2 large onions, halved and thinly sliced
2 teaspoons ancho chile powder
1/2 teaspoon ground cinnamon
1/2 cup ketchup
1/4 teaspoon hot sauce
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
6 cloves roasted garlic, coarsely chopped
3 grilled red peppers, peeled, seeded and diced
3 tablespoons extra-virgin olive oil
2 tablespoons red wine vinegar
3 tablespoons finely chopped fresh flat-leaf parsley, plus leaves for garnish
Kosher salt and freshly ground black pepper
Dijon mustard
8 all-beef kosher hot dogs
Canola oil
Freshly ground black pepper
Soft poppy seed or regular hot dog buns

Steps:

  • For the onion sauce: Heat the oil in a medium saucepan over medium heat. Add the onions and cook until soft, about 5 minutes. Stir in the chile powder and cinnamon and cook for 1 minute. Add 1 cup water, the ketchup, hot sauce, salt and black pepper and bring to a simmer. Cook until thickened and the onions are very soft, adding more water if needed, about 25 minutes. Transfer to a bowl and let cool to room temperature before serving.
  • For the grilled pepper relish: Combine the garlic, peppers, oil, vinegar and parsley in a bowl and season with salt and pepper. Cover and let sit at room temperature for at least 30 minutes before serving.
  • For the hot dogs: Heat a grill to high for direct grilling. Brush the dogs with oil and sprinkle with pepper. Grill until slightly charred and golden brown on all sides, about 6 minutes. Put the hot dogs in the buns and top with mustard, onion sauce and grilled pepper relish.

1 1/2 cups cider vinegar
1 teaspoon mustard seeds
1 teaspoon coriander seeds
2 tablespoons sugar
8 large dill pickles (sour, not half-sour), finely diced
1 small red pepper, grilled, peeled, seeded, and finely diced
1 small yellow pepper, grilled, peeled, seeded, and finely diced
1 small white onion, finely diced
2 tablespoons chopped fresh dill

Steps:

  • Heat grill to high. Grill the hot dogs until golden brown on all sides. Place in buns and top with your favorite mustard and the Homemade Pickle Relish.
  • Bring vinegar, mustard seeds, and coriander seeds to a boil in a medium non-reactive saucepan on the grates of the grill; cook until reduced by half and slightly syrupy. Remove from the heat, add the remaining ingredients, and gently toss to coat. Season with salt and pepper, to taste. Cover and refrigerate for at least 1 hour before serving.

1 teaspoon ketchup
1 teaspoon Dijon mustard
4 large hot dogs, knockwurst or 4 large kielbasa
1/2 ounce cheddar cheese, cut into long sticks
2 tablespoons chopped onions
1 cup refrigerated sauerkraut, squeeze to drain, roughly chopped
4 slices bacon
vegetable oil
4 long hot dog buns

Steps:

  • Prepare your grill for direct medium high heat.
  • Mix together the ketchup and mustard in a small bowl. In a separate bowl, mix the sauerkraut with the chopped onion, set aside. Slice open the hot dogs, down the center, lengthwise, forming a deep pocket in each, but not cutting all the way through. Coat the inside of each hot dog with the mustard ketchup mixture.
  • Place a strip of cheese deep within the pocket of each hot dog. Top with sauerkraut and onions. Encapsulate the cheese at the ends with the sauerkraut mixture as well, so that no cheese is exposed (otherwise it will drip out when cooking).
  • Wrap a strip of bacon around each stuffed hot dog, securing with toothpicks at each end. Make sure you wrap tight enough so that the stuffing stays in, but not so tight so that when the hot dog expands will cooking the bacon would tear.
  • Coat your grill surface with vegetable oil so that the hot dogs don't stick. If you have a grill screen (a screen with smaller holes so that small pieces of whatever you're cooking don't fall through the grill), you can use it, just coat it with vegetable oil first and pre-heat for a couple of minutes. Place the stuffed hot dogs on the grill, stuffing side down. Grill for 2 minutes, until the bacon on that side is cooked, turn the hot dogs a quarter turn and grill for a couple more minutes. Continue to grill for a few minutes each on all sides until the bacon is cooked. Cover the grill in between turnings to help with the cooking.
  • During the last minute of cooking, open up the hot dog buns and place them open-side down on the grill to lightly toast.
  • Remove the hot dogs and buns from the grill. Remove the toothpicks from the hot dogs, place them in the buns and serve.

