Festival-Style Grilled Italian Sausage Sandwiches image

These delicious grilled sausage sandwiches are my attempt to duplicate the ones I ate when I was growing up and attended Italian street festivals in the North End of Boston. They come together really quickly, and make a great summer lunch. Choose hot or mild sausages as you prefer.

4 (4 ounce) links hot Italian sausage
1 red bell pepper, halved and seeded
1 small onion, peeled and cut in half crosswise
2 teaspoons olive oil
salt and pepper to taste
1 tablespoon olive oil
4 (6 inch) sandwich rolls, split and toasted

Steps:

  • Preheat an outdoor grill for medium heat. Lightly oil grate, and set 4 inches from the heat.
  • Pierce the sausages in a few places with a fork, and set aside. Slice off the bottoms of the onion halves so they will sit flat on the grill. Brush the bell pepper and onion halves with 2 teaspoons of olive oil.
  • Place the sausages, onions, and peppers on the preheated grill. Cook and turn the sausages until well browned and juices run clear. Cook vegetables until tender and peppers are slightly charred. Remove vegetables and sausages from the grill.
  • Place the peppers in a paper bag, close, and cool slightly. Remove and discard the charred skin from the peppers; slice peppers into strips. Slice the onion halves. Place salt and pepper to taste, and 1 tablespoon olive oil in a bowl. Add the peppers and onions, and toss until evenly coated. To serve, place sausages in sandwich rolls, and top with the pepper and onion mixture.

4 large green peppers, thinly sliced
1/2 cup chopped onion
2 tablespoons olive oil
4 garlic cloves, minced
1 can (15 ounces) tomato sauce
1 can (12 ounces) tomato paste
1 cup water
1 tablespoon sugar
2 teaspoons dried basil
1 teaspoon salt
1 teaspoon dried oregano
20 uncooked Italian sausage links
20 sandwich buns
Shredded part-skim mozzarella cheese, optional

Steps:

  • In a large saucepan, saute peppers and onion in oil until crisp-tender. Add garlic; cook 1 minute longer. Drain. Stir in the tomato sauce, tomato paste, water, sugar, basil, salt and oregano. Bring to a boil. Reduce heat; cover and simmer for 30 minutes or until heated through. , Meanwhile, grill sausages, covered, over medium heat for 10-16 minutes or until a thermometer reads 160°, turning occasionally. Serve on buns with sauce and cheese if desired.

I came up with this recipe for my niece. I combined grilled cheese sandwiches with garlic bread. Its tasty, its quick and its the perfect appetizer for friends, family and unexpected guests. Use a firm white bread for best results.

¼ cup unsalted butter
⅛ teaspoon garlic powder
12 slices white bread
1 teaspoon dried oregano
1 (8 ounce) package shredded mozzarella cheese
1 (24 ounce) jar vodka marinara sauce

Steps:

  • Preheat your oven's broiler.
  • Place 6 slices of bread onto a baking sheet. Spread a small handful of the mozzarella cheese over each slice. Top with the remaining 6 slices of bread. Mix together the butter and garlic powder, brush some over the tops of the sandwiches, or spread with the back of a tablespoon. Sprinkle with dried oregano.
  • Place baking sheet under the broiler for 2 to 3 minutes, until golden brown. Remove pan from oven, flip sandwiches, and brush the other sides with butter, and sprinkle with oregano. Return to the broiler, and cook until golden, about 2 minutes.
  • Cut sandwiches in half diagonally, and serve immediately with vodka sauce on the side for dipping.

