350g fusilli pasta (13 oz.)
2 tomatoes, cut into wedges or 18 cherry tomatoes, cut into halves
1 red onion, sliced
1 red bell pepper, sliced
1 cucumber, sliced into half moons
16 Kalamata olives
250g feta cheese, crumbled (8.5 oz.)
2 tbsps chopped parsley
4 and 1/2 tbsps extra virgin olive oil
1 and 1/2 tbsps lemon juice
1 tsp dried oregano
salt and pepper to taste

Steps:

  • To prepare this super easy Greek pasta salad recipe, start by cooking the pasta. Boil the pasta according to package instructions and drain. Set aside to cool down for a while.
  • In the meantime prepare your vegetables for the Greek pasta salad. Wash thoroughly and strain the vegetables. Cut the tomatoes into wedges, the cucumber into half moons, slice the pepper and the red onion. Place all the vegetables in a large salad bowl and add the pasta, the olives and feta cheese. Garnish with chopped parsley and mix everything together so that all the wonderful flavours mix.
  • To prepare the dressing for the Greek pasta salad add all the ingredients in a bowl and whisk to combine.
  • Pour the dressing over the Greek pasta salad and toss to coat. Taste and adjust the seasoning according to preference.

2 cups penne pasta
¼ cup red wine vinegar
1 tablespoon lemon juice
2 cloves garlic, crushed
2 teaspoons dried oregano
salt and pepper to taste
⅔ cup extra-virgin olive oil
10 cherry tomatoes, halved
1 small red onion, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
½ cucumber, sliced
½ cup sliced black olives
½ cup crumbled feta cheese

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the penne, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 11 minutes. Rinse with cold water and drain well in a colander set in the sink.
  • Whisk together the vinegar, lemon juice, garlic, oregano, salt, pepper, and olive oil. Set aside. Combine pasta, tomatoes, onion, green and red peppers, cucumber, olives, and feta cheese in a large bowl. Pour vinaigrette over the pasta and mix together. Cover and chill for 3 hours before serving.

3 cups uncooked tricolor spiral pasta
1 medium tomato, cut into wedges
1 small sweet red pepper, julienned
1 small green pepper, julienned
4 ounces crumbled feta cheese
1/2 cup sliced ripe olives
DRESSING:
2/3 cup olive oil
1/4 cup minced fresh basil
3 tablespoons white vinegar
2 tablespoons chopped green onions
2 tablespoons grated parmesan cheese
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon dried oregano

Steps:

  • Cook the pasta according to package direction's rinse in cold water and drain. Place in a large serving bowl; add the tomato, peppers, feta cheese and olives., In a blender, combine the dressing ingredients; cover and process until smooth. Pour over salad; toss to coat. Cover and refrigerate for 2 hours or overnight. Toss before serving.

1/3 cup extra virgin olive oil
1/2 teaspoon grated lemon zest
1/4 cup fresh lemon juice
1/2 cup (packed) fresh parsley leaves
1/2 teaspoon dried oregano
2 teaspoons Dijon mustard
Pinch ground cinnamon
Salt and freshly ground black pepper
6 to 8 ounces fresh curly spinach, stemmed, washed, leaves torn into 1-inch pieces
2 cups (measured uncooked) medium shells cooked, chilled and patted dry
2 kirby cucumbers, washed, peeled, seeded and cut into half moons
2 scallions, thinly sliced
6 kalamata olives, pitted and halved
1/2 cup feta cheese, crumbled or cut into dice
2 plum tomatoes, seeded and cut into fine dice

Steps:

  • In a blender or food processor puree until smooth, the olive oil, lemon zest and juice, parsley, oregano, mustard, and cinnamon. Season to taste with salt and pepper.
  • Make a wreath of spinach leaves on the outside edges of a large shallow pasta bowl or dinner plate. Combine the pasta with half of the dressing, the cucumbers and the scallions. Center the pasta salad in the middle of the spinach. Drizzle the remaining dressing over the spinach and garnish the spinach with black olives. Garnish the pasta with feta cheese and tomato.

An Italian pasta salad with meat, cheese, veggies. Try switching out different ingredients, I usually use what I have on hand, so the recipe changes a bit, but this is my favorite version. I like it better when the veggies are chopped small. It takes a long time to chop up the veggies, so sometimes I like to throw them in the food processor and pulse them a few times. Enjoy!

1 (12 ounce) package al dente cooked pasta, chilled (I use tri-color rotini)
1/2 cup red onion, diced
1/2 cup grape tomatoes
1 cup seedless cucumber, diced
1 cup green bell pepper, diced
1 cup carrot, diced
1/2 cup cheddar cheese, cubed OR
1 (8 ounce) package small marinated fresh mozzarella balls in oil (I use pearlini)
1 cup salami, cubed OR
1 cup pepperoni, cubed
1 (8 ounce) bottle Italian dressing (I use Good Seasonings Zesty Italian Salad Dressing that I make myself with red wine vinegar and oliv)
1/4 cup McCormick Salad Supreme Seasoning

Steps:

  • Mix salad dressing with seasoning.
  • Place pasta, vegetables, cheese and meat in large salad bowl. Add dressing and seasoning; toss gently to coat.
  • Cover and refrigerate at least 4 hours or until ready to serve. (I ALWAYS refrigerate overnight-its better the next day.) Toss before serving.
  • (For the pasta, I cook to al dente, and rinse thoroughly with cold water to chill.).