1/2 cup thinly sliced sweet onion, such as Vidalia
6 tablespoons thinly sliced sweet-hot red peppers, such as Peppadew
1/2 cup mayonnaise
1/4 cup Dijon mustard
2 baguettes, ends trimmed
6 hot dogs (preferably nitrate-free)
Safflower oil, for grill

Steps:

  • Combine cornichons and liquid, onion, and peppers. Let relish sit 30 minutes, or refrigerate up to 2 hours.
  • Stir together mayonnaise and mustard, and refrigerate if not using immediately.
  • Slice baguettes horizontally but not all the way through so they open like a book (or a hot dog bun). Cut each baguette into pieces the same length as hot dogs.

1 tablespoon diced pickled cherry peppers in jar
1 tablespoon diced pickled jalapenos
1 tablespoon pickled jalapeno juice
8 natural casing all-beef franks
8 Pretzel Hot Dog Buns, recipe follows
1/4 cup pickled jalapenos, chopped for garnish, optional
1 cup milk
1/4 cup light brown sugar
2 tablespoons honey
1 packet active dry yeast
2 tablespoons unsalted butter
2 small cloves garlic, grated
3 cups all-purpose flour, plus more for dusting
1 cup bread flour
1/2 cup baking soda
Pretzel salt or coarse ground sea salt, for sprinkling

Steps:

  • For the cheese sauce: Add the cheese cubes, milk, pickled cherry and jalapeno peppers and jalapeno juice to a small saucepot and cook over low heat until melted and combined, 10 to 15 minutes, stirring occasionally.
  • For the franks: Heat a grill pan over medium-high heat. Grill the franks on the grill pan, making sure to turn and char on all sides. Cook for 4 to 5 minutes.
  • For the sandwich build: Split the Pretzel Hot Dog Buns in half, nestle the grilled franks in their pretzel blankets, pour over some spicy cheese sauce and top with some pickled jalapenos if you like. Enjoy!
  • In a small saucepan, heat the milk, 1/2 cup water, sugar and honey to 105 to 110 degrees F. Add to the bowl of a stand mixer. Sprinkle the yeast over the water mixture and wait for at least 10 to 15 minutes until the yeast blooms.
  • In a separate saucepan over medium heat, add the butter and garlic and cook until the butter is melted and the garlic is fragrant, 2 to 3 minutes.
  • Combine the all-purpose flour and bread flour in a mixing bowl.
  • Add the flour mixture to the bowl with the blooming yeast, and then add in the melted butter and garlic mixture. Mix on medium speed until the dough has come together and is smooth and elastic in texture and pulling away from the sides of the bowl, 5 to 7 minutes.
  • Line 2 baking sheets with silicone mats.Turn the dough out onto a lightly floured cutting board and form into a ball. Cut into 4 equal pieces, and then cut those in half to form 8 equal pieces. Using your hands, roll each piece into a ball and place onto a prepared baking sheet. Cover with a dish cloth and let them rest in a warm place for 12 to 15 minutes.
  • Once rested, lightly dust your work surface again and roll the balls into 7-inch logs. Place onto the other prepared baking sheet, cover, place back in the warm spot and let rest for an additional 30 minutes.
  • Preheat the oven to 425 degrees F. Place one oven rack high and one low. Line 2 more baking sheets with silicone mats or parchment paper.
  • In a large pot, bring 8 cups water to a boil, and then add the baking soda. In batches, place the dough in the water and cook for 30 seconds on each side.
  • Using a slotted spatula, remove the logs and place onto the prepared baking sheets. Sprinkle the logs with pretzel salt as they come out of the water, to ensure the salt sticks. Then cut 3 diagonal slits on top of the bread, not too deep.
  • Bake for 10 to 13 minutes, rotating between the top and bottom racks of the oven halfway through the cooking.

