1/2 cup chopped fully cooked ham
1/2 cup chopped broccoli florets
1/2 cup chopped celery
1/2 cup mayonnaise or salad dressing
1 tablespoon chopped fresh chives
2 teaspoons chopped fresh or 3/4 teaspoon dried marjoram leaves
1/4 teaspoon onion salt
3 hard-cooked eggs, chopped
Lettuce leaves
8 slices herb or whole wheat bread

Steps:

  • In medium bowl, mix all ingredients except lettuce and bread.
  • Place lettuce leaf on 4 of the bread slices. Spoon egg mixture onto lettuce. Top with remaining bread.

This is a twist on traditional ham salad recipes for those of you who prefer dill pickles over sweet. Serve on pumpernickel bread with fresh alfalfa sprouts!

4 (1/4 inch thick) slices ham
4 hard-boiled eggs, peeled and chopped
3 stalks celery, minced
1 ½ cups light mayonnaise
½ cup dill pickle relish
¼ cup minced onion
2 tablespoons Dijon mustard
ground black pepper to taste

Steps:

  • Shred the ham using the shredding blade on a food processor.
  • Stir shredded ham, chopped eggs, celery, light mayonnaise, relish, onion, Dijon mustard, and black pepper together in a large bowl.
  • Refrigerate 2 hours before serving.

1-1/3 cups diced fully cooked ham
1-1/3 cups diced cooked chicken
1/2 cup diced celery
1 can (8 ounces) crushed pineapple, drained
1/3 cup mayonnaise
3 tablespoons chopped pecans
4-1/2 teaspoons chopped green pepper
1 teaspoon sliced green onion
1/4 teaspoon salt
Dash pepper
16 slices bread
8 slices mozzarella cheese
6 tablespoons butter, softened

Steps:

  • In a bowl, combine the first 10 ingredients. Spread eight slices of bread with ham mixture (about 1/2 cup each). Top with cheese and the remaining bread. Spread butter on outsides of sandwiches. Cook on a griddle or in a large skillet over medium heat until golden brown on both sides.

Jude's Grilled Ham and Egg Sandwich image

I love this sandwich that is a signature dish at Denney's, Moon Over My Hammy. Like most things, it is much more economical to make at home and even, dare I say, better! I originally grilled this in butter, but after reading Dawnab's recipe for Grilled Cheese Diner Style, I will only grill sandwiches in mayo. You can use whichever you like best. This is great for a Sunday morning breakfast with fresh fruit.

2 slices sourdough bread
4 slices shaved deli ham
1 slice swiss cheese
1 slice American cheese
1 egg, scrambled as you like
1 tablespoon mayonnaise or 1 tablespoon butter, for grilling

Steps:

  • Heat grill or skillet to medium.
  • Spread one side only of each slice of bread with half of either mayo or butter. Place one slice in skillet spread side down.
  • Layer Swiss cheese, ham, scrambled egg and American cheese, in order, on plain side of bread in skillet. Top with other slice, spread side up.
  • Cook for about three minutes or until crispy and brown. Turn and cook until brown and cheese is melted.
  • As Dawnab advised, if using mayonnaise, do not substitute Miracle Whip, it will not work.
