1 cup apple cider, divided
3 tablespoons cider vinegar
2 tablespoons olive oil
1 tablespoon minced shallot
1/2 teaspoon salt
2 tablespoons chopped fresh sage leaves, divided
1 pork tenderloin (about 1 lb.), cut in half crosswise
2 tablespoons butter

Steps:

  • Prepare a grill for medium heat (350° to 450°; you can hold your hand 5 in. above cooking grate only 5 to 7 seconds). Whisk together 1/2 cup cider, the vinegar, oil, shallot, salt, and 1 tbsp. sage in a large bowl. Add pork pieces to bowl and set aside.
  • When grill is hot, remove pork, reserving marinade, and cook, turning occasionally, until an instant-read thermometer inserted in center of meat reads 150°, about 20 minutes total. Transfer to a cutting board and tent with foil to rest.
  • Meanwhile, in a small saucepan, bring marinade and remaining 1/2 cup cider to a boil. Reduce heat and simmer until liquid is reduced by half, 6 to 7 minutes. During last minute, whisk in butter.
  • Cut pork into 1/4-in. slices, drizzle portions with sauce, and sprinkle with remaining sage.

2 tablespoons vegetable oil, such as soy, corn, or peanut
One 3-pound boneless center cut pork loin, trimmed and tied
Kosher salt and freshly ground black pepper
1 medium onion, sliced
1 carrot, sliced
1 stalk celery, sliced
3 cloves garlic, smashed
3 sprigs fresh sage
3 sprigs fresh thyme
1/2 cup dry white wine
1 cup chicken broth, homemade or low-sodium canned
1 to 2 tablespoons whole grain mustard
1 to 2 tablespoons unsalted butter, diced and chilled
About 4 cups applesauce, recipe follows
2 1/2 pounds tart red skinned apples, such as McIntosh
3 tablespoons sugar
1 tablespoon freshly squeezed lemon juice

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large ovenproof skillet heat the vegetable oil over medium-high heat. Season the pork loin all over generously with salt and pepper. Lay the loin, fat side down in the skillet, and cook until golden brown, about 2 minutes. Use tongs to turn the meat, and continue to brown it on all sides, about 2 to 3 minutes per side. Transfer the meat to a plate and set it aside.
  • Add the onion, carrot, celery, garlic, and herb sprigs to the skillet. Cook, stirring frequently, until the vegetables are softened, about 5 minutes. Remove the skillet from the heat and add the wine. Return the skillet to a high heat and scrape the bottom with a wooden spoon to loosen up any browned bits. Boil the wine until it is reduced by about half. Add the broth and bring to a boil.
  • Return the loin and any collected juices to the skillet. Transfer the skillet to the oven and roast the loin until an instant-read thermometer inserted into the center of the meat registers between 145 to 150 degrees F., about 40 minutes. (See Cooks Note.)
  • Transfer the pork to a plate, and cover it loosely with foil. Set it aside in a warm spot while you make a sauce.
  • Strain the cooking liquid through a fine mesh strainer into a small saucepan; press down on the vegetables with a wooden spoon to extract as much liquid as possible. Discard the solids. Boil the liquid over high heat until reduced by about a third. Reduce the heat to medium-low, whisk in the mustard, and then the bits of butter to enrich the sauce. Season with salt and pepper to taste. Keep warm but do not boil.
  • Remove the strings from the roast and then slice the loin. Add any collected juices to the sauce. Arrange the meat on a warm platter and season with salt and pepper. Pour the sauce over the meat. Serve with the applesauce on the side.
  • Remove the apple's stems. Coarsely chop the apples with their skin and seeds. Combine the apples, sugar, and lemon juice with 3 tablespoons of water in a large saucepan. Bring the mixture to a boil over high heat. Cover, and lower the heat to maintain a gentle simmer. Cook until the apples are completely soft, about 20 minutes.
  • Remove the lid and continue to cook (stir frequently to prevent scorching) until most of the liquid has evaporated, about 10 minutes more. Remove from the heat and cool slightly. Pass the apple mixture through a food mill; discard the peels and seeds. Serve warm or at room temperature. Refrigerate if not using immediately.