1/3 cup coarsely chopped cilantro, plus 3 tablespoons whole leaves

Steps:

  • Combine carrots, maple syrup, soy sauce, adobo sauce, and 1 cup water in a deep, large saucepan. Cover and cook over medium-high heat 10 minutes. Uncover, reduce heat to medium-low, and continue to cook, shaking pan occasionally, until liquid is completely reduced and carrots are coated in glaze, 2-3 minutes more.
  • Meanwhile, whisk honey, salt, pepper, 1/2 cup mayonnaise, and 3 Tbsp. lime juice in a large bowl until smooth. Thinly slice half of onion to yield about 1/4 cup. Add onion, cabbage, beans, and 1/3 cup cilantro to bowl and stir to combine.

4 OSCAR MAYER Jalapeño Dogs
4 hot dog buns
1/2 cup chopped peeled jicama
1 large plum tomato, seeded, chopped
2 green onions, sliced
3 Tbsp. KRAFT Real Mayo
1 tsp. chili powder
1/2 tsp. lime juice
1/2 cup tightly packed shredded lettuce

Steps:

  • Heat grill to medium heat.
  • Grill hot dogs 7 min. or until heated through, turning occasionally and adding buns, cut sides down, to grill for the last few minutes.
  • Meanwhile, combine jicama, tomatoes and onions in medium bowl. Mix mayo, chili powder and lime juice until blended. Add to jicama mixture; mix lightly.
  • Fill buns with hot dogs, lettuce and jicama slaw.

DR PEPPER BARBECUE SAUCE
1 medium yellow onion, peeled and cut into large chunks
4 Tbsp unsalted butter
2 clove fresh garlic, finely minced
1 (12-oz) can(s) dr pepper soda
1 cup ketchup
1/2 cup brown sugar, lightly packed
1/2 cup apple cider vinegar
1/4 cup worcerstershire sauce
3 Tbsp tomato paste
2 tsp ancho chili powder
1 tsp white pepper
1 tsp salt (kosher salt recommended)
ADDITIONAL (OPTIONAL) INGREDIENTS
8 hot dogs (beef or pork)
8 hot dog buns, lightly buttered and toasted

Steps:

  • 1. In a food processor, blend the onion until very finely chopped.
  • 2. Add chopped onion to a medium saucepan, add butter, and cook over medium heat for about 5 minutes, stirring frequently. Add garlic and cook 1 minute more.
  • 3. Add all remaining sauce ingredients to saucepan over medium heat, stirring frequently, for about 5 minutes or until heated through. Reduce heat to low, cover saucepan with lid, and let the sauce simmer for 15 minutes.
  • 4. Remove lid, and cook for 15 to 20 minutes longer with lid off, so sauce thickens. Remove pan from heat and let sauce cool completely. Once cooled, use an emersion blender (or place sauce in a standard blender) to blend the sauce for a few seconds to help it thicken. Then transfer sauce to an air-tight container and keep in refrigerator until ready to use. (It should keep in the refrigerator for several months if kept covered, so you can use leftovers for other BBQ picnics.)
  • 5. HOW TO USE THE SAUCE: Brush a generous amount of sauce on hot dogs during the last 2 to 3 minutes of grilling time. When serving the grilled hot dogs, pass the extra sauce so you can spoon a little more sauce onto the grilled hot dogs after they're nestled inside buttered, toasted buns.

Grilled Shrimp Dogs with Grilled Vegetable Relish image

These simple "shrimp dogs" have just two ingredients-shrimp and mayonnaise. You can shape the dogs and make the relish the day before you plan to serve them and refrigerate overnight.

