12 red potatoes
¼ cup chopped green onion
¼ cup olive oil
¼ cup red wine vinegar
1 ½ teaspoons fresh lemon juice
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon coarse salt, or to taste
½ teaspoon ground black pepper, or to taste
¼ teaspoon dried oregano
¼ teaspoon white sugar
¼ teaspoon dried rosemary, crumbled
1 pinch ground red pepper

Steps:

  • Place red potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 25 minutes. Drain and chill in freezer until cold, about 30 minutes.
  • Slice potatoes and place into a large salad bowl; toss potatoes with green onion. Whisk olive oil, red wine vinegar, lemon juice, garlic powder, onion powder, salt, black pepper, oregano, sugar, rosemary, and red pepper in a bowl. Pour the dressing over the potatoes and toss. Serve immediately or chill until serving time.

2 pounds red potatoes, washed, with skins
1 cup olive oil
3 shallots, chopped
1 1/2 bunches oregano, leaves only, chopped
2 teaspoons fresh lemon juice
1 teaspoon salt
1/4 teaspoon white pepper

Steps:

  • Cut potatoes across width into 1/8-inch slices. Place in a large bowl and wash in cold, running water until water runs clear.
  • Bring a large pot of salted water to a boil. Add potatoes, bring back to a boil, and cook until slices are barely soft, about 3 to 5 minutes. Drain in a colander.
  • Combine remaining ingredients in a medium bowl. Add warm potato slices and toss to combine. Serve immediately or chill. Potato salad may be kept in a sealed container in refrigerator for 2 to 3 days.

5 -6 large potatoes, cooked (I peel them and nuke them on high for 12 minutes, leave in microwave for another hour.)
1 1/2 tablespoons finely minced garlic
1 teaspoon salt
1 tablespoon red wine vinegar
1 1/2 lemons, juice of
3/4 cup olive oil (olive oil is GOOD for you. Don't be afraid to use it!)
1 cup cilantro (we usually use spearmint) or 1/2 cup mint with 1/2 cup parsley (we usually use spearmint)

Steps:

  • Drain the (hot) potatoes of any liquid and cut into nice big chunks.
  • Add all the ingredients, except parsley and/or cilantro and stir, carefully, to incorporate the oil into the potato (most of the oil will be absorbed, but some may reappear if the salad sits too long- just give it another stir).
  • Many of the potato chunks will start to puree and others will stay in nice big pieces- texturally you're going from creamy to chunky in ever bite. When the salad has cooled a bit, add the parsley and/or cilantro. I like this warm or at room temperature - never cold.
  • If it's not all gone by the end of the day, it can be used as the base for a yummy (garlicky) soup.

2 lbs boiling potatoes, scrubbed but not peeled
salt & freshly ground black pepper
2 -3 tablespoons strained fresh lemon juice
cayenne pepper (optional)
3 -5 tablespoons extra virgin olive oil
1/3 cup finely chopped onion, preferably mild ones
4 small tomatoes (optional)
1/3 cup chopped parsley
2 teaspoons capers, drained (optional)
1/2 cup flavorful olive, such as kalamata, pitted and cut in half (optional)

Steps:

  • Cut any large potatoes in half to speed up the cooking.
  • Put the potatoes in a large saucepan, completely cover with water and add salt.
  • Bring to a boil.
  • Cover and simmer over medium-low heat until a knife can pierce the center of the largest potato easily and the potato falls from the knife when lifted, about 25 minutes.
  • Meanwhile prepare the dressing: In a small bowl whisk 2 tablespoons lemon juice with a pinch of salt, pepper, and cayenne pepper.
  • Add 3 tablespoons olive oil and whisk again.
  • Drain the potatoes in a colander, rinse them briefly and leave just until cool enough to handle.
  • Peel them if you like, and cut them into 1 inch cubes.
  • Put them in a large bowl and add the onions, 3 tablespoons dressing and a sprinkling of salt and pepper.
  • With a rubber spatula, fold together gently but thoroughly.
  • Let potatoes cool to room temperature.
  • Dice the tomatoes to add them to the salad, or cut them in thick wedges to use as garnish.
  • Whisk the remaining dressing, pour it over the potatoes and fold it together.
  • Add the parsley, capers, half the olives and the diced tomatoes to the potatoes and fold together lightly.
  • Taste, adjust seasoning, and add more lemon juice and olive oil if needed.
  • Garnish with the remaining olives and with the tomatoes, if you've cut them in wedges.
  • Serve at room temperature.

