespoons reduced-sodium soy sauce
2 teaspoons Worcestershire sauce
1 teaspoon dried basil

Steps:

  • Preheat oven to 325°. Place lamb on a rack in a shallow baking pan, fat side up. Season with salt and pepper. Bake, uncovered, 1-3/4 to 2-1/4 hours or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°)., Meanwhile, drain plums, reserving 1/2 cup syrup. In a food processor, place the plums, reserved syrup, garlic, lemon juice, soy sauce, Worcestershire sauce and basil. Cover and process until smooth; set aside half of the plum sauce., Baste lamb every 15 minutes during the last hour of roasting. In a small saucepan, simmer reserved sauce 5 minutes; serve with meat.

An easy, tender, and delicious grilled rack of lamb. This recipe uses a garlic rosemary marinade for a robust, juicy flavor on the grill.

6 - 8 bone rack of lamb
1/2 cup olive oil
2 Tablespoons lemon juice (juice from 1/2 lemon)
4 - 5 cloves garlic
8 - 10 leaves fresh mint
1 tablespoon fresh rosemary leaves
1 teaspoon ground black pepper
2 teaspoons salt

Steps:

  • Combine 1/2 cup olive oil, juice from 1/2 lemon, 4 - 5 cloves garlic, 8 - 10 leaves fresh mint, 1 tablespoon fresh rosemary leaves, 1 teaspoon ground black pepper, and 2 teaspoons salt in a food processor until well blended.
  • Place the rack of lamb in a resealable bag. Pour in the marinade and rub all over the lamb to coat it. Seal the bag and let marinate, refrigerated, for at least for 4 hours and up to 24 hours.
  • Set a gas grill to high heat or prepare a coal grill. The rack of lamb has two sides - one where you see mostly bones and another where you see mostly meet. Grill lamb over direct high heat with the lid open and with the "mostly meat" side down for 4 minutes. Flip and cook the other side over direct heat for another 4 minutes.
  • Move lamb to indirect heat (see notes for how to cook on indirect heat on a gas grill). Put the lid on the grill. Cook for another 15 minutes or until an instant read thermometer reads 125° for medium rare.

1 leg of lamb (5 to 6 pounds)
3 garlic cloves, slivered
1/2 cup thinly sliced green onions
1/4 cup butter
1 jar (12 ounces) plum jam
1/2 cup chili sauce
1/4 cup white grape juice
1 tablespoon lemon juice
1/2 teaspoon ground allspice
1 tablespoon dried parsley flakes

Steps:

  • Remove thin fat covering from the roast. Make slits in meat; insert a garlic sliver in each. Place on a rack in a large roasting pan. Bake, uncovered, at 325° for 1-1/2 hours., Meanwhile, for plum sauce, in a medium saucepan, saute onions in butter until tender. Add the jam, chili sauce, grape juice, lemon juice and allspice; bring to a boil, stirring occasionally. Simmer, uncovered, for 10 minutes. , Baste roast with sauce. Bake 1 hour longer, basting occasionally, or until meat reaches desired doneness (for medium, a thermometer should read 140°; medium-well, 145°), basting occasionally with plum sauce. Bring the remaining sauce to a boil; stir in parsley. Let roast stand for 10-15 minutes before carving. Serve remaining sauce with roast.

1/2 cup honey
1/2 cup cherry preserves
2 teaspoons olive oil
1 teaspoon lime juice

Steps:

  • Place lamb on a greased foil-lined baking sheet. Drape a piece of heavy-duty foil over bones to prevent overbrowning. In a small bowl, combine the honey, preserves, oil and lime juice. Set aside 1/2 cup. A combination of sweet and tart plums will give a more interesting flavor.

Yield Makes 6 cups

Number Of Ingredients 7

4 pounds plums
1 tablespoon sugar
1 teaspoon kosher salt
Freshly ground pepper to taste
1 tablespoon balsamic vinegar
1 tablespoon olive oil
3 tablespoons fresh thyme leaves (about 15 sprigs)

Steps:

  • Heat oven to 250 degrees. Cut plums in half lengthwise and remove pits. Cut halves into 2-inch wedges. Place in a large mixing bowl and sprinkle with sugar, salt, pepper, vinegar, and oil. Toss to coat well.
  • Arrange plums on a parchment-lined baking sheet, cut sides up, about an inch apart. Sprinkle liberally with fresh thyme. Leave to dry in oven 3 hours. Turn off oven, and allow plums to remain inside at least 2 more hours or overnight. Plums will be wrinkled but still quite juicy when done.
