SLOW COOKER GREEN BEANS, HAM AND POTATOES

I make this dish often; I have never really measured the ingredients, but can give you a reasonable approximation. Note: Freeze leftover cooking liquid, and then add to bean soup, ham or cabbage dishes, or use to cook dumplings in. It's delicious!

2 pounds fresh green beans, rinsed and trimmed
1 large onion, chopped
3 ham hocks
1 ½ pounds new potatoes, quartered
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon seasoning salt
1 tablespoon chicken bouillon granules
ground black pepper to taste

Steps:

  • Halve beans if they are large, place in a slow cooker with water to barely cover, and add onion and ham hocks. Cover, and cook on High until simmering. Reduce heat to Low, and cook for 2 to 3 hours, or until beans are crisp but not done.
  • Add potatoes, and cook for another 45 minutes. While potatoes are cooking, remove ham hocks from slow cooker, and remove meat from bones. Chop or shred meat, and return to slow cooker. Season with garlic powder, onion powder, seasoning salt, bouillon, and pepper. Cook until potatoes are done, then adjust seasoning to taste.
  • To serve, use a slotted spoon to put beans, potatoes, and ham into a serving dish with a little broth.

2 meaty ham hocks
1 onion, peeled and quartered through root
3 garlic cloves, smashed
1 celery stalk, cut into 2-inch pieces
3 sprigs fresh thyme
1 bay leaf
1 jalapeno or serrano chile, intact with a split down 1 side
Coarse salt and freshly ground pepper
3 1/2 quarts water
1 pound small red potatoes, halved
2 pounds green beans, stem ends trimmed, halved crosswise

Steps:

  • Combine ham hocks, onion, garlic, celery, thyme, bay leaf, chile, 3/4 teaspoon salt, and the water in a large pot. Bring to a boil over high heat. Reduce heat, and simmer, uncovered, 1 hour 30 minutes.
  • Transfer ham hocks to a plate. Discard chile, and add potatoes to pot; simmer until just tender, 10 to 12 minutes.
  • When ham hocks are cool enough to handle, pull meat off bones (discard bones), shred into bite-size pieces, and return to pot. Add green beans, and return to a simmer. Cover, and cook until beans are just tender, about 8 minutes. Season with pepper. Serve vegetables and meat with a slotted spoon; reserve broth for another use. If storing leftovers, store in broth.

  • In a large saucepan, with a lid, over medium heat, add the oil. Season the ham with black pepper. Add the ham and cook for 2 minutes on each side. Remove and set aside. Add the onions. Last night I had no broth, so I mixed Lipton's Garlic and Herb soup (1 packet) and 4 cups of water and it was wonderful, really added richness to the broth.

I knew I wanted to cook ham shanks in the crock pot, but I couldn't find any recipes that were quite what I was looking for. The ingredients I listed here will fill a 3 quart pot, but I imagine quantities are flexible.

1 (1 1/2 lb) ham shank (a ham hock may be acceptable, but it doesn't have as much meat)
3 -4 large potatoes, peeled (or not)
1 lb fresh green beans, rinsed with the ends cut off
1 cup chicken broth
1 (15 ounce) can green beans, juice extracted (NOTE ( I only use the juice from the canned beans, not the beans themselves)
salt and pepper

  • 1. Place whole ham shank in slow cooker.
  • 2. Cover ham with prepared fresh green beans and potatoes.
  • 3. Pour chicken broth and canned green bean juice over all ingredients.
  • 4. Top with salt and pepper.
  • 5. Cook on low 7-8 hours.
  • 6. In the last hour of cooking, remove the bone from the ham shank. The meat should fall off pretty easily (or at least be close to it). Keep meat in slow cooker and continue cooking for 30 minutes.

It has been cold and snowing here. Just the right weather for soups and comfort food. These green beans and ham hocks are so good. They do not need any added spices or seasoning but you can add them if you desire. There is no need to add salt to these since the ham hocks/shanks are already salty. I am sensitive to pepper so I did not add any to these but you can if you want to. I just don't know how much to add. They can be served as a meal with cornbread or as a side dish with meat This can easily be turned into soup by adding other vegetables. Cook time varies according to your crockpot. When I lower my 3.5 quart crockpot to low, it does not boil or even simmer so I cook these on high the whole time. Stovetop method time is approximate. These smell so good while they cook.

1 (12 ounce) can beer
1 can chicken broth

  • Snap or cut green beans in one inch pieces.

It calls for sliced ham hocks, which your butcher can cut up for you. I have made it with a big chunk of ham and it turned out great. You could also use smoked pork shank. We prefer to cook the onion with the rest of the vegetables rather than serve raw.

  • Place the slices of ham hock into the bottom of a tall stockpot. Add enough cold water to barely cover. Place the new potatoes on top of the pork and the string beans on top of the new potatoes.

  • Remove string beans, new potatoes, and pork from the pot. Reserve the cooking liquid (known as "pot likker" in some parts of the country.). Take the meat off the bones, trim off the fat, and reserve the meat.