2 lb unpeeled new potatoes
2 medium bell peppers, cut into 1-inch pieces
2 medium tomatoes, seeded, cut into eighths
1 medium cucumber, cut into 1-inch pieces
1/2 medium red onion, very thinly sliced (1/2 cup)
1/2 cup whole kalamata or ripe olives
1 package (4 oz) crumbled feta cheese (1 cup)
1/2 cup olive or vegetable oil
1/4 cup lemon juice
1 tablespoon finely chopped fresh or 1 teaspoon dried oregano leaves
1 tablespoon Dijon mustard
1 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon pepper
2 cloves garlic, finely chopped

Steps:

  • If potatoes are large, cut in half. In 3-quart saucepan, place steamer basket in 1/2 inch water (water should not touch bottom of basket). Place potatoes in steamer basket. Cover tightly and heat to boiling; reduce heat. Steam 18 to 22 minutes or until tender; cool to room temperature.
  • In large glass or plastic bowl, beat all Lemon Dressing ingredients with wire whisk until blended; set aside.
  • Add potatoes and remaining salad ingredients except cheese to dressing; toss. Serve immediately, or cover and refrigerate up to 24 hours. Sprinkle with cheese just before serving.

This is another great potato salad from my collection... I have even added in a couple of tablespoons of Feta cheese when processing the vinaigrette dressing. This complete recipe may be doubled if desired.. NOTE: If you should decide to add in a bit of garlic, only add in about 1/4 teaspoon of garlic powder, as fresh garlic just seems to overpower the salad, but it is just as good without the garlic..... you are going to just love this potato salad, so I DO suggest you double the recipe lol!

2 tablespoons red wine vinegar
1/4 cup olive oil
1 tablespoon Dijon mustard
1 -2 teaspoon dried oregano

3/4 cup pitted kalamata olives or 3/4 cup black olives
1 medium cucumber, peeled, seeded and diced
1/2 cup chopped roasted red pepper (I use store-bought)
1 small green bell pepper, diced
1 samll red bell pepper, diced
1/2 cup red onion
1 cup crumbled feta cheese (or more if desired)
1/4 cup fresh Italian parsley

Steps:

  • Cook or steam potatoes until done.
  • Slice into 1-inch cubes, and place into a large bowl.
  • Prepare the dressing: In processor process vinegar, olive oil, Dijon mustard, oregano (can use 2 tablespoons FRESH oregano in place of dried), salt and pepper (can add a bit of garlic POWDER to the dressing if desired).
  • When the potatoes are still warm, toss them with the dressing; set aside to cool.
  • After the potatoes are cool, mix in the olives, cucumber, red, green bell peppers, salt and black pepper, Feta cheese and fresh parsley; toss well to coat.

Garlicky Greek yogurt tzatziki sauce forms the creamy base of this potato salad; a healthier, more protein-packed spin on the traditional mayo. Add kalamata olives, cherry tomatoes, red onions, and cucumber for fun and refreshing summer salad.

2 1/2 pounds red potatoes
1/2 red onion (diced)
1 medium cucumber (diced)
1 cup cherry tomatoes (halved)
1/2 cup kalamata olives (halved)
1/4 cup 2 ounces crumbled feta cheese (optional)
1 1/2 cups plain Greek yogurt (I use full fat, but lower fat should work fine too)
1 medium cucumber (grated)
1/2 teaspoon kosher salt
1 tablespoon olive oil
2 tablespoons red wine vinegar
2 tablespoons freshly squeezed lemon juice
3 cloves garlic (finely minced)
1/4 cup fresh minced dill (lightly packed)
1/4 cup fresh minced peppermint (lightly packed (about 15 - 20 leaves))

Steps:

  • Set a large pot of water over high heat. Add the potatoes. Bring to a boil. Cook until the potatoes are fork-tender, about 20 minutes. Drain and rinse with cool water; set aside to cool.
  • While the potatoes are cooking, chop the other veggies and make the sauce.
  • To make the sauce, add all sauce ingredients to a medium bowl and mix thoroughly. Set aside. If you're not making the salad right away, refrigerate in an airtight container until ready to use.
  • Assemble the salad. Once the potatoes are cool enough to chop, cut into 3/4-inch chunks and add to a large salad bowl. Add the onion, cucumber, tomatoes, and olives. Add the sauce and toss gently until all of the veggies are coated. Sprinkle feta on top, if using. Serve.
  • May be made up to 24 hours ahead and stored in the refrigerator until ready to serve. After it sits for a bit, the salad may get a little watery at the bottom thanks to the cucumbers, but just give it a stir and you're good to go.