1 small sweet yellow pepper, julienned
1 small sweet red pepper, julienned
1 small green pepper, julienned
1 tablespoon olive oil
1/8 teaspoon salt
Dash pepper
1/2 cup butter, softened
1 tablespoon prepared mustard
2 teaspoons minced chives
1 garlic clove, minced
1/4 teaspoon crushed red pepper flakes
1 loaf (18 ounces) unsliced Italian bread
6 ounces sliced provolone cheese
1/3 pound thinly sliced hard salami
6 ounces sliced cheddar cheese
1/3 pound sliced deli roast beef

Steps:

  • In a large skillet, saute peppers in oil just until tender. Sprinkle with salt and pepper. Meanwhile, in a small bowl, combine the butter, mustard, chives, garlic and pepper flakes., Cut bread into 1/2-in. slices, leaving slices attached at the bottom. Cut loaf through the two center slices, separating loaf into two halves. Cut off and discard end slices. Place each loaf on heavy-duty foil coated with cooking spray. Spread butter mixture between every other slice. Alongside buttered slices, insert cheese, meat and peppers, using provolone cheese and salami in one loaf and cheddar cheese and roast beef in the other., Wrap each loaf tightly in foil; place on grill rack. 1 loaf ciabatta (1 pound)
Extra-virgin olive oil, for brushing
1/2 cup olive tapenade
4 ounces sliced provolone
8 ounces low-moisture mozzarella (such as Polly-O), thinly sliced
1 cup thinly sliced roasted red peppers
1 jar (12 ounces) marinated artichoke hearts, drained and chopped
4 ounces thinly sliced spicy salami
2 cups baby arugula

Steps:

  • Preheat oven to 375°F. Split bread horizontally; scoop out soft interior and reserve for croutons or breadcrumbs (see cook's note). Brush inside of each bread half with oil. Bake, cut-side up, until toasted, about 7 minutes. Let cool completely. Spread tapenade on bottom half of bread; add provolone and mozzarella. Top with peppers, artichokes, and salami. Scatter top with arugula. Top with other bread half; press to sandwich.
  • Wrap tightly with foil. Place a heavy skillet on top; weigh down with canned goods. Refrigerate at least 1 hour and up to 8 hours.

1 medium red apple
1 tablespoon olive oil
1/3 cup Dijon mustard
1 teaspoon oregano
6 fresh Italian sausages
6 bratwurst sandwich buns

Steps:

  • Slice the onion thinly and separate into rings. Core the apple and slice thinly. Mix mustard and oregano together. Prick sausages in several places with a fork.
  • In a medium bowl toss the onions, apple, and olive oil. Fold a 36x18" sheet of heavy foil in half. Place onion/apple mixture on the foil. Fold edges together and crimp to seal.
  • Heat the grill to medium heat (direct). Place foil packet on grill; close and grill for 10 minutes.

8 slice small sandwich or cocktail bread
2 slice pancetta, sliced in half
2 slice deli-style mozzarella cheese, halved
8 Tbsp grated Parmesan cheese, divided
2 roasted red bell peppers from jar, sliced and patted dry
butter

  • 1. In a small skillet, cook pancetta until crisp. Drain on a paper-towel-lined plate; set aside.
  • 2. Heat medium-sized skillet on medium-high heat. While skillet is heating, assemble sandwiches. Place one slice of mozzarella cheese on bread heel.
  • 3. Top with pancetta, 2 Tbsp Parmesan cheese (per sandwich).
  • 4. Then place the sliced roasted red peppers.
  • 5. Place other half of bread slice on top. Butter the tops of the sandwiches.

  • 7. Place sandwiches in the skillet with buttered tops facing up.

1 loaf crusty boule, sliced into 1/2-inch-thick slices (8 total slices)
4 tablespoons (1/2 stick) unsalted butter, at room temperature
1/2 cup red pepper jelly
1 pound mortadella, thinly sliced
8 ounces Toma cheese, grated on the large holes of a box grater
8 ounces fontina cheese, grated on the large holes of a box grater

Steps:

  • Heat a griddle or large heavy skillet over medium heat.
  • Lay each slice of bread onto a clean work surface. Spread each slice evenly with the butter and flip over. Spread the other side of each slice of bread with 1 tablespoon red pepper jelly. Divide the mortadella between 4 slices. Top the mortadella with the Toma and fontina cheeses. Cover the sandwiches with the remaining bread slices, butter side up.
  • Place 2 sandwiches on the griddle. Cook until the bottoms are golden, 3 to 4 minutes. Flip and cover the skillet with a metal bowl to allow the cheese to melt, about 2 to 3 minutes longer.
