Number Of Ingredients 6

4 medium sweet potatoes (use any type yam or sweet potato)
2 teaspoons olive oil (or enough to coat)
4 tablespoons butter
1/8 cup brown sugar
1 teaspoon cinnamon
1/2 teaspoon ground ginger

Steps:

  • Wash & dry yams.
  • Coat outside with olive oil.
  • "Bake" in a medium hot grill 45-60 minutes or until done.
  • You can also bake in a preheated 400F oven.
  • While the yams are cooking, melt the butter in a small dish.
  • Add the sugar & spices and stir until combined.
  • Refrigerate until firm, serve with the yams.

I don't really like the traditional sweet potato casserole, but my son loves sweet potatoes, so I try to come up with different ways to cook them. This spring I tried grilling them. These are now a favorite of mine and my sons.

2 large sweet potatoes, cut into 1-inch cubes
2 tablespoons butter
2 tablespoons brown sugar
1 teaspoon ground cumin
¼ teaspoon cayenne pepper, or more to taste
salt and pepper to taste

Steps:

  • Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
  • Divide the sweet potato cubes in half, and place each half in the center of a rectangle of aluminum foil. Top each portion with about half of the butter. Sprinkle about half of the brown sugar, cumin, and cayenne pepper over each portion. Season with salt and pepper. Fold the corners of the aluminum foil together and seal to form a pouch around each portion.
  • Cook on the preheated grill, turning pouches every 10 minutes, until the potatoes are tender and cooked through, 20 to 30 minutes.

My husband never liked yams until I served them to him this way. The yams create their own glaze on the grill. You can add more herbs and spices to suit your own taste.

1 large yam, peeled and cut into 1/2 inch thick slices
olive oil-flavored cooking spray
salt to taste
1 tablespoon butter

Steps:

  • Preheat a grill for high heat. When the grill is hot, lightly oil the grate. Coat the strips of yam with olive oil cooking spray and season with salt.
  • Arrange the yam strips on the grate crosswise so they don't fall through. Cook for 10 to 12 minutes per side, until tender and glazed. Serve with butter.

2 tablespoons butter, softened
Garlic salt and pepper to taste
2 teaspoons honey

Steps:

  • Cut two pieces of heavy-duty foil (about 18 in. x 12 in.); place a potato half on each. Spread cut side with butter. Sprinkle with garlic salt and pepper. Top each potato with another half. 3 tablespoons mild-flavored (light) molasses
1 teaspoon ground cinnamon
1 teaspoon grated orange peel
1 teaspoon chili powder
1/4 teaspoon salt
1/8 teaspoon cayenne pepper
6 9- to 10-ounce yams (red-skinned sweet potatoes)

Steps:

  • Using electric mixer, beat first 7 ingredients in medium bowl until fluffy. (Can be prepared 1 week ahead. Cover and chill. Bring to room temperature before using.)
  • Preheat oven to 350°F. Line large baking sheet with heavy-duty foil. Using small, sharp knife, make one 1/2-inch-deep lengthwise slit in each yam, leaving 1 inch of yam uncut at each end. Place yams on baking sheet. Bake yams until tender, about 1 hour 15 minutes.
  • Cut slits across center of each yam. Press ends toward center to expose flesh. Transfer yams to platter. Spoon 1 tablespoon spiced butter into each. Pass remaining spiced butter separately.