1 cup mayonnaise
1 cup sour cream

Grilled Seasoned Lamb With Greek Potato Salad image

1 pound tiny new potatoes
1 large clove garlic
1 small clove garlic
1/4 teaspoon hot-pepper flakes
Few shakes of cinnamon
8 ounces butterflied leg of lamb
1 bunch arugula
2 cups nonfat plain yogurt
2 tablespoons white-wine vinegar
8 ounces Kirby cucumbers
6 cherry tomatoes
5 Greek Kalamata olives, or Italian or French black olives
Freshly ground black pepper to taste

Steps:

  • Turn on broiler if using.
  • Scrub potatoes, and cook in water to cover in covered pot until they are tender, 10 to 20 minutes, depending on size.
  • Put large clove of garlic through press, then mix in a small bowl with hot-pepper flakes and cinnamon. Using your fingers, rub mixture into both sides of the lamb. Prepare stove top grill, if using. Broil or grill lamb for 2 to 5 minutes, until it is browned but still pink inside.
  • Trim the tough stems from the arugula, wash thoroughly and dry.
  • Mix the yogurt and vinegar in a small bowl. Wash, trim and cut the cucumbers into half-inch pieces or smaller, and add to the bowl; mince the remaining clove of garlic, and add.
  • Cut the cooked lamb into julienne strips, and set aside.
  • Wash and halve the tomatoes, and add to the yogurt. Pit and chop the olives, and add; season with pepper.
  • Cut cooked potatoes into halves or quarters, depending on size, and add to yogurt mixture.
  • Arrange the arugula on two plates. Place sliced lamb to one side, potato salad on the other.

1 lb small red potato, 1/4 inch slices
1 cup sun-dried tomato, cut into quarters
1 cup sliced seedless cucumber
1/2 cup sliced red onion
1 cup crumbled feta cheese
1/2 cup Greek olive
1/4 cup olive oil
1/4 cup water
2 1/2 tablespoons lemon juice
1 large garlic clove, pressed
1 tablespoon chopped fresh oregano or 1 teaspoon dried oregano
1 tablespoon sugar
1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Place in potatoes in 2 quart saucepan.
  • Add approximately 2 inches of water.
  • Cook, covered until tender, for approximately 12 minutes.
  • Do Not Overcook.
  • Drain and set aside.
  • Meanwhile, in small bowl, cover dried tomatoes with boiling water, set aside for 10 minutes.
  • Drain tomatoes and pat dry.
  • Add potatoes, tomoates and cucumber to bowl.
  • Drizzle with dressing and toss to coat.
  • Can be served cold or at room temperature.
  • Arrange onion, cheese and olives on top.
  • Dressing:.
  • Mix together olive oil, water, lemon juice, sugar, garlic, oregano, salt and pepper.

1 lemon, zest of
4 -5 sprigs parsley
4 -5 fresh mint leaves, finely chopped
2 -3 teaspoons orange liqueur
salt
black pepper, freshly ground

Steps:

  • Wash the potatoes well and drop them in boiling water in their jackets for about 15-20 minutes.
  • When done, remove with a slotted spoon and allow to cool.
  • Peel, cut into wedges in bowl, add the parsley and mint and mix well.
  • In another bowl, mix the olive oil, lemon juice and zest, liqueur, pepper and a little salt, beating with a whisk.

1 1/2 pounds red potatoes, cubed
1/2 cup feta cheese, crumbled
1/3 cup fresh lemon juice
1/4 cup olive oil
2 tablespoons plain yogurt
1 teaspoon sugar
salt and pepper to taste
1 cup cherry tomatoes, halved
1 cup cucumber, seeded, diced
1/2 cup pitted kalamata olives, sliced
1/4 cup red onion, diced
1 tablespoon chopped fresh oregano
store-bought feta vinaigrette

Steps:

  • 1. boil potatoes in salted water to cover until tender, 12 to 15 minutes. Drain. Mix tomatoes, cucumber, olives, onion, and oregano. Add potatoes and vinaigrette.

2 lb. small red potatoes (about 10), halved
1/3 cup water
2 cloves garlic, minced
1/4 cup KRAFT Greek Vinaigrette Dressing, divided
1/4 cup KRAFT Real Mayo
1/2 cup ATHENOS Crumbled Reduced Fat Feta Cheese
2 stalks celery, sliced
4 green onions, thinly sliced
1/4 cup sliced Kalamata olives

Steps:

  • Heat grill to medium-high heat.
  • Microwave potatoes and water in 2-qt. covered microwaveable dish on HIGH 8 min.; drain. Add garlic and 2 Tbsp. dressing; toss to coat. Spoon onto large sheet of heavy-duty foil sprayed with cooking spray; fold to make packet.
  • Grill 20 min. or until potatoes are tender, turning packet after 10 min.
  • Mix mayo and remaining dressing in large bowl. Add potatoes, cheese, celery, onions and olives; mix lightly. Serve warm.

5 lbs Simply Potatoes Garlic Mashed Potatoes
1 ounce dill
1 lemon, juiced and zested
1 cup extra virgin olive oil
salt or pepper

Steps:

  • Squeeze lemon into a bowl, removing any seeds. Mix both bags of potatoes together with salt/pepper, lemon + zest, olive oil, chopped dill.
  • Chill and serve!