1 pound large shrimp, peeled, deveined and tails removed
1/4 cup mayonnaise
Kosher salt and freshly ground black pepper
8 grape tomatoes
1 small red onion, cut into 1/2-inch rounds
1 large dill pickle, sliced lengthwise 1/4-inch thick
3 tablespoons extra-virgin olive oil, plus more for oiling the grill grates
2 tablespoons dill pickle brine
4 hot dog buns

Steps:

  • Combine half of the shrimp, 2 tablespoons of mayonnaise, 1/4 teaspoon of salt and a pinch of black pepper in the bowl of a food processor and process until mostly smooth. Add the remaining shrimp and pulse until the shrimp is mostly chopped into large pieces. Carefully transfer the shrimp mixture onto a parchment-paper-lined sheet tray. Wet your hands and lightly form the shrimp mixture into a disc (wetting your hands will prevent the shrimp mixture from sticking to them). Divide the disc into 4 equal amounts. Use your hands to form the mixture into 4 sausages or "shrimp dogs" approximately 6 inches long and 1 inch wide, wetting your hands as needed. Cover with plastic wrap and refrigerate while you make the grilled vegetable relish.
  • Prepare a grill or large grill pan for medium-high heat. Thread the tomatoes onto the wooden skewer, leaving only 1/2 inch of the skewer revealed on each end. (This prevents the skewer from having to be soaked in water before grilling.) Put the skewered tomatoes onto a baking sheet along with the onions and pickle slices. Brush all of the vegetables liberally with 1 tablespoon oil and sprinkle liberally with salt and pepper.
  • Lightly oil the grill grates. Arrange the skewered tomatoes, onions, and pickle slices on the hot grill. Cook until the tomatoes are lightly charred in spots and have started to burst, 6 to 8 minutes, using a pair of tongs to rotate the tomatoes occasionally so that they cook evenly. Cook the onions until lightly charred and the flesh is tender, 6 to 8 minutes total. Cook the pickle slices until lightly charred and have distinct grill marks, 6 to 8 minutes. Transfer the grilled vegetables to the same baking sheet that they were on before.
  • Cool the vegetables slightly before quartering the tomatoes and chopping the onions and pickle slices into small pieces. Place the cut vegetables into a medium mixing bowl. Add 1 tablespoon of oil and the pickle brine. Stir to combine and season to taste with salt and pepper. Reserve.
  • Remove the shrimp dogs from the refrigerator and brush them liberally with the remaining tablespoon extra-virgin olive oil. Sprinkle lightly with salt and pepper. Use your hands to carefully arrange the shrimp dogs on the grill and cook until lightly charred on all sides and just cooked through, 6 to 8 minutes total, using a pair of tongs to rotate the shrimp dogs as they cook. You will know that they are cooked through when the texture turns from soft to springy and a cake tester inserted through the center comes out hot to the touch. Transfer to a plate or baking sheet.
  • Gently open up each of the 4 hot dog buns, being careful not to unhinge them. Arrange the hot dog buns cut-side down on the grill and cook until lightly charred and warmed through, about 1 minute. Smear the inside of the grilled buns with the remaining 2 tablespoons mayonnaise.
  • Place a shrimp dog on each hot dog bun then spread a spoonful of the reserved relish on top of each. Serve with any remaining relish on the side.

1 (11 1/2 ounce) can pillsbury refrigerated cornbread twists dough
1 tablespoon prepared mustard

  • Heat grill. Sprinkle cornmeal on sheet of waxed paper. Unroll dough on cornmeal; press crosswise perforations to seal. Spread dough with mustard.
  • Separate dough into 8 long dough strips. To make each corn dog, coil 1 dough strip around each hot dog. Insert metal skewer lengthwise through hot dog, securing dough on each end.

Steps:

  • Set up the BBQ so it has hot heat on one side, medium heat in the middle then indirect heat on the other side.
  • Place the hot dogs over the hot heat first and bunch them together so they hold each other in the same place.
  • Wait until they have coloured (about 5 minutes) then place them over the indirect heat, close the lid and turn the outdoor grill into an outdoor oven and cook them all the way through (10-15 minutes).
  • While that's happening, slice the buns open, brush with oil and place over heat until toasted.
