1 pound green beans
2 tablespoons bacon grease (can substitute 2 tablespoons butter)
2 cloves garlic, minced
1 large onion, chopped
1 cup chicken broth, plus more if needed
1/2 cup chopped red bell pepper
1/2 to 1 teaspoon kosher salt (can substitute regular table salt, use 1/4 to 1/2 teaspoon)
Ground black pepper

Steps:

  • Snap the stem ends of the green beans, or cut them off in a big bunch with a knife if you'd prefer.
  • Melt the bacon grease in a skillet over medium-low heat. Add the garlic and onions and cook for a minute. Then add the green beans and cook until the beans turn bright green, about a minute. Add the chicken broth, chopped red pepper, salt and pepper to taste. Turn the heat to low and cover the skillet with a lid, leaving the lid cracked to allow steam to escape. Cook until the liquid evaporates and the beans are fairly soft, yet still a bit crisp, 20 to 30 minutes. You can add more chicken broth during the cooking process, but don't be afraid to let it all cook away so the onions and peppers can start to caramelize.

Bay leaf
4 tablespoons unsalted butter
1/4 cup flour
1/4 teaspoon Dijon mustard
Freshly grated nutmeg
Salt and pepper
1 cup grated white cheddar
1 1/2 cups chopped green beans, cut in 2-inch pieces, blanched
3 cups sliced assorted wild mushrooms (such as portobello, shiitake, or cremini)
1/2 cup freshly grated Parmesan
1/2 cup buttered bread crumbs

Steps:

  • Make sauce: In a saucepan scald milk and bay leaf. In another saucepan, melt butter over medium heat. Add flour and cook, whisking constantly, 2 minutes.
  • Remove bay leaf from milk and slowly pour into butter-flour mixture, whisking constantly. Season, to taste, with mustard, nutmeg, salt and pepper. Cook, stirring occasionally, until thickened, about 5 minutes. Remove from heat and add cheddar, stirring until melted and smooth.
  • Heat oven to 350 degrees F. Fold green beans and mushrooms into sauce, then transfer to a buttered casserole. Sprinkle top with Parmesan and buttered bread crumbs. Bake 50 minutes, or until casserole is bubbly and topping is lightly browned.

4 ounces fresh shiitake or oyster mushrooms
1 pound green beans
2 teaspoons cornstarch
1 tablespoon vegetable oil
2 teaspoons minced garlic
1/2 teaspoon salt
1 tablespoon oyster sauce
1/2 cup chicken broth

Steps:

  • Rinse the mushrooms in cold water and drain. Remove and discard the stems. Cut the caps into 1-inch strips. Rinse the green beans in cold water and drain. Snap off the ends. In a small bowl, mix the cornstarch and 2 teaspoons cold water.
  • Heat a wok over high heat. Add the vegetable oil and rotate the wok to coat the sides. Add the garlic, green beans, and salt and stir-fry for 1 minute. Add the mushrooms and continue to stir-fry until mixed. Stir in the oyster sauce. Stir in the chicken broth and heat to boiling. Stir in the cornstarch mixture; cook and stir until thickened, about 30 seconds. Turn off the heat and remove the green beans with tongs. Arrange the green beans across a platter and top with the mushrooms.

2 lbs green beans, trimmed
8 tbsp unsalted butter
8 shallots, thinly sliced
8 oz wild mushrooms, roughly chopped
Fresh ground pepper
1 cup toasted walnuts, chopped

Steps:

  • Bring a large pot of water to a boil over high heat. Generously salt the water, add the green beans and cook until tender, about 5-6 minutes. Drain the beans, then transfer into a bowl of ice water to stop the cooking. Drain again and set aside. In a large saute pan over medium heat, melt the butter and cook until milk solids start to turn golden brown, about 5 minutes. Add shallots and cook, stirring occasionally, until tender, about 5 minutes. Add the mushrooms and cook, stirring often, under tender (5-7 minutes). Add some salt to taste and season with pepper. Stir in the green beans and walnuts and cook until the beans are warmed through. Taste and adjust salt and pepper. Serve immediately.

1 cup onion, chopped
4 ounces mushrooms, chopped
3 tablespoons flour
1 1/2 cups chicken stock
1/2 cup fat-free half-and-half
salt

1 1/2 lbs fresh green beans, cleaned and trimmed
3/4 cup seasoned croutons, crushed (may want to only use half the croutons as they can be over powering, up thanks to review)
3/4 cup walnuts, chopped
2 tablespoons Smart Balance light butter spread
1/2 cup onion, minced

Steps:

  • Preheat oven to 350°F Melt spread in a medium saucepan over medium heat. Add onion and mushrooms; cook, stirring frequently, for 10 minutes. Stir in flour; cook and stir for 1 minute more.

2 tablespoons butter
1 cup chopped walnuts
2 tablespoons walnut oil
2 tablespoons minced fresh parsley
ground black pepper to taste
salt to taste

Steps:

  • Place the walnuts on an ungreased baking sheet. Bake at 350 degrees F (175 degrees C) for 5 to 8 minutes.
  • Cook beans in large pot of boiling salted water until just tender, about 5 minutes. Drain. Rinse beans with cold water, and drain well. Can be prepared 6 hours ahead. Let stand at room temperature.

Using a slotted spoon, transfer the beans to a bowl of ice water to stop the cooking. Drain and set aside. In a large sauté pan over medium heat, melt the butter and cook until the milk solids start to turn golden brown, about 5 minutes. Add the shallots and cook, stirring occasionally, until tender, about 5 minutes. Add the mushrooms and cook, stirring often, until tender, 5 to 7 minutes. Stir in the 1 tsp. salt and season with pepper. Stir in the green beans and walnuts and cook until the beans are warmed through. Taste and adjust the seasonings with salt and pepper.
