Butter Beans with Butter, Mint, and Lime image

Number Of Ingredients 7

Kosher salt
6 cups fresh shelled butter beans or frozen baby lima beans
3 tablespoons unsalted butter, cut into small pieces
Juice of 2 large limes
1 cup loosely packed mint leaves, chopped
Freshly ground black pepper
1 teaspoon grated lime zest, for garnish

Steps:

  • In a medium saucepan, bring 6 cups water and 1 tablespoon salt to a boil over high heat. Add butter beans and cook until tender, 9-12 minutes, depending on the size of the beans. Drain in a colander; shake colander several times to shed as much water as possible.
  • Put butter in a large serving bowl, and pour warm butter beans on top. Toss beans with butter until all the butter is melted. Add lime juice and toss again to distribute. Fold in mint, season with salt and pepper, and scatter lime zest over the top. Serve immediately.

400g green bean , trimmed
25g butter
zest and juice 1 lemon
1 tbsp Dijon mustard
3 tbsp chopped mint

Steps:

  • Bring a medium saucepan of water to the boil. Add the green beans and cook for 5-6 mins until tender. Drain well and refresh under cold water. Set aside.
  • When ready to serve, melt the butter in the saucepan and add the lemon zest and juice, mustard, a good pinch of salt and plenty of ground black pepper. Add the green beans and toss well until evenly coated.
  • Tip into a serving dish, scatter over the fresh mint and serve.

2 tablespoons harissa
2 teaspoons honey
1 tablespoon lime juice (about 1/2 lime)
Kosher salt
2 tablespoons grapeseed or canola oil
1 tablespoon olive oil
1 pound green beans, trimmed
10 ounces grape or cherry tomatoes
1 tablespoon unsalted butter
2 tablespoons roughly chopped mint
Flaky salt for garnish (optional)

Steps:

  • In a bowl, combine harissa, honey and lime juice. Stir together until combined and season to taste with salt.
  • In large cast-iron skillet, heat 1 tablespoon of the grapeseed oil and the olive oil over medium-high heat. Add green beans and cook undisturbed until they began to char in spots, about 3 minutes. Continue to cook, tossing frequently, until beans are just cooked through and slightly blistered and browned in spots, about 5 to 6 minutes more. Some beans will be more cooked than others - that's O.K. Season with salt and place beans in a bowl.
  • Heat remaining 1 tablespoon grapeseed oil in the skillet. Add tomatoes and cook undisturbed until they also begin to char in spots, about 1 minute. Stir tomatoes frequently until they are just cooked through and some begin to burst, about 2 minutes more. They do not need to be totally cooked through. Season with salt.
  • Remove skillet from heat and add green beans. Add harissa mixture and butter and toss until everything is combined and butter is melted. Add in half of the mint and stir again. Spoon into a large bowl and scatter with remaining mint. Garnish with flaky salt, if using.

2 cups shucked fava beans

  • Place the olive oil in a pot over medium heat. Add the onions and bacon and cook until limp. Season, to taste, with salt and pepper. Add the wine and bring to a boil. Add 1 cup of water and return to a boil. Continue cooking until the liquid is reduced by half.

My favorite time to make this salad is early summer, when green beans are super fresh and tender. I especially like to use haricots verts, which are small French green beans that are incredibly sweet.

2 1/2 pounds fresh green beans, blanched and shocked
1 red onion, julienned
2 cloves garlic, chopped
2 tablespoons chopped fresh mint
grated zest and juice of 1 lemon
2 teaspoons Dijon mustard
1/4 cup extra virgin olive oil
1/2 cup sour cream
6 dashes Tabasco sauce
Salt
freshly ground black pepper

Steps:

  • Place the green beans and red onion in a large bowl. In a small bowl, whisk together the garlic, mint, lemon zest and juice, and mustard. While whisking, slowly add the olive oil and whisk until thick and emulsified. Whisk in the sour cream and Tabasco. Season to taste with salt and pepper. 1/3 cup hazelnuts, toasted and chopped

  • .Cook beans until tender crisp in a large pot of boiling and salted water, about 3 or 4 minutes; drain and plunge in an ice water bath for at least 3 minutes, then drain again and set aside.
  • In a small bowl, combine parsley, rosemary, lime zest, lime juice, and garlic; set aside.

1 lb green beans (Fresh or Frozen any style)
3 tablespoons butter (Reduce or substitute if you like)
1 tablespoon olive oil
1/2 teaspoon garlic powder
1 teaspoon sea salt
1/2 teaspoon ground pepper
1 -2 tablespoon lime juice (Minimum 1tbsp, this is a key ingredient)

Steps:

  • Heat oven to 380°F.
  • Prepare and grease a baking pan.
  • Melt Butter and combine butter with olive oil and dry ingredients. Toss the green beans in this mixture until evenly coated.
  • Pour coated green beans into greased pan and spread out evenly. A glass baking dish works well here.
