GRILLED PORTOBELLO SANDWICH WITH ROASTED RED PEPPER AND MOZZARELLA
I had this once in a restaurant, and have spent a while trying to recreate it. Please enjoy.

Steps:
- Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
- Place the red bell pepper onto the preheated grill, and grill until the skin is completely charred on all sides, 10 to 15 minutes. Place the pepper into a paper bag, seal the bag, and let the pepper cool. When cooled, remove the charred skin, slice the pepper into quarters, and remove the seeds. Thinly slice the pepper and set aside.
- Mix salt and pepper into the olive oil in a small bowl. Brush the smooth side of the mushrooms with the seasoned oil, and grill, oiled side down, until the mushrooms show grill marks, about 3 minutes. Brush the gill sides of the mushrooms with more seasoned olive oil, flip the mushrooms, and grill until the mushrooms are softened and juicy, about 3 more minutes. Set the mushrooms aside and keep warm.
- Lightly grill the slices of onion until softened and lightly browned, about 2 minutes per side. Spread the rolls out onto the grill to toast, about 1 minute. Mix the mayonnaise and roasted garlic in a bowl.
- Spread each roll with garlic mayonnaise, and make each sandwich with 1 mushroom cap, 1 ounce sliced mozzarella cheese, 1 slice of tomato, 4 basil leaves, 1 slice of grilled onion, and 1/4 the roasted red pepper slices. Repeat for remaining sandwiches.

GRILLED PEPPERONI & MOZZARELLA CHEESE PIZZA SANDWICH
I had some leftover pepperoni and mozzarella and didn't want the usual type pizza. So, I took the mentioned ingredients, added a few more and used a couple of slices of Recipe#346173 (You can use you favorite Italian Bread, this is just was on hand ) The ingredients that were used in this recipe is what was on hand, please feel free to add your favorites.If you add another type of meat,please make sure meats are cooked completly.

Steps:
- Take one slices of bread and butter one side, place in skillet and spread pizza sauce on the unbuttered side of bread.
- Add half the cheese over the sauce, speading evenly.
- Sprinkle with seasoning, and crushed red pepper flakes,if using extras and them at this time.
- Top the seasoned cheese with the chopped pepperoni,and cover pepperoni with remaining cheese.
- Take remaining side of bread, butter one side and place unbuttered side on top of the cheese.
- Grill sandwich over medium heat on each side ( be careful when turning over so you won't lose the filling ) until golden brown.

- Lay one-fourth of the mozzarella between 2 slices of bread and close. Repeat with the remaining bread slices.
- In a small shallow baking dish, whisk together the eggs and milk. Season with salt and pepper to taste.
- Meanwhile, in a large nonstick skillet, heat the olive oil over medium-high heat until hot. Dust 1 sandwich with flour, dip it in the egg mixture, then add it to the pan. Fry about 3 minutes on each side, until the outside is golden and crisp, but not burned, and the mozzarella is completely melted. Remove the sandwich from the pan, then repeat with the other 3 sandwiches. Cut each sandwich in half and serve.

- Split each roll, and layer with the mozzarella and prosciutto.
- Spread the top slices with the fig jam, then close up to form sandwiches.
- Lightly butter the outside of each sandwich.
- Heat a heavy nonstick skillet or panini press over med-high heat.
- Place the sandwiches in the pan, working in two batches depending on the size of the pan.
- Press the sandwiches or close the grill and brown, turning once or twice, until the bread is crisp and the cheese is melted; **you can press the sandwiches by weighting them with something heavy-such as a skillet or wide-bottomed saucepan.
- Though the rolls start off as round, once pressed they are considerably flatter and can easily be turned, if careful.
- Serve right away, cut on the diagonal.
