TUSCAN GRILLED CORNISH HENS



Tuscan Grilled Cornish Hens image

2 Cornish hens, flattened
Kosher salt
1/3 cup good olive oil
2 teaspoons grated lemon zest (2 lemons)
1/3 cup freshly squeezed lemon juice
1 tablespoon minced garlic (3 cloves)
1 tablespoon minced fresh rosemary leaves
Freshly ground black pepper
1 lemon, halved
Fleur de sel, for serving

Steps:

  • Sprinkle the Cornish hens with 1 teaspoon salt on each side.
  • Combine the olive oil, lemon zest, lemon juice, garlic, rosemary, and 1 teaspoon pepper in a ceramic or glass dish just large enough to hold the flattened hens. Add the hens, and turn to coat. Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight, turning once or twice.
  • When ready to grill, prepare a hot charcoal fire on one side of a grill (or turn a gas grill on low heat). Spread 1/4 of the coals across the other side of the grill. Place the hens on the cooler side skin-side up and weigh them down with a gratin dish with a foil-wrapped brick inside.
  • Cook for 12 minutes, until the underside is golden brown. Turn the hens skin-side down, weigh them down again, and cook for another 12 minutes until the skin is golden brown and the hens are cooked through.
  • Place the lemon halves on the cool side of the grill, cut-side down, for the last 10 minutes of cooking. Remove the Cornish hens and lemons to a plate or cutting board, cover with aluminum foil, and allow to rest for 5 minutes. Cut the hens in half, sprinkle with fleur de sel, and serve with the grilled lemon halves.

2 green onions, finely chopped
2 tablespoons minced fresh parsley
2 tablespoons grated fresh gingerroot
3 garlic cloves, minced

Steps:

  • In a small bowl, combine the butter, onions, parsley, ginger, garlic, 1/2 teaspoon salt and 1/4 teaspoon pepper. , Rub mixture under the skin and over the top of each game hen. Sprinkle remaining salt and pepper inside the hen cavities. , Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. ½ onion, chopped
2 cloves garlic, peeled and chopped
1 cup lemon juice
½ cup olive oil
1 tablespoon white wine
1 teaspoon Worcestershire sauce
1 teaspoon hot pepper sauce
1 tablespoon pepper
1 teaspoon celery salt
1 teaspoon salt
4 (1 1/2 pound) Cornish game hens

Steps:

  • In a large, non-reactive bowl, mix onion, garlic, lemon juice, olive oil, white wine, Worcestershire sauce, hot pepper sauce, pepper, celery salt, and salt. Place Cornish game hens in the bowl, coating evenly with the marinade mixture. Cover, and marinate in the refrigerator at least 4 hours.
  • Preheat an outdoor grill for medium heat, and lightly oil grate.

Grilled cornish hens are elegant showstoppers and so easy to make with a simple marinade. This 30-minute recipe is for both casual and fancy dinners!

4 x 1 - 1.5 lb whole cornish hens (thawed)
3 tablespoons olive oil
2 tablespoons fresh lemon juice
4 cloves garlic (minced)
1 tablespoon grated ginger
1 tablespoon chopped parsley
1 teaspoon salt
½ teaspoon ground black pepper

Steps:

  • Pat the chicken dry with a paper towel and place the Cornish hens skin side down on a cutting board.
  • Using kitchen shears cut along one side of the backbone from the tail towards the neck. Cut along the other side of the backbone to remove it completely.
  • Turn the hen over and bend the legs so they face outward. Using two hands, press down firmly on the breast until you hear the breastbone cracking. Repeat with the remaining birds.
  • Add olive oil, lemon juice, garlic, ginger, parsley, salt, and pepper to a large bowl or large Ziploc bag and mix everything together. Add in the hens and use your hands to move everything around making sure they are coated well in the marinade.
  • Preheat half the grill to 350°F/180°C. Clean and oil the grilling grates to help prevent the birds from sticking.
  • Place the hens skin side up over the heat/coals and brush them with the remaining marinade. Cover and cook for 5 minutes then flip and cook for another 15-25 minutes.
  • Remove from the grill and serve.