2 * 2 pounds green beans, cleaned and snapped
* About 1/4-pound thinly sliced country ham (see notes below)
2 * 2 medium potatoes, cut in large cubes (see notes below)
1 * 1 large onion, coarsely chopped
* Water
* Salt and pepper to taste
4 * 4 tablespoons unsalted butter

Steps:

  • Place the ham slices in a large sauté pan. Add about 3 cups of water. Bring to a boil, then reduce heat, cover and simmer until ham is tender. Remove ham from pot and cut into small pieces. Return to the pot and add the beans, potatoes and onions. Season with pepper. Add a bit more water if needed, but not too much. Bring back to a boil, then reduce heat, cover and simmer until beans are very tender, about 1 hour. (Cooking time will depend on the age of the beans.) Taste the beans and add salt if needed but, since country ham is very salty, additional salt will probably not be necessary. If there appears to be too much broth, cook on high without the cover until some of the moisture evaporates. Add butter to beans and stir until melted; replace lid and cook an additional 10 minutes. This will keep, covered, over low heat until serving. Notes: If you want a meatier main dish, add some smoked ham pieces when you add the beans. For most people, more country ham would make it too salty. Instead of large potatoes, you can use about one pound baby or creamer potatoes, halved if large. I like yukon gold, but any boiling potato is fine.

24 cloves garlic (peeled, halved lengthwise)
2 tablespoons salt
3 lbs green beans, trimmed
5 tablespoons olive oil

  • Bring a large pot of water to a boil.
  • Add garlic; cook 8 minutes until very tender.

2 tablespoons butter (or extra virgin olive oil)
1 large onion, thinly sliced
1 lb ham, cut into 1/2 inch chunks
2 -3 large pears, not overly ripe (Bosc is a good choice)
3/4 lb fresh green beans
salt, to taste
pepper, to taste
1 cup chicken stock

Steps:

  • Put the butter in a large deep skillet over medium-high heat. When hot, add the onion and cook, stirring occasionally, for about 5 minutes. Meanwhile, cut the ham into 1/2 inch chunks. Add it and raise the heat to high.
  • While the ham cooks- stir it occasionally, but let it brown a bit on the bottom-peel and core the pears and cut them into 1-inch chunks. Lower the heat to medium and add them to the pan; stir occasionally.
  • Trim the beans, cut them into roughly 2-inch lengths, rinse them quickly, and add them to the skillet along with a sprinkling of salt and at least 1/2 teaspoon pepper. Cook for a minute, then raise the heat to medium-high, add the chicken stock, and stir.
  • Cook, stirring occasionally, until the beans are bright green and semi-tender, the pears are quite tender, and the liquid so reduced that it is essentially a sauce, 10 - 15 minutes. Taste, adjust the seasoning, and serve.

Fabulous Southern Green Beans and New Potatoes with Ham~
2 tablespoons butter
1 onion, diced or chopped
3 cloves garlic, minced
3 or 4 ham hocks, ham end pieces or ham shanks
2 to 3 pounds of fresh green beans, cleaned and snapped
3 cans chicken broth
3 cans water (use a broth can to measure)
8 or more, new potatoes, pealed and washed
1 tablespoon sugar
Kosher salt and pepper to taste

Steps:

  • Place ham hocks or shanks in water enough to cover & let simmer a good 2 hours. Remove ham & set aside to cool. Reserve broth. When cool enough to handle, cut into chunks. In a large heavy stock pot, melt butter on medium high. Add onions and garlic and ham. Cook until onions and garlic are tender and meat has browned a bit. Turn down the heat to medium and add green beans, chicken broth and 3 cans full of the broth from the cooked ham hocks. Just cover the beans with the liquid. If you need a bit more water, add it. Cover and cook beans for about an hour. Add, sugar, salt and pepper and stir well. Add potatoes and cook covered for another 25 to 35 minutes, or until the potatoes are fork tender. Remove lid for the last 10 minutes of cook time. Check and re-season if necessary. Crock pot method: place all in the pot & cook on low all day! Before serving remove the ham & cut into pieces & stir back into the beans & potatoes!

1 1/2 lb thick ham steak, cut into 1 inch cubes ( leftover ham is perfect )
3 can(s) whole potatoes, quartered (you can use fresh potatoes, parboiled about 4 cups, cubed)
4 can(s) green beans, drained
3 Tbsp dried minced onion
1 stick butter, unsalted, melted
1/3 c soy sauce
1 1/3 c brown sugar, firmly packed
1 Tbsp garlic powder
1/2 tsp hickory smoke salt or liquid smoke

Steps:

  • 1. Mix together brown sugar, soy sauce, butter and garlic powder together till smooth. set aside.
  • 2. Layer ham, green brans, potatoes and minced onion in crockpot.
  • 3. Pour butter mixture over the ham and green beans. Toss gently to coat everything. Cook on high for 2 hours or on low for 4 hours in a covered crock pot. Let cool enough to enjoy without burning your mouth if you can wait that long.

MOM'S GREEN BEANS AND BACON (OR HAM)



Mom's Green Beans and Bacon (or Ham) image

Mom made these green beans a lot. In summer she used fresh beans and the rest of the year she used home canned beans. It is a very simple recipe and it is good.

Number Of Ingredients 5

6 slice thick bacon (or use sliced ham)
1 medium chopped onion
2 qt fresh green beans (or 2 large cans beans)
1 tsp sugar
1 tsp each salt and freshly ground black pepper (or to taste)

Steps:

  • 1. Fry bacon (or ham) until it is beginning to cook. Add onion and continue cooking until onion is translucent. Don't let bacon get too crisp. It will continue to cook with the beans and flavor them. Drain grease. Crumble or cut bacon or ham. Set aside and prepare beans.
  • 2. If using fresh greens, clean them and cut in bite sized pieces. Cook in boiling water until tender. Add all other ingredients to green beans you just cooked (or to the unheated canned green beans if using those) and cook for approximately 10 minutes to heat thoroughly and blend flavors.