2 pork tenderloins, ((~2 lbs total), trimmed of fat and connective tissue)
1/4 cup olive oil
2 tsp lemon zest
1/4 cup chopped fresh sage
2 cloves garlic, (minced)
1 tbsp kosher salt
4 medium apples
2 tbsp olive oil
2 tbsp granulated sugar, (optional)
2 tbsp finely chopped fresh sage

Steps:

  • Put the trimmed tenderloins in a casserole dish or resealable bag. Add the marinade ingredients and mix well to coat the pork evenly. Let the pork marinate in the fridge for at least 2 hours, up to overnight.
  • One hour before dinner, take the pork out of the refrigerator and let it warm up on the counter.
  • Preheat the grill.
  • While the grill is preheating, core and slice the apples 1/4 inch thick. Then toss them with the oil, sugar, and sage.
  • Take the pork out of the marinade and pat it mostly dry, just so it doesn't have much of the marinade still on it. Put the pork on the grill, and cook it for 2-3 minutes, or until it has a good sear. Turn the pork over to sear the other side. Lay out the apple slices on the grill. Grill the pork and apples for 3 minutes. Turn over the apples. Then lower the heat to low, cover the grill and continue cooking until the the pork reaches 150-160F on the thermometer, depending on how pink you like your pork, about 10 minutes more.
  • Transfer the pork and apples to a serving platter. Slice the pork and sprinkle some fresh sage over. Serve.

2 (1 1/2 pound) pork tenderloins
2 teaspoons vegetable oil, divided
1 teaspoon sea salt
2 tablespoons vegetable oil, divided, or more as needed
3 Granny Smith apples - peeled, cored, and sliced into eighths
2 medium sweet onions, sliced vertically
1 tablespoon Dijon mustard
1 tablespoon fresh thyme leaves, divided
¼ teaspoon ground black pepper, or to taste
1 cup chicken stock
1 tablespoon butter

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Trim all silver skin from tenderloins; pat dry using paper towels. Rub 1 teaspoon vegetable oil over the surface of each tenderloin and rub with sea salt.
  • Heat 1 tablespoon vegetable oil in a large, oven-proof skillet over medium heat until it shimmers, about 1 minute. Place tenderloins into the skillet and cook, rotating to brown all sides, about 10 minutes. Transfer pork to a large plate.

1 lemon
4 x 140g pieces pork tenderloin
2 tbsp sage leaves, roughly chopped
3 eating apples , peeled, cored and chopped
1 rounded tsp light muscovado sugar

Steps:

  • Heat grill to high. Grate the zest from half the lemon and squeeze the juice from both halves. Split the pork fillet down the centre, cutting almost all the way through, and open out like a book. Lift onto a baking tray and season with salt, pepper and the lemon zest. Sprinkle with 1 tbsp of the sage. Grill for 8-10 mins, turning once, until cooked through.
  • Meanwhile, pour the lemon juice into a small pan. Add the apple to the pan with the remaining sage, sugar, salt and pepper. Bring to the boil, stirring, then simmer until soft, about 6 mins. Serve with your favourite green veg and potato wedges (recipe, top right).

2 -4 pork tenderloin
2 green apples, cored and sliced into ½ inch thick slices (do not peel)
3 red apples, cored and sliced into ½ inch thick slices (do not peel)
1 can apple juice concentrate
3 cloves garlic, crushed
1 teaspoon salt
1 teaspoon pepper
1/2 cup brandy
1/2 red onion, sliced into thin slivers
1/4 cup butter
7 tablespoons frozen apple juice concentrate
1 pint heavy cream
1/2 cup brandy
salt and pepper

Steps:

  • Mix together all marinade ingredients and pour over pork tenderloin.
  • Refrigerate pork in marinade for no more than 24 hours.
  • Discard marinade and grill pork until internal temperature reaches 155 degrees.
  • When pork is almost done cooking, place apples slices on grill and grill approximately 4 minutes per side.
  • Remove from apples and pork from grill, chop green apple slices into small pieces.
  • While pork is grilling, prepare sauce: In a medium saucepan, sauté onions in butter.
  • Add salt, pepper, apple juice concentrate, cream and brandy and bring to a boil, stirring constantly.
  • Reduce heat and simmer until sauce is reduced and thickened.
  • Add grilled, chopped green apple and continue to simmer a few more minutes.
  • Slice grilled pork into ½ inch slices.
  • Place on serving plate with red apple slices.
  • Top with cream sauce.

1 pinch garlic salt
1 pinch ground black pepper

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Generously season pork tenderloin with garlic salt and pepper.