1 1/2 lbs Cornish hens (2 hens)
1 teaspoon vegetable oil
1 1/2 cups low sodium chicken broth
3/4 cup sliced onion
1/2 cup Burgundy wine or 1/2 cup dry red wine, divided
1 garlic clove, thinly sliced
1 bay leaf
1/4 cup fresh lemon juice
2 tablespoons peeled grated gingerroot
1 garlic clove, minced
vegetable oil cooking spray
1 cup fresh raspberry, divided
1 tablespoon water
1 teaspoon cornstarch
2 tablespoons chopped fresh parsley
2 teaspoons sugar
1/4 teaspoon salt
fresh rosemary sprig (optional)

Steps:

  • Remove giblets and necks from Cornish hens, and set aside.
  • Rinse hens under cold running water, and pat dry.
  • Remove skin, and trim excess fat; split hens in half lengthwise.
  • Set aside.
  • Heat oil in a saucepan over medium-high heat; add giblets and necks.
  • Cook 5 minutes or until very brown.
  • Add broth, onion, 1/4 cup wine, and next 2 ingredients; bring to a boil.
  • Cover, reduce heat, and simmer 45 minutes.
  • Strain broth mixture through a sieve into a bowl, reserving 1 1/2 cups; discard solids.
  • Set aside broth mixture.
  • Combine remaining 1/4 cup wine, lemon juice, gingerroot, and minced garlic in a large bowl.
  • Add hen halves; cover and marinate in refrigerator 30 minutes, turning hens occasionally.
  • Remove hens from marinade, reserving marinade.
  • Coat grill rack with cooking spray; place hen halves on rack over medium heat.
  • Cook 15 minutes on each side or until juices run clear, basting occasionally with reserved marinade.
  • Set aside, and keep warm.
  • Combine reserved broth mixture and 1/2 cup raspberries in a saucepan; boil until reduced to 1 cup (about 5 minutes).
  • Strain and discard seeds; return puree to pan.
  • Combine water and cornstarch; stir well, and add to puree.
  • Bring to a boil, and cook 1 minute, stirring constantly.
  • Remove from heat; stir in parsley, sugar, and salt.
  • Spoon 3 tablespoons sauce onto individual serving plates; arrange hen half on each plate, and top with 2 tablespoons raspberries.

1 large Spanish onion, sliced
2 Cornish hens
Cornbread Stuffing, recipe follows
Olive oil
Kosher salt
Freshly ground black pepper
4 tablespoons unsalted butter
1 cup yellow onion, chopped
2 1/2 cups cornbread
1 celery stalk, diced
1/4 cup chicken stock
2 tablespoons chopped flat-leaf parsley
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper

Steps:

  • Preheat the oven to 425 degrees F.
  • Place the sliced onion in the bottom of a roasting pan. Remove the giblets from the hens, and rinse them inside and out. Remove any excess fat and leftover pinfeathers and pat the outsides dry. Place the hens on top of the sliced onion.
  • Pack the cavities of the hens with the cornbread stuffing.
  • Tie the legs together with kitchen string and tuck the wing tips under the body of the hens. Rub the hens with olive oil and sprinkle with salt and pepper.
  • Roast the hens for 30 minutes, or until the juices run clear when you cut between a leg and thigh.
  • Melt the butter in a large saute pan. Add the onion and cook for 5 minutes over medium-low heat, until translucent. Break the cornbread into pieces and place the pieces in a large bowl. Add the onion mixture to the cornbread. Add the celery, chicken stock, parsley, salt and pepper, and mix together.

4 shallots, chopped
2 cups canned low-salt chicken broth
2/3 cup dry red wine
2/3 cup frozen raspberries
2 teaspoons (or more) sugar
1/4 teaspoon ground allspice

Steps:

  • Preheat oven to 500°F. Sprinkle hen halves with thyme, salt and pepper. Heat oil in heavy large skillet over medium-high heat. Add hen halves, skin side down, and cook until brown, about 6 minutes per side. Transfer hen halves to baking sheet (do not clean skillet). Roast until juices run clear when thigh is pierced, about 20 minutes.
  • Meanwhile, pour off all but 2 tablespoons fat from skillet. Add shallots and sauté over medium heat until soft, about 3 minutes. Add broth, wine, raspberries, 2 teaspoons sugar and allspice. 1/4 cup honey
1 10-ounce package frozen whole unsweetened raspberries, thawed
1/4 cup water
2 tablespoons sugar
1 tablespoon grated lemon peel

  • Preheat oven to 450°F. Combine pepper and garlic powder in bowl. Pat hens dry inside and out. Season cavities with half of pepper mixture. Fill cavities with rice. Close cavities using skewers. Tuck wing tips under. Place hens in roasting pan. Melt butter with honey in small saucepan. Brush over hens. Sprinkle with remaining pepper mixture. Bake hens until juices run clear when thighs are pierced in thickest part, turning and basting frequently with honey-butter mixture, 35 to 40 minutes.
